THE BEST CHILI
There are a thousand ways to make chili, but this is the quintessential, totally classic version. We used ground beef, kidney beans and the perfect blend of spices. You can slather it on hot dogs and burgers or serve it as a dip, but it can surely stand on its own. Chances are, you have everything you need right in your pantry. Top it with your favorite garnishes and serve with plenty of tortilla chips.

Steps:
- Heat 2 tablespoons of the oil in a Dutch oven or large pot over medium-high heat. Add the beef and cook, breaking up the meat with a wooden spoon, until just browned, about 4 minutes. Transfer to a plate with a slotted spoon.
- Reduce the heat to medium and add the remaining 2 tablespoons oil. Add the onions and cook, stirring occasionally, until softened and lightly golden, about 10 minutes.
- Add the jalapeno and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 30 seconds.
- Add the chili powder, cumin, paprika, cayenne, 1/2 teaspoon salt and the tomato paste. Cook, stirring frequently, until coated and fragrant, about 1 minute.
- Stir in the beef broth and crushed tomatoes and bring to a boil over high heat. Stir in the cooked ground beef and any accumulated liquid, then reduce the heat to medium-low. Simmer the chili, partially covered, until the beef is tender and the sauce is slightly thickened, about 30 minutes.
- Stir in the beans and their liquid and simmer uncovered until the beans are softened and the chili is thickened, about 30 minutes more. Season with salt and pepper.
- Top with sour cream, Cheddar and scallions. Serve with tortilla chips.
BARNEY'S BEANERY-TYPE CHILLI
I've never been to Barney's, but I saw this recipe on the web and thought it sounded good. I have no idea if it tastes like Barney's. The chili seasoning used is the one that comes in a brown paper bag-lloking package with a red label on it.

Steps:
- Brown and drain 1 lb. of ground beef. Meanwhile, empty V-8 Juice and beer into a large stock pot. Bring to a boil; reduce heat & simmer, Add all remaining ingredients, EXCEPT CHILI PACKAGE SPICES.
- Open chili spice package. You will find 4 packets of different spices.
- Add larger package of chili spices, first, and stir.
- Add salt packet to taste, stir.
- Add small cayenne pepper packet to taste (optional). Will be extremely hot & spicy if all is added. (I usually add 1/4 to 1/2 of packet.).
- If you like thick chili follow directions on package for use of masa flour to thicken.
- Continue to simmer and stir. It's ready to eat when heated through. The longer it simmers the spicier it will get. If you want to simmer awhile longer, reduce heat to low so it doesn't burn.

A small banana is added to a basic made-from-scratch brownie for a hint of banana flavor. This is a fudgy brownie and it does not rise much. Add 1/2 cup chopped nuts or mini chocolate chips for more flavor. No mixer required!

- Preheat an oven to 325 degrees F (165 degrees C). Grease an 8 inch square pan.
- Melt butter in sauce pan over medium-low heat. Remove from heat, add chips, and stir until melted. Set aside to cool for 5 minutes.
- Lightly beat the egg in a medium bowl. Stir in the brown sugar, banana, vanilla, and salt. Pour the melted chocolate mixture into the banana mixture, and stir until well combined. Add the flour, stirring just until incorporated. Spread the batter into the prepared pan.
- Bake in the preheated oven until a toothpick inserted near the center comes out with moist crumbs, about 30 minutes. Don't over bake. Remove, and cool pan on wire rack before cutting.

- Using scissors cut off the stem end of each peppers, then cut up one side so that you can open the pepper up and dump out the seeds. Place the seeded peppers on a baking sheet and bake for 3 to 4 minutes. Don't let them get too dark. When you can smell them, they're done.
- Boil 2 cups of water (microwave or stove top) and pour it over the peppers in a large bowl. Let the peppers sit there and rehydrate for about 30 minutes. Stir them around once in a while.
- When the peppers are soft, transfer them to a food processor or blender along with the soaking water, and puree until smooth. If using a food processor add half of the liquid at a time. Set this puree aside for now.
