Steps:
- Heat greased grill to medium heat.
- Mix all ingredients except fish until blended.
- Grill fish 4 min. on each side. Brush with half the barbecue sauce mixture. Grill 3 to 4 min. or until fish flakes easily with fork, turning after 2 min. and brushing with remaining barbecue sauce mixture.

GRILLED FISH STEAKS
My husband is not much of a fish lover but when I made this recipe with halibut he very much enjoyed it. It's very simple.

Steps:
- In a stainless steel or glass bowl, combine garlic, olive oil, basil, salt, pepper, lemon juice, and parsley.
- Place the halibut filets in a shallow glass dish or a resealable plastic bag, and pour the marinade over the fish. Cover or seal and place in the refrigerator for 1 hour, turning occasionally.
- Preheat an outdoor grill for high heat and lightly oil grate. Set grate 4 inches from the heat.
- Remove halibut filets from marinade and drain off the excess. Grill filets 5 minutes per side or until fish is done when easily flaked with a fork.

INDOOR FISH BARBECUE
Steps:
- Make a deep pocket in the side of the steak or steaks. Beat butter with scallion, ground cumin, salt and pepper to taste, cheese and drops of lemon juice. Preheat grill or broiler.
- (You can first give the swordfish a "barbecued" smoky flavor in the following way. (Open windows wide.) Line a wok with foil. Set some hardwood chips in wok. Set a cake rack 2 inches above hardwood and set swordfish on rack. Heat wok and when smoke rises, cover fish lightly with foil, then with wok lid and smoke for 4 minutes. Remove from heat.)
- Stuff fish with mixture and grill or broil (2 inches away from heat source) 3 to 4 minutes a side or until just cooked through). Cut into thin diagonal slices and serve over roasted pepper salad.

- In a shallow bowl, combine flour, salt if desired and pepper; dredge the meat. In a large skillet, brown meat on both sides in oil. Remove and keep warm. , In the pan drippings, saute the celery, onion and garlic for 3-4 minutes. Combine the soup, brown sugar, Worcestershire sauce, vinegar and mustard; stir into the vegetables. Return meat to the pan. Cover and simmer for 1-1/2 to 2 hours or until meat is tender.

- Dry fish fillets with paper towels and brush with melted butter, set aside.
- To make the dry marinade: Combine all the dry spices and sprinkle over the buttered fish fillets.
- Cook the fillet on a lightly greased grill for 8-10 minutes, tuning once during cooking time.
- Note: You may find it easier to make a double quantity of this dry marinade and store the remaining mixture for later use. Store in a covered airtight jar in the freezer for best results. It adds flavor to seafood, poultry and beef.

GRILLED SWORDFISH STEAKS
Grilled swordfish is positively delicious and makes an incredible change from the regular carnivorous BBQ's. It can also be cooked on a rack or tray 4 inches below the heat source I the oven & broiled. Prep time includes marinading.

- Place steaks in shallow pan or baking dish.
- Season with salt& pepper.
- Coat both sides with mustard.
- Combine juice with oil& pour over fish.
- Dot with leaves& dill; let marinade for at least an hour.
- Cook on hot coals for 8 minutes.
- Turn& baste with remaining marinade.
- Grill for another 6- 8 minutes or until cooked through.
- Garnish with lemon wedges.

We eat fish (usually fried or grilled) once a week. I don't remember where I found this recipe...I think maybe Southern living, but I adjusted it just a bit. We all liked it for a change of pace from the usual.

- Rinse fillets and arrange in a lightly-greased 9 x 13-inch pan.
- Melt margarine in a saucepan.
