Steps:

  • Place ham in a greased 3-qt. slow cooker. In a large bowl, combine water, ketchup, brown sugar, Worcestershire sauce, vinegar and mustard; pour over ham and stir well. Cover and cook on low until heated through, 4-5 hours. Serve on buns.

Steps:

  • Preheat grill to 350 degrees F (175 degrees C).
  • Mix brown sugar and mustard together in a bowl until a paste forms.
  • Place ham on a large piece of aluminum foil. Spread brown sugar paste over entire ham. Wrap foil securely around ham, sealing all of the edges together. Place wrapped ham in a disposable pan.
  • Grill ham on the preheated grill until heated through, about 2 1/2 hours. Remove ham from grill and let rest 30 minutes before slicing.

Steps:

  • Combine first 6 ingredients in a medium saucepan, stirring well and bring to a boil.
  • Reduce heat, and simmer, uncovered, 5 minutes; stir frequently.
  • Remove sauce from heat, and set aside.
  • Trim excess fat from ham slices.
  • Grill over medium coals 20 to 25 minutes or until desired degree of doneness.
  • Turn ham slices and baste every 5 minutes with reserved sauce.
  • Grill pineapple slices over medium coals 1 minute on each side.
  • Garnish ham with pineapple, and serve with remaining sauce.
  • Variation Use orange juice and lime juice instead of pineapple juice and lemon juice.

WHOLE HAM ON THE BARBECUE

Yes, the whole thing, not just slices! Because I didn't want to put the oven on for 2 hours in this heat, I decided to try it. (I searched the site and the web, but to no avail!) The ham came out juicy and tasty...just like baked ham, really no barbeque taste. So, if it's too hot to have the oven on for hours, try it...it worked out well. I even fried pierogies in butter (in a foil pan) on the other side of the grill to go along with it!!

Whole Ham on the Barbecue image

Steps:

  • Preheat gas grill on high for about 10 minutes.
  • Sit ham on long sheet of heavy duty aluminum foil.
  • Press brown sugar onto ham and wrap tight with foil.
  • Wrap tightly with another sheet of foil.
  • Lower grill temperature to low on both sides.
  • Place ham on top warmer rack (or on lower rack, but place in foil pan so the bottom does not get too dried out).
  • Shut grill lid and allow to cook for about 1 1/2 hours (no need to do anything else to it).
  • Remove foil from ham over a pan so you don't lose the brown sugar juices.

Grilled Glazed Ham image

Steps:

  • Prepare a grill for medium indirect heat. For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes turn off one of the middle burners and turn the remaining burners down to medium. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.)
  • Cut three 12-inch pieces of heavy-duty foil. Working one piece at a time, fold in half lengthwise. Fold in half again and fold in half one more time; you should have a long strip of foil about 1 1/2 inches wide. Twist the two ends of the strip in opposite directions making a twisted rope of foil. Repeat with the remaining two pieces of foil. Set all three ropes in the center of a small disposable aluminum roaster about 1 inch apart and place the ham on top. (The ropes will prevent the bottom of the ham from burning.) Cover tightly with foil and place over indirect heat (if your grill has a thermometer, it should be at around 325 degrees F). Cover the grill and cook until just warmed through, 35 to 45 minutes.
  • Meanwhile, boil the pineapple juice, brown sugar and 1 teaspoon salt in a medium saucepan over medium-high heat until the glaze is very thick and has the consistency of honey, 8 to 10 minutes. Stir in the vinegar and remove from the heat.
  • Carefully remove the foil cover from the ham and discard; baste with the glaze, making sure to get in between each slice. Increase the heat to medium-high and move the ham over direct heat. Cover the grill and cook until the glaze begins to bubble, about 5 minutes. Baste again with the remaining glaze, then cover and cook until the glaze bubbles, 5 minutes more. Continue basting and cooking until the ham is shiny and the glaze begins to brown, about 10 more minutes. Remove from the grill and let sit 10 minutes, uncovered, before serving.
  • Meanwhile, grill the pineapple rings over direct heat until charred on one side, 4 to 5 minutes. Let cool. Arrange the pineapple rings on the uncut portion of the ham, grill marks facing up, and use toothpicks to secure them in place. Place a cherry in the center of each ring and secure with a toothpick.
  • Serve the ham with any accumulated juices, remaining pineapple rings and cherries on the side.

I grew up on these delicious, sweet, and tangy barbecue sandwiches made from chipped deli ham. This dish is a staple in Western Pennsylvania, although each family seems to have its own way of making them! It's a terrific last-minute meal. Chipped chopped ham is a pressed ham loaf sold at deli counters in the Pittsburgh area which is always chipped. If you can get Islay's Chipped Ham, that is the original and still the best for these sandwiches. Otherwise, just get any deli ham and have it chipped or shaved paper thin. Enjoy!

Bone-In Ham on the Barbecue With Honey-Butter Glaze image

Steps:

  • Soak your smoking chips in water. Put in a pan, either the one that came with your BBQ or a metal pie tin, place on the hot side of the grill. To create a hot side and a cold side only heat 1-2 burners or put all your charcoal on one side of the grill. Preheat your grill to 325°F.
  • Place bone-in ham cut side down on the cold side of the grill. Insert a meat thermometer not touching the bone. Cook until your meat thermometer reads 145°F (it's ok to go over little).
  • In the meantime prepare your glaze.
  • In a glass measuring cup or microwave proof dish mix Honey, Corn Syrup, and Butter. Microwave on high for 30 seconds. Mix well. Microwave again before using if necessary.
  • When your meat thermometer reads 145°F start glazing your ham. Continue cooking for 10 minutes glazing every 2-3 minutes, you might have left over glaze.
  • Remove ham from BBQ and let rest for 10 minutes before carving. After carving drizzle any extra glaze over slices for added flavors.

  • In a large saucepan, combine the tomatoes and their liquid with the vinegar, 2 cups of water, the honey, molasses, tomato paste, garlic, chipotles, kosher salt, coriander seeds, cumin seeds, peppercorns and bay leaf and simmer over low heat for 2 3/4 hours, stirring occasionally. Let cool.
  • Working in batches, puree the barbecue sauce in a blender. Refrigerate 1/2 cup of the barbecue sauce. Put the ham in a deep bowl or pot and pour the rest of the barbecue sauce over it. Turn the ham to coat it, then cover with plastic wrap and refrigerate overnight. Bring the ham to room temperature before proceeding.
  • Preheat the oven to 400°. Transfer the ham from the marinade to a roasting pan; reserve the marinade. Add 1/2 cup of water to the roasting pan. Season the ham with salt and pepper, brush it with some of the reserved marinade and roast for 30 minutes. Reduce the oven temperature to 300°. Cover the ham loosely with foil and roast for about 4 hours longer, basting it with the marinade every 15 minutes and adding a few tablespoons of water to the roasting pan when it seems dry. The ham is done when an instant-read thermometer inserted into the thickest part registers 145°. Discard the remaining marinade.
  • Transfer the ham to a carving board and let stand for 20 minutes. Pour the juices from the roasting pan into a bowl and skim off the fat. Return the juices to the roasting pan and set it over moderately high heat. Add the chicken stock and bring to a simmer, scraping up any browned bits from the bottom of the pan with a wooden spoon. Stir in the reserved 1/2 cup of barbecue sauce and bring to a boil. Pour the barbecue sauce into a warmed gravy boat.
