- In a large skillet, heat oil over medium-high heat. Add shallots; cook and stir until tender, 1-2 minutes. Add spinach and garlic; cook until spinach is wilted, 30-45 seconds longer. Transfer to a large bowl; cool slightly., Stir feta cheese and seasonings into spinach. Add beef; mix lightly but thoroughly. Shape into eight 1/2-in.-thick patties., Grill burgers, covered, over medium heat until a thermometer reads 160°, 6-8 minutes on each side. Grill buns over medium heat, cut side down, until toasted, 30-60 seconds. Serve burgers on buns. If desired, add toppings.Freeze option: Place patties on a baking sheet lined with plastic wrap; wrap and freeze until firm. Remove from pan and transfer to a freezer container; return to freezer. To use, cook frozen patties as directed, increasing time as necessary for a thermometer to read 160°.

BEEF AND BULGUR PATTIES
These clever patties are bulked up with cracked bulgur wheat so you only have to buy half a pound of ground beef. Don't forget to save room for the cucumber and pomegranate side salad.

- Place the bulgur and 1/2 teaspoon salt in a medium bowl and add the boiling water. Soak until tender but slightly chewy, 20 minutes. Strain to remove any excess moisture.
- Heat a large nonstick skillet with 2 tablespoons of the olive oil over medium heat. Add the onions, 1/4 teaspoon salt and a pinch of black pepper. Cook, stirring, until soft and starting to brown, about 4 minutes. Add the cumin and allspice, and stir until very fragrant and the onions are evenly coated in the spices, about 1 minute. Transfer the onions to a large bowl to cool. Carefully wipe out the skillet to use again later.
- Mix together the hummus, yogurt, 1 teaspoon of the lemon juice and 1/2 teaspoon salt.
- Add the bulgur, ground beef, 1 1/4 teaspoons salt and 1/4 teaspoon pepper to the onions. Gently mix together and form 4 patties, each just under 1/2-inch thick.
- Heat the reserved skillet with 1 tablespoon of the olive oil over medium heat. When the oil starts to shimmer, add the patties, making sure to leave some space between them. Cook until the patties are cooked through, 5 to 6 minutes per side.
- Toss together the greens, pomegranate seeds, cucumber, the remaining 1 tablespoon lemon juice, the remaining 1 tablespoon olive oil and salt and pepper to taste in a large bowl. Divide the patties and salad among four plates. Serve each with pita and a dollop of the yogurt sauce.

- Bring 1/2 cup water to a simmer over medium-high heat in a large skillet or saucepan. Add spinach, cover, and cook until wilted and tender, 2 to 3 minutes. Drain in a colander. When cool enough to handle, squeeze out as much moisture as possible with your hands (or use a ricer to press out excess). Coarsely chop spinach and transfer to a large bowl.
- Heat oil in a medium heavy-bottomed skillet, such as cast iron, over medium. Add onion and cook, stirring occasionally, until tender but no color has developed, about 6 minutes. Transfer to bowl with spinach and let cool completely.
- Stir in flour, egg, nutmeg, 2 teaspoons salt, and 1/4 teaspoon pepper. Fold in feta. Form mixture into golf-ball-size rounds, then flatten slightly into 1-inch-thick patties. Transfer to a parchment-lined tray and refrigerate until cold, at least 2 hours or, loosely covered, up to 1 day.
- Pour a scant 1/2 inch oil into skillet. Heat over medium until oil shimmers and bubbles form instantly around a breadcrumb dropped in (350°F on a deep-fry thermometer). Working in batches, fry, flipping once and adjusting heat as needed to maintain a level temperature, until crisp and golden brown, about 5 minutes.
- Drain on a wire rack set over a rimmed baking sheet; keep warm in a preheated 200°F oven while frying the rest. Serve warm, with dipping sauces.

This is a great ground beef casserole. Even my husband who doesn't care for spinach likes this one! And it got rave reviews when I took it to a church potluck.

SEPHARDIC SPINACH PATTIES
Keftes de Espinaca -- this is the closest thing I have found to Croquetas de Espinaca (Spinach Croquettes). A friend brought them over about 6 months ago and have been looking for them ever since. She bought them from a bakery that moved out of town. Even spinach haters can't resist them, especially when they're splashed with a little fresh lemon juice; fresh juice does make a major difference in taste. Onions add a sweet flavor and textural complexity.

- PREPARATION:.
- In a large skillet, heat the olive oil over medium heat.
- Add the onion and, if using, the garlic and sauté until soft and translucent, about 5 minutes.
- Remove from the heat and add the spinach, matza meal, salt, pepper, and, if using, the nutmeg.
- Stir in the eggs.
- If the mixture is too loose, add a little more matza meal.
- The mixture can be stored in the refrigerator for a day.
- Shape the spinach mixture into patties 3 inches long and 1 1/2 inches wide, with tapered ends.
- In a large skillet, heat a thin layer of oil over medium heat.
- In batches, fry the patties, turning, until golden brown, about 3 minutes per side.
- Drain on paper toweling.
- Serve warm, accompanied with lemon wedges.
- VARIATIONS.
- Sephardic Spinach Patties with Cheese (Keftes de Espinaca con Queso):
- Add 1 cup (4 ounces) shredded Muenster, Swiss, Gouda, or Cheddar cheese; or 1/4 cup grated kefalotyri or Parmesan cheese.
- Sephardic Spinach Patties with Walnuts (Keftes de Espinaca con Muez): Substitute 1/2 to 1 cup finely chopped walnuts for the matza meal.
- *To reheat the spinach patties, place in a large skillet, add 1 1/2 cups vegetable stock, and simmer over low heat for about 5 minutes.

- In a large frying pan, sauté onion in 2 tablespoons of butter until soft and lightly browned. Remove from heat and mix in minced garlic.
- Beat egg in medium bowl, and add in onion mixture, ground beef, spinach, 2 tablespoons beef broth, salt, and pepper. Shape into 4 oval patties, about 1 inch thick.
- Add 1-tablespoon butter to same frying pan used to sauté onions. Place patties in pan and brown over moderately high heat. Cooking about 4 minutes on each side, turning once. Remove patties, and place on a warmed platter to keep them warm.
