If you prefer spicy then add in a finely chopped jalapeno pepper. The chili powder can be increased or decreased to suit taste.Also you can add in some navy beans with the kidney beans. This is a very simple but good bean recipe.

Steps:
- Set oven to 350 degrees.
- Grease a 2-quart casserole dish.
- Heat a large skillet with oil over medium heat.
- Add in onion, garlic and green bell pepper (if using) saute until the onions are just golden.
- Add in the chili powder, salt and pepper; cook stirring for 1 minute.
- Add in the red kidney beans and drained chopped tomatoes; cook, stirring for 20 minutes, seasoning with more chili powder, salt and pepper to taste.
- Spread half of the mixture into the bottom of the baking dish.
- Sprinkle with about 1-1/2 cups cheese.
- Top with remaining bean mixture.
- Then top with remaining 1-1/2 cups cheddar cheese (or to taste).
- Bake uncovered for about 25 minutes, or until the cheese is browned.

- Preheat the oven to 350 degrees F. Spread a little butter on the bottom of a 9-by-13-inch baking dish.
- Heat some butter in a large skillet over medium-high heat. Add the peppers and onions and cook until softened, about 4 minutes. Off heat, add the tequila, then return to the heat and cook until evaporated, about 1 minute. Add the chili powder, garlic, jalapenos and some salt and pepper and cook for a minute or 2. I hesitated to even post this recipe, since there are so many green bean casseroles on here. And yes, this one uses soup and canned French fried onions. The difference is, this recipe uses cheddar cheese soup, not cream of mushroom. - Preheat the oven or a toaster oven to 400 degrees F.
- For the green beans: Place the green beans on a sheet pan. Add the mushrooms, olive oil and capers, sprinkle with 1/4 teaspoon salt and toss to coat. Roast the green beans until tender and the skins blister, 8 to 10 minutes depending on the thickness of the green beans.
- For the goat cheese sauce: Meanwhile, add the butter to a small saute pan over medium heat and cook until it starts to bubble and brown. Add the flour and stir to cook the flour, 1 to 3 minutes. Slowly whisk in the milk. Continue to cook until the mixture simmers and thickens, about 10 minutes. Add the garlic powder and pepper. Remove from the heat and add 3 ounces of the goat cheese. - Preheat the oven to 350 degrees F.
- Put the drained beans and chicken broth in a large bowl.
- In a saute pan, heat the olive oil over medium-high heat. Add the onion, tomato, chile, and garlic. Saute until the onion is soft, about 5 minutes. Rub the oregano, between palms of your hands and sprinkle over the beans. Add salt and pepper, to taste. Add the beans and broth to the pan and simmer for 10 minutes. Cool the beans for about 5 minutes before putting them in the blender. Carefully, pour the mixture into a blender and puree. Return the pureed mixture to the pan and gently reheat over medium-low heat, stirring frequently.

- Combine the flour and oil in 2 quart saucepan and stir til smooth.
- Mix the tomato paste with the water and gradually add to the flour/oil mixture stirring until smooth.
- Add garlic, onion, salt, oregano, and red chile to the sauce.
- Bring to a boil over medium heat, stirring frequently.
- While sauce is heating, grate the cheese and drain the can of beans.
- When sauce has boiled and thickened a bit, remove from heat.
- Put a thin layer of sauce, just enough to cover, in the bottom of a 9X12 baking pan. (I use a glass pan).
- Put a layer of 6 tortillas on top of the sauce layer; they will overlap some.

- Spread 1/2 of the remaining sauce over this.
- Put a second layer of 6 tortillas on top.

- Serve with sour cream if desired.
