SIMPLE BBQ RIBS
Country-style ribs are cut from the loin, one of the leanest areas of pork. These ribs are seasoned, boiled until tender, then baked with your favorite barbeque sauce. That's it! Back to simplicity, back to the country life. Sigh.

Steps:
- Place ribs in a large pot with enough water to cover. Season with garlic powder, black pepper and salt. Bring water to a boil, and cook ribs until tender.
- Preheat oven to 325 degrees F (165 degrees C).
- Remove ribs from pot, and place them in a 9x13 inch baking dish. Pour barbeque sauce over ribs. Cover dish with aluminum foil, and bake in the preheated oven for 1 to 1 1/2 hours, or until internal temperature of pork has reached 160 degrees F (70 degrees C).

BARBECUED SPARERIBS

- In a Dutch oven, place ribs and onion; sprinkle with salt and pepper. Add enough water to cover ribs; bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours or until meat is tender; drain. , Meanwhile, in a small saucepan, combine sauce ingredients. Simmer, uncovered, for 1 hour or until slightly thickened, stirring occasionally. , Arrange ribs on a rack in a broiler pan. Brush with sauce. Broil 5 in. from the heat for 5 minutes on each side, brushing frequently with sauce.

BBQ PORK SPARE RIBS
Steps:
- Preheat oven to 325 degrees. Parboil ribs by placing in a large pot filled with beer and water. Add 1 onion and peppercorns. Bring to a boil and let simmer for 5 minutes. In medium sized saucepan heat oil, 1 chopped onion, and garlic. Cook until onions become translucent. Add vinegar, ketchup, molasses, lemon juice and a dash of Worcestershire sauce. Season with pepper and a Tabasco sauce. Bring to a simmer. Remove ribs from pot and brush on sauce. Place in roasting pan and roast in oven for 1 to 1 1/2 hours.
BBQ PORK SPARERIBS
This is an adaptation of a traditional Chinese recipe suitable for cooking on a barbecue. You will need a barbecue with a hood for best results, or you can do the boring thing and cook in an oven. It has a really nice sauce that goes well over plain rice.

Steps:
- Blanch ribs in boiling water for two minutes.
- Mix soy sauce, water, sugar, hoisin sauce, ginger, garlic and diced onion in a small bowl.
- Place ribs into a lightly oiled baking tray to avoid a mess on your BBQ and pour over the sauce mixture. The tray is also necessary so the sauce can be reserved.
- Cook for 20 minutes over a low heat with the hood of the BBQ closed.
- Add the sherry and season with pepper, stir to mix and turn over the ribs.
- Continue cooking over low temperature with hood down for another 40 minutes, stirring and turning ribs several times.
- Turn the grill section of the BBQ to high and transfer the ribs to the grill. Cook around 5 minutes a side until they are crisp and well browned.
- Blend chicken stock and cornflour together.
- While ribs are grilling add chicken stock and cornflour to sauce mixture, increase temperature and stir until sauce has thickened.
- Serve over boiled rice with sauce poured over top of ribs.

CROCK POT BARBECUE SPARERIBS
This is a great family pleaser and very easy. When I take it to potlucks, it's usually the first empty dish on the table!

Steps:
- Place ribs in crock pot.
- They can be preboiled to decrease fat and cooking time.
- Combine other ingredients, except onions, and mix well.
- Pour sauce over spare ribs.
- Add chopped onions.
- Cook on High for 1 hour.
- Turn to low and cook for 4-6 hour if precooked or 9-10 hours if raw meat is used.

- Preheat the oven to 325° and have ready a very large baking dish or roaster. Combine all of the rub ingredients in a small bowl and set aside.
- On a large work surface, remove the membrane from the ribs, pat dry with a paper towel, and rub with oil. Add about 2/3 of the rub to both sides of the ribs and rub to adhere.
- Pour Coca Cola and liquid smoke into the pan. Add the ribs, and pat the remaining rub on the top of the ribs.
- Bake for 2 hours (uncovered), basting the ribs with Coca-Cola every 30-45 minutes or so. Remove the oven, cut, and serve!

- Wash the slab of ribs with cold water and pat dry with paper towels. Remove the membrane on the back side by placing a paring knife underneath the membrane and gently pull it back from one end of the slab to the other end and discard. If it's slippery, you can use a paper towel so you'll have a better grip when pulling the membrane back. (Note: I find that there isn't a difference in removing the membrane, so I tend to omit that particular step). Remove any excess fat by cutting it off with a sharp knife and discard.
