SPINACH SALAD WITH WARM BALSAMIC WALNUT DRESSING
Fresh spinach, mushrooms, red onion and feta cheese are tossed with a warm bacon, walnut and balsamic dressing for a delicious side-dish salad.

Steps:
- Toss spinach with mushrooms, cheese and onions in large bowl; set aside.
- Cook bacon in large skillet on medium heat to desired crispness, turning frequently. Remove bacon from skillet; reserve 2 Tbsp. of the drippings in skillet. Place bacon on paper towels to drain.
- Add walnuts to reserved drippings in skillet. Cook 1 to 2 min. or until lightly toasted, stirring occasionally. Stir in vinegar, oil, salt and pepper. Cook 30 sec. or until heated through. Pour hot dressing over salad; toss to coat. Top with eggs. Crumble bacon; sprinkle over salad.

- Place toasted walnuts and lemon juice in food processor and puree. Add oil and vinegar slowly through feed tube and blend until smooth. Season with salt and pepper.
- Combine spinach and basil in salad bowl. Add dressing (thinned with a small amount of water if required) to taste. Place greens on plates and garnish with cheese shavings.

Steps:
- Bring a large pot of salted water to a boil. Add spinach and basil and cook until wilted. Immediately transfer to an ice-water bath. Drain and squeeze dry; coarsely chop and set aside.
- Heat oil in a medium skillet over medium-high heat. Add garlic and shallots and cook until golden. Add fennel and celery and continue cooking until soft and translucent.
- Add cream and let reduce until thickened, about 10 to 15 minutes. Add spinach, basil, and chile, if using; stir to combine. Cook until warmed through. Season with salt and pepper; serve immediately.

This I had years ago at Woodrow's Bar and Restaraunt. I wrote for the recipe and got it!! It's fabulous!! I've also made it with grilled chicken and served it on top for a Heartier Meal!! It's refreshing in the summer with fresh basil out of the garden.

- Dressing-Put pine nut in a food processor add whole egg,shallots, and lemon juice,Puree.
- Slowly add oil in a stream alternate with vinegar till all is incorporated.
- Season with salt and pepper to taste.
- Salad-- On 8 plates arrange 2 1/2 ounces of spinach leaves and 12 basil leaves.
- Divide dressing over the salads.
- Top with 1 tablespoon of cheese and 1 tablespoon of pine nuts.

- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the bow tie pasta and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Rinse with cold water to cool. Drain well in a colander set in the sink.
- Toss the spinach and basil together in a large bowl.
- Heat the olive oil in a skillet over medium heat; cook and stir the garlic in the hot oil for 1 minute; stir in the prosciutto and cook 2 to 3 minutes more. Remove from heat. Add to the bowl with the spinach and basil mixture; toss to combine. Pour in the drained pasta and retoss. Season with salt and pepper. Sprinkle with the Parmesan cheese and pine nuts to serve.
