Steps:

  • Heat oven to 200C/180C fan/gas 6. Scrub the potatoes and dry well, then prick several times with a fork. Bake directly on the oven shelf for 1-1½ hrs, until they feel soft. If you are short of time, prick each potato with a fork, wrap in a sheet of kitchen paper and microwave on High for 8-10 mins until soft inside.
  • While the potatoes cook, heat the oil in a small pan and sauté the onion for 5 mins to soften. Stir in the garlic and pepperoni, and cook for 1-2 mins, then add the chopped tomatoes. Bring to the boil, then simmer for 5 mins. Season and stir in half the basil. Spoon over the split potatoes and top each one with a good handful of cheese and the rest of the basil.

Steps:

  • Preheat the oven to 400 degrees F.
  • Arrange the potatoes in a 9-by-13-inch baking dish and season with the dried oregano and a good pinch of salt. Drizzle with the oil and toss to coat with your fingers. Roast for about 1 hour. (I went 1 hour and 10 minutes, just for extra browning.)
  • Remove the potatoes from the oven and switch the oven to broil.
  • Sprinkle the grated cheese over the potatoes and arrange the pepperoni in a single layer over the cheese. Broil for 2 to 3 minutes; don't take your eyes off it (see Cook's Note)! This happens fast, and all we want is browning and bubbling, and for the pepperonis to crisp and curl. Serve immediately with pizza sauce and a sprinkle of parsley or chives!

2 1/2 pounds Yukon gold potatoes, cut into 1/2- to 3/4-inch bites (I used Klondike Goldust for these)
2 teaspoons dried oregano (or dried pizza seasoning)
Coarse salt
1 to 2 tablespoons extra-virgin olive oil
One 8-ounce block mozzarella cheese, grated
About 15 pepperoni slices
Pizza sauce, for serving
1 tablespoon chopped fresh parsley or chives, for garnish

Steps:

  • For the dough: In a medium bowl, mix the yeast with warm water and let sit for 5 minutes. Add 2 tablespoons olive oil, sugar and salt, and whisk. Set aside.
  • In a large bowl, mix the all-purpose and whole wheat flours. Make a hole in the middle and pour in the yeast mixture. Slowly hand mix the flour until all the liquid is absorbed. If too wet, add more flour, 1/4 cup at a time. Sprinkle a clean work station with flour and knead the dough until smooth and elastic. Coat a large ceramic bowl with the remaining olive oil. Place the dough in the ceramic bowl, and flip over to coat in the oil. Cover the top of the dough with plastic wrap and cover the bowl with a dish towel. Let rise until the dough has doubled in size, 2 hours. Punch down the dough and let rise for another hour.
  • For the toppings: Using a mandoline, slice the potatoes and onion. Roughly chop the rosemary leaves.
  • Preheat the oven to 475 degrees F. Grease the pizza pan with the leaf lard.
  • Mold the dough into the shape of the pan. Brush with some olive oil. Place the pizza on the bottom oven rack for 5 minutes, to pre-crisp the crust. Add two layers of the potatoes in a scallop style. Add the onions, sprinkle with salt and pepper and drizzle with some olive oil.
  • Sprinkle with the rosemary and drizzle with more olive oil. Place on the middle oven rack and cook for 10 to 12 minutes. Remove from the oven. Immediately remove the pizza from the pan and cut into rectangles.

1 teaspoon yeast
10 ounces warm water
3 tablespoons extra-virgin olive oil
1 teaspoon sea salt
1 teaspoon raw sugar
1 1/2 cups all-purpose flour, plus more for dusting
1 cup whole wheat flour
1 tablespoon leaf lard
2 russet potatoes
1 Vidalia onion
2 sprigs fresh rosemary
Extra-virgin olive oil
Sea salt
Freshly cracked pepper

Baked Potato Pizza Recipe - (4.4/5) image

Steps:

  • Prep your pizza crust. If you're making your own, make it while the potatoes come to a boil. If you are using store-bought, then take it out of the package now. In a large pot, cover the potato quarters with water. Bring to a boil. When the potatoes are fork tender, drain them and discard the water. Put the potatoes back in the pot and mash them however you prefer. I use a fork, and mix in the butter, milk, sour cream and garlic. I will also mix in half of the bacon and half of the green onion. Salt and pepper to taste. Spread the potatoes on the pizza crust. It should end up begin an inch thick. When it's spread to your preference, top the pizza with the rest of the bacon, the remaining green onions, and the broccoli. You can put whatever other toppings you choose on now--diced tomatoes, diced red pepper, whatever you think should go with a baked potato pizza. Top all ingredients with the cheese. Cook in the oven at 350 till the cheese is melted and golden. Serve with a side of sour cream and salsa.

4-5 large potatoes, cut into quarters (I prefer skin on, but this is up to preference)
2 tbsp butter
1/2 cup milk
1/4 cup sour cream
2 cloves garlic, diced
salt
pepper
1 large pizza crust (I buy pre-made, you can make your own if you choose)
1 cup broccoli florets (frozen is fine)
1 cup crumbled, cooked bacon
1 cup cheese of your choice
1 cup diced tomatoes (optional)
3 green onions, sliced
Serve with sour cream and salsa if desired
