CHEESY BARBECUE CASSEROLE
Barbecue sauce lends a sweet and savory flavor to an Italian-style casserole.

Steps:
- Heat oven to 350°F. Spray 2-quart casserole with cooking spray. Cook and drain pasta as directed on package.
- Meanwhile, in 12-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain.
- Stir pasta, 3 tablespoons of the parsley, the milk, barbecue sauce, mozzarella cheese and 1 cup of the Cheddar cheese into beef in skillet. Spoon mixture into casserole. Sprinkle with remaining 1/2 cup Cheddar cheese.
- Bake uncovered 30 to 40 minutes or until hot and bubbly. Sprinkle with remaining 1 tablespoon parsley.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Crumble the ground beef into a large skillet over medium-high heat. Cook until evenly browned. Add the onion, bell pepper, corn and tomatoes. Cook and stir until vegetables are tender. Drain excess grease, and stir in the barbeque sauce. Spread the beef mixture in an even layer in a 9x13 inch baking dish.
- Prepare the cornbread batter mixes according to package directions. Spread the batter over the top of the beef mixture.
- Bake for 20 to 25 minutes in the preheated oven, until the top is golden brown, and a knife inserted into the center of the cornbread layer comes out clean.

- Preheat oven to 350 degrees.
- Cook and drain pasta per package directions.
- Grease a 2-qt casserole dish.
- Brown ground beef and onion in a skillet over medium heat, stirring occasionally.
- Drain meat and mix with all other ingredients except 1/2 cup of cheddar cheese.
- Pour meat mixture into casserole dish.
- Top with the 1/2 cup cheddar cheese.
- Bake uncovered 30-40 minutes or'til hot and bubbly.

I pilfered this recipe from one of those checkout line cookbooks and it's been a family favorite ever since. Hearty, barbecue flavored beef and beans meets chili pie in this quick, easy dish for the entire gang!

Steps:
- Brown and drain ground beef in skillet.
- Remove and cook diced onion and sliced bacon until onion is soft and bacon is crisp.
- Add ground beef back into skillet and keep warm.
- Empty baked beans into 9x13 casserole dish.
- Add in ketchup, mustard, vinegar, brown sugar and stir to combine.
- Combine ground beef mixture with baked bean mixture in casserole dish.
- Bake in a preheated oven at 375 for 15-20 minutes.
- Remove from oven and top with corn chips and shredded cheddar cheese.
- Place back into oven and allow for cheese to melt.
- Serve immediately.
- *This recipe is good served cold as well*.
- *You can shortcut this recipe by using your favorite bottled barbeque sauce.*.
