FRENCH ONION GRILLED CHEESE

Steps:
- Melt 1 tablespoon of the butter in a large sauté pan over medium heat. Add the onion and cook until the slices start to wilt and turn translucent, about 3 minutes. Add the onion soup mix, thyme and 2 tablespoons water. Turn the heat to low, then continue to cook, stirring and adding more water a tablespoon at a time if the mixture gets too dry, until the onions are very soft and golden brown, 5 to 10 more minutes.
- Melt 1 tablespoon butter in a saute pan over medium heat. Spread 1 teaspoon mustard onto one side of each slice of bread. Divide the Cheddar, Gruyere, caramelized onions and crispy onions between 2 of the slices of bread on top of the mustard. Top each with another slice of bread, mustard-side in, and lay the sandwiches in the pan. Cook, pressing down on top of the sandwiches, until the bottoms are golden brown, about 2 minutes. Add the remaining 1 tablespoon butter to the pan and flip the sandwiches, cooking until the cheese is melted and the bottoms are golden brown, about 3 more minutes. Cut in half and serve.
GRILLED ONIONS
If you like onions, you'll love this grilled treat! When I barbeque, I like to try and make the whole meal on the grill. This dish can be prepared as an appetizer or a side dish. Enjoy!

- Preheat grill for medium heat.
- Peel outer layer off onions. Slice a small section off of one end of each onion, and make a small hole in the center. Fill the center of each onion with a bouillon cube and 2 tablespoons butter or margarine. Replace the top of the onion, and wrap in aluminum foil.
- Place onions on grill over indirect heat, and close the lid. Cook for 1 hour, or until tender. Remove the tops, and cut into bite size chunks. Place in a serving dish with all the juices from the foil.

EASY GRILLED HONEY-DIJON CHICKEN
Steps:
- In a small bowl, add the honey, mustard, 1 tablespoon of oil and salt and pepper, to taste. Mix well and put the mixture into a large plastic resealable bag. Add the chicken, seal the bag and shake to incorporate. Refrigerate at least 2 hours.
- Preheat the grill to medium heat.
- Remove the chicken from the bag and arrange it on a well-oiled grill. Cook until a nice crust forms on both sides, about 4 to 5 minutes per side. Let the chicken rest on a serving platter for 10 minutes before serving. Serve with lime wedges.
GRILLED ONION BLOSSOM
Steps:
- For the dipping sauce: Combine the mayonnaise, horseradish, BBQ seasoning, mustard and some salt and pepper in a small mixing bowl. Store refrigerated in an airtight container until ready to serve.
- For the onion blossom: Preheat a grill to 350 degrees F. Spay a disposable pie plate with olive oil cooking spray.
- Peel the onion and trim the root end to remove any hairs. Slice the pointy stem end of the onion off. Turn the onion so the root end is facing up. Leaving a 1/2-inch rim around the root, make 4 cuts into the onion, down to the stem end. This results in 4 sections of the onion. Repeating the same motion, make 3 more cuts into each section of the onion, from root to stem end. Turn the onion over to reveal 16 onion petals. Use your hands to separate the layers of petals as needed.
- Place the onion stem-side up in the prepared pie plate. Generously spray all of the petals with the olive oil cooking spray. Sprinkle the onion with the BBQ seasoning.
- Put the onion on the grill and close the grill. Roast at 350 degrees F, checking halfway, until the onion blossom has opened, 40 to 45 minutes. The petals should be tender and darkened on the ends. Carefully remove the onion from the grill. Serve warm with the dipping sauce.
ONIONS ON THE GRILL

- In a large bowl, combine all of the ingredients; toss to coat. Place on a double thickness of heavy-duty foil (about 18 in. square). Fold foil around onion mixture and seal tightly. , Grill, covered, over medium heat for 20-25 minutes or until onions are tender, turning once. Open foil carefully to allow steam to escape.

WHOLE GRILLED ONION
One night my neighbor was placing on the grill what appeared to look like a giant Hershey kiss. When he gave me the recipe and I tried it, I was hooked. This is the easiest and best tasting way to prepare a whole sweet onion on the grill. He just used the bouillon cube but I made a few additions which really enhances the flavor. You can substitute a packet of powdered beef bouillon if you like.

- Peel the onion and cut off both ends.
- With a knife or an apple corer hollow out the center of the onion about 1/2 way through.
- Place the bouillon cube or granules and the garlic clove in the hole. Press in enough cheese to fill the hole to the top.
- Place the onion on a large sheet of heavy duty foil and gather. It will resemble a "giant Hershey Kiss"
- Turn grill to med. high and place onion on grill. I use indirect heat side so the onion doesn't burn. You can also use the top shelf. Close the lid (if it pushes down top of foil, that's ok)
- Grill for 1 hour or till tender.
CARAMELIZED ONION - BBQ
Great onions that go with anything that is grilled on the BBQ. A TV chef did this once and it has been a family faviorite since. Only problem is I have never measured ingredients - so adjust to suit your own taste! Also great on a sausage sandwich.

- Just prior to serving mix through brown sugar and balsamic vinegar until sugar dissolves and oniobs are "caramalised".

Steps:
- Slice tops off onions and peel, keep root end intact.
- Slice onions in half through the root.
- Cut each half into 4-6 wedges, though the root so wedges hold together.
- In a small bowl, mix together honey, soy sauce and mustard.
- Add onion pieces and toss to coat.
- Let stand for 1-2 hours.
- Place onions in grill basket and cook 10-15 minutes until tender.
