BASIC BATTER WAFFLES
This hearty waffle recipe comes from an issue of Parent's Magazine. Ive made it every week for years and it comes out great every time. I double it and freeze the leftover waffles and reheat in toaster oven.

Steps:
- Mix all dry ingredients together using a large whisk.
- Mix the wet ingredients together.
- Gently combine but don't overmix.
- Cook as your waffle maker directs.
- Sprinkle with powdered sugar (my daughter).
- Cover with toasted nuts, bananas, and real maple syrup (Me!).
- Pour on log Cabin (my son) and Michele's Maple Cream Syrup for my husband!
BATTER FOR WAFFLES

- 1. Whisk the egg yolks and the sugar (if using) then whisk in the milk and 1/2 teaspoon salt. Whisk in the flour quickly to make a smooth batter, then quickly whisk in the melted butter. Whisk the egg whites with a pinch of salt to soft points, and fold them into the batter.
- Let the batter sit for 1 hour, then make the waffles following the waffle iron manufacturer's directions. The batter will keep very well overnight.
BEER BATTER WAFFLES
These waffles are light and delicious. The beer replaces yeast and the honey gives them a nice crunch. My family loves them.

- Preheat a waffle iron according to manufacturer's instructions. Combine flour, beer, butter, milk, egg yolks, honey, and vanilla in a large bowl; stir until the mixture is smooth. In a separate bowl, beat egg whites until stiff peaks form. Gently fold egg whites into batter.
