EASY FOIL BBQ POTATOES
Quick and easy to prepare, pop on the BBQ and forget them,'til the rest of dinner is ready, Delicious!!!

Steps:
- Scrub potato and make 4 slits almost through to bottom.
- Slice onion into 4 slices to fit into slits in potato.
- Dot with butter or margarine.
- Sprinkle with salt and pepper to taste.
- Drizzle olive oil over all.
- Wrap tightly in foil, as if to freeze.
- Place package on rack in BBq and close the lid.
- (Can also be done in the oven- 400f degrees for 1 hour or until potatoes are soft).
- In a hot BBq they should be done within an hour, depends on what else you are BBqing.
- Open packages, adjust seasoning, serve in opened foil.
- Repeat process for as many potatoes as needed

- BBQ~ grill or oven.
- Preheat oven 400°F.
- In large bowl, combine, chili powder, honey, garlic powder, pepper and butter.
- Add potatoes; toss to coat.
- Spoon potatoes in greased 11x7-inch baking dish.
- Bake 40-50 minutes until potatoes are tender.
- BBQ--wrap and seal in foil; place on grill for about 30 minutes until tender!

Steps:
- Slice the potatoes to the thickness of your little finger, discarding the rounded end pieces. Tip into a pan of cold salted water and bring to the boil. Simmer for 3 mins until just cooked, then drain. This can be done a day ahead.
- Rub each slice with a little oil and barbecue until golden and charred on each side. Place in a dish and sprinkle with rosemary and garlic, if using. Drizzle with a little more olive oil, season with salt and serve.

Steps:
- Wash the potatoes and cut in half lengthwise.
- Sprinkle the skin side with salt.
- brush the cut side with oil.
- Place on grill oil side down.
- Brush top with BBQ sauce.
- Cook for about 10 minutes then flip the potatoes and put BBQ sauce on the flat side.
- Cook until tender when poked with a fork.
- This is a low to medium heat item.

GRILLED POTATOES
Steps:
- Heat grill to medium heat and oil the grates with cooking spray.
- Add the sliced potatoes to a rimmed tray or baking dish. Sprinkle with salt and pepper on both sides. Pour 1/2 cup Garlic Oil over the potatoes and toss gently to coat. Add the potatoes to the hot grill, then brush with the remaining oil mixture. Grill, flipping the potatoes once, until golden brown, about 5 minutes per side.
- Mash together the garlic and 1/2 teaspoon salt with a knife or bench scraper on a cutting board until it is a paste. Add the garlic to a small saucepan with the oil, chives, parsley, lemon juice and remaining 1/4 teaspoon salt. Cook over medium-low heat until the ingredients have combined, 3 to 4 minutes. Use as a marinade for potatoes, brush on rolls before toasting or brush on proteins for extra flavor.

- Slice potatoes into 'chips' and place on tinfoil sheets with margarine spread on them.
- Sprinkle with all 3 seasonings.
- BBQ for about 15 minutes.
- The optional peppers and stuff, go in between the potatoes. Cook for about 15 minutes or so. the potatoes taste good either way.

I've been eating these every summer for 25 years. They go great with sour cream and bacon bits. Great ccompaniment for steaks, chops, chicken... whatever!

Steps:
- Scrub potatoes and slice into 1/8 inch pieces.
- Peel and cut carrots and onion.
- Place potatoes in a row in the center of a piece of foil (shiny side up).
- Add carrots, onion, margarine, salt& pepper.
- Roll the sides of the foil together like rolling up a paper bag and fold in the ends.
- Don't be afraid to squish it all together to make sure it's sealed.
- Place the package in the middle of another piece of foil, seam down, and roll it up again.
- BBQ on medium-high for 10 minutes, turn over, BBQ another 10 minutes turn again, BBQ 5 min, turn again and BBQ a final 5 minutes.
- If you're also BBQing meat, put the meat on after 20 minutes and put potatoes on the top rack of the BBQ and keep turning every few minutes until meat is cooked.
