ANYONE CAN MAKE BBQ PULLED PORK

Steps:
- Cut several slits into the fatty side of the pork shoulder. Insert garlic slices into slits. Transfer pork to a slow cooker, fat side up.
- Mix coffee, onion, Worcestershire sauce, and liquid smoke in a bowl; pour over pork.
- Cook pork on Low until very tender, about 8 hours. Carefully remove pork from slow cooker to a large plate; discard excess fat. Shred pork with 2 forks or by hand.
- Reserve about 1/2 cup juices from the slow cooker; discard remaining liquid. Return shredded pork and juices to slow cooker and season with red pepper flakes, salt, and pepper. Add barbeque sauce and stir.
- Heat pork on Low until sauce is hot, about 30 minutes more. Pile pork over toasted buns to serve.

- Cut each pepper in half and remove the seeds. Stuff peppers with cheese; set aside., Combine the seasonings; rub over pork. Grill, covered, over medium-hot heat until a thermometer reads 145°, about 15 minutes. Place peppers over indirect heat; cook until peppers are tender and cheese is melted, about 8-10 minutes.

- Preheat oven to 400 degrees F. Line a large rimmed oven and broiler-safe baking sheet with foil and brush it with a little olive oil.
- Rinse and dry the poblanos. Cut a thin slice off the tops and remove the core and seeds. Cut a slit down the side of each pepper. Set aside.
- Heat the olive oil in a large, deep skillet over medium-high heat. Add the tomatoes, onion, garlic, oregano, cumin and salt. Cook, stirring often, until liquids have evaporated, about 7 minutes. Off heat, stir in the chicken, the mozzarella and the cilantro, mixing well.
- Divide the filling among the peppers, adding it from the top and pressing on it to fill the entire pepper. Place the stuffed peppers on the prepared baking sheet. Bake until the poblanos are soft and charred in places, 20-30 minutes (the smell will be amazing!).

- Place the cut peppers in a microwave safe baking dish and steam for 3-4 minutes or until softened. Pour out any water. (Alternately, cover the peppers in foil and bake for 15-20 minutes to soften. Pour out any accumulated water.)
- Stir the BBQ sauce and 1 cup of the cheese into the pulled pork and divide evenly among the peppers. Bake for 20-30 minutes or until the peppers are hot and bubbly. Top the peppers with remaining cheese and return to the oven until the cheese has melted. Garnish with cilantro and serve with a green salad.
- Refrigerate any leftovers. To reheat cover and place in the microwave for 60 - 120 seconds on high power or until the middle is hot. Alternately, place in an oven safe bowl and bake at 350 for 30 minutes or until the middle is hot.
