BASIC BATTER WAFFLES

This hearty waffle recipe comes from an issue of Parent's Magazine. Ive made it every week for years and it comes out great every time. I double it and freeze the leftover waffles and reheat in toaster oven.

Basic Batter Waffles image

Steps:

  • Mix all dry ingredients together using a large whisk.
  • Mix the wet ingredients together.
  • Gently combine but don't overmix.
  • Cook as your waffle maker directs.
  • Sprinkle with powdered sugar (my daughter).
  • Cover with toasted nuts, bananas, and real maple syrup (Me!).
  • Pour on log Cabin (my son) and Michele's Maple Cream Syrup for my husband!

2 eggs
1 2/3 cups milk (I particularly like canned evaporated milk for some of it)
1/3 cup vegetable oil
2 cups all-purpose flour (you can substitute wheat germ for 1/4 cup of white flour)
1 tablespoon baking powder
2 tablespoons sugar
1/2 teaspoon salt
1 teaspoon vanilla
1 teaspoon maple extract (optional)

Steps:

  • 1. Whisk the egg yolks and the sugar (if using) then whisk in the milk and 1/2 teaspoon salt. Whisk in the flour quickly to make a smooth batter, then quickly whisk in the melted butter. Whisk the egg whites with a pinch of salt to soft points, and fold them into the batter.
  • Let the batter sit for 1 hour, then make the waffles following the waffle iron manufacturer's directions. The batter will keep very well overnight.

5 large eggs, separated
1/4 cup sugar (optional)
1 cup (250 milliliters) milk
Sea salt
2 cups (270 grams) all-purpose flour
4 tablespoons (60 grams) unsalted butter, melted and cooled

These waffles are light and delicious. The beer replaces yeast and the honey gives them a nice crunch. My family loves them.

Steps:

  • Preheat a waffle iron according to manufacturer's instructions. Combine flour, beer, butter, milk, egg yolks, honey, and vanilla in a large bowl; stir until the mixture is smooth. In a separate bowl, beat egg whites until stiff peaks form. Gently fold egg whites into batter.
  • Spray preheated waffle iron with non-stick cooking spray. Ladle the batter into waffle iron. Cook the waffles until golden and crisp. Serve immediately.
