OATMEAL YEAST BREAD
WHEN this old-fashioned bread is baking, it reminds me of childhood and the warm, inviting aromas that greeted me when I got home from school. The light sweet flavor, crispy crust and hearty texture of this bread made for a special treat when Mom baked it for us. Steps:
- In a saucepan over medium heat, bring milk, water and shortening to a boil. Meanwhile, combine 2 cups oats, brown sugar and salt in a bowl. Add milk mixture; let stand until mixture reaches 110°-115°. In a small bowl, dissolve yeast in warm water; add to oat mixture. Add 3 cups flour; beat until smooth. Add enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down; divide in half. Shape into 2 loaves; transfer to greased 8x4-in. loaf pans. Cover and let rise until doubled, about 40 minutes. Brush with egg; sprinkle with remaining oats. Bake at 350° until golden, 35-40 minutes. Remove from pans; cool on wire racks.

BECKY'S BAKED OATMEAL
I had this recipe for baked oatmeal while in the Dominican Republic on a mission trip. Everyone loved it and asked for it often. With less sugar it is a healthy breakfast. You can add raisins, cranberries, nuts, cinnamon, chopped apples, flaxseed, wheat germ, etc. You can't mess up this recipe. Kids love it with the cup of sugar, but by adding less sugar and other ingredients you can make it healthy and also delicious by serving it with blueberries, strawberries, or peaches.

I took the oatmeal bread recipe in my breadmachine instruction manual and made a few changes to make it healthier.

- Add ingredients into the bread machine in the order listed. Set to dough cycle. My machine takes 1 hr 50 minutes. When dough cycle is finished, shape as desired and allow to rise until double in size. Bake approximately 20-30 minutes until the top starts to brown and it sounds hollow when you tap it. Brush top with butter if desired. Makes a nice sandwich bread.

I got this recipe from my mother about 20 years ago and it has been a hit ever since. This is a dessert-type or snack-type bread. My husband loves it and I can't keep a loaf around for long.

Steps:
- Combine Bisquick, oats and sugar.
- Combine egg, milk and oil.
- Add to the dry mixture, beating until smooth.
- Stir in chips and nuts.
- Bake in a greased, wax paper-lined bread pan for 70 minutes at 350.
- Cool 10 minutes and remove from pan by lifting the wax paper.
- Wait for bread to cool before removing wax paper to avoid excessive crumbling.

- In a small bowl, combine the boiling water, butter, salt and sugar. Stir in oats; cool to lukewarm. In a large bowl, dissolve yeast in warm water. Stir in the molasses, brown sugar and 1 cup flour. Beat until smooth. Stir in oat mixture and enough remaining flour to make a stiff dough. , Turn out onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours. , Punch dough down. Turn onto a lightly floured surface; divide in half. Shape each portion into a ball. Cover and let rest for 10 minutes; Shape into loaves. Place in 2 greased 9x5-in. loaf pans. Cover and let rise until nearly doubled, about 1 hour. , Bake at 375° for 30-35 minutes (cover loosely with foil if top browns too quickly). Remove from pans to wire racks to cool.

- Gradually add the flour, ½ cup at a time, just until the mixture pulls away from the edges of the bowl in a soft ball of dough – do not add too much flour. Knead for about 8-10 minutes, or until the dough is smooth and elastic.
- Transfer the dough to a greased bowl and turn to coat the dough on all sides. Cover and let rise in a warm place until doubled in size, 1 - 2 hours.
