ALL-AMERICAN BARBECUE SAUCE

I'm very excited to show you my take on America's most popular style of barbecue sauce--which of course originated in and around Kansas City. After you make a batch of this and taste just how incredible it is, I don't think you'll ever buy that stuff from the store again. Sauce may be used right away, but for best results, wrap and refrigerate for a day or two before using to allow the flavors to develop.

All-American Barbecue Sauce image

Steps:

  • Combine ketchup, brown sugar, molasses, vinegar, paprika, chili powder, cayenne, black pepper, allspice, coriander, and cumin in a mixing bowl and whisk thoroughly.

2 cups ketchup
⅓ cup packed brown sugar
⅓ cup dark molasses
½ cup white distilled vinegar
½ teaspoon smoked paprika
½ teaspoon chili powder
½ teaspoon cayenne powder, or to taste
½ teaspoon freshly ground black pepper
¼ teaspoon ground allspice
¼ teaspoon ground coriander
¼ teaspoon ground cumin

PORK STEAKS WITH CHERRY BARBECUE SAUCE

Pork Steaks with Cherry Barbecue Sauce image

Steps:

  • For the rub: In a mixing bowl, whisk together the pepper, salt, sugar, smoked paprika, garlic powder, onion powder and chile flakes. Liberally sprinkle the pork steaks on both sides and allow to marinate, refrigerated, for 3 hours or up to overnight.
  • Set up your grill for cooking with direct and indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
  • Make the cherry barbecue sauce: Place a saucepan over the direct-heat side of the grill. Add a drizzle of olive oil along with the jalapeño and onion. Season with the coriander, cumin and salt and sweat until softened, 2 to 3 minutes. Add the cherries, cherry soda, molasses and Worcestershire sauce. Bring to a simmer and cook until the cherries have softened, about 10 minutes. Transfer to a blender and purée until smooth. Add the balsamic and lemon juice and purée again. Transfer back to the saucepan and place on the indirect-heat side of the grill. Cook until the sauce thickens and reduces, about 20 minutes. Remove from the grill and set aside.
  • Place the pork steaks on the indirect-heat side of the grill, close the lid and cook, keeping the temperature of the grill between 250 and 275 degrees F and basting with the cherry barbecue sauce once they have cooked for 2 hours, until the pork steaks are tender and an internal temperature reaches 195 degrees F, 3 to 4 hours total. Remove from the grill and allow the pork to rest for 10 minutes before serving. Serve with any remaining cherry barbecue sauce on the side.

1 tablespoon freshly ground black pepper

2 teaspoons sweet smoked paprika

1 to 5 teaspoons chile flakes, depending on how spicy you like it
Four 1 1/4-inch-thick pork butt steaks
Olive oil, for drizzling
1 jalapeño, sliced
1 medium yellow onion, diced
1 teaspoon ground coriander
1 teaspoon ground cumin
Kosher salt and freshly ground black pepper
2 cups pitted fresh cherries (frozen work, too)
One 7.5-ounce can cherry soda, like Dr. Pepper
1/4 cup molasses
1 tablespoon Worcestershire sauce
1 tablespoon balsamic vinegar
Juice of 1/2 lemon

Pitmaster Bob Gibson started using this now-famous table sauce at Big Bob Gibson Bar-B-Q in Decatur, AL, almost 100 years ago. Bob's kin think the mayo-based condiment was his way of keeping his three-hour barbecue chicken moist.

  • In a small dish, stir together the mayonnaise, cider vinegar, Worcestershire sauce, black pepper, garlic, onion powder, sugar and a few shakes of hot sauce; season with salt, to taste. Refrigerate at least 20 minutes or up to a day in advance for the flavors to come together.

FAVORITE BARBECUE SAUCE RECIPE

This is a favorite recipe of mine that I have used time and time again for chicken and ribs. Smokey sweet and not too thin, not too thick. I don't remember now where I got it, I've been using it for a few years.

Steps:

  • Preheat the oven to 400 degrees. In a large saucepan over medium heat, mix together the ketchup, tomato sauce, brown sugar, wine vinegar, molasses, liquid smoke and butter. Season with garlic powder, onion powder, chili powder, paprika, celery seed, cinnamon, cayenne, salt and pepper.
  • Reduce heat to low, and simmer for up to 20 minutes. For thicker sauce, simmer longer, and for thinner, less time is needed.

MY FAVORITE BARBECUE SAUCE

I love this sauce. It goes well on most everything and it is a sauce that most everyone loves. It's easy to make and if you triple the recipe, ladle it hot into pint jars and process in boiling water bath for 10 minutes, it makes 6 pints that stores for years.
