  • In a large bowl, combine the beans, tomato, onion, celery and peppers. In a small bowl, whisk the remaining ingredients; gently stir into bean mixture. Cover and refrigerate for 4 hours, stirring occasionally.

Steps:

  • Open can of beans and pour into a strainer. Rinse off the beans. Pour into a large mixing bowl.
  • Repeat first step with the corn, and add to the beans.
  • Add remaining ingredients and mix together.
  • This recipe works best if allowed to sit for 24 hours for the flavours to blend.

1 (540 ml) can six- bean medley (or 5 bean medley if that's all you can find)
1 (340 ml) can peaches and cream corn (or sweet corn works)
1 small red onion, minced
3 green onions, chopped
3 tablespoons fresh parsley, chopped (can also use dried parsley)
3 tablespoons olive oil
3 tablespoons red wine vinegar
1 tablespoon white vinegar
1/2-1 teaspoon sugar
1 pinch fresh ground black pepper

Steps:

  • Place red onion in a small bowl with enough red wine vinegar to cover. Let marinate for one hour.
  • In a medium bowl, combine beans, celery, and parsley. Drain onion and add to bean mixture.

Great over a bed of lettuce or over cold rice.Since manufacturers are constantly reducing can sizes, if your can sizes vary a bit that is fine. Steps:

  • Open all cans of veggies. Drain the green beans and cut in half and put into a large bow. Then drain and rinse kidney beans and add to bowl. Drain the corn and add to the bowl too. Once all the canned veggies are in the bowl, and the celery, onion and peppers, set aside.
  • In a microwave safe bowl combine vinegar, sugar, oil, pepper (add more or less per your taste) and salt. Mix and heat in microwave (30 secs at a time) to heat to disolve the sugar. Stir and place in freezer for about 5 to 8 mins, just to cool the liquid.
  • Once the liquid mixture is cool, stir and pour over the veggies in large bowl. Cover and marinate at least 8 hours stirring as often as possible.
  • COOK TIME is Marinate/Chill Time.
  • This is GREAT but it must marinate at least 8 hours (0vernight is what I do).
  • Serve w/a slotted spoon as there is a lot for juice.
