Beef Skewer in Korean-Inspired Marinade image

Steps:

  • 1. In large owl, combine soy sauce, water, sugar, honey, mirin and garlic. Add sliced beef; toss to combine. Cover and refrigerate at least 30minutes or up to 24 hours.
  • 2. Grease the grill and preheat to medium-high. Thread beef onto skewers, being careful not to pack too closely.
  • 3.Grill skewers about 3-4 minutes per side until beef is nicely charred. Sprinkle with sesame seeds and scallions. Serve with lettuce leaves as wrappers, bell pepper and cucumbers as filling.

6 tablespoons Soy Sauce
3 tablespoons Water
2 tablespoons Sugar
2 tablespoons Honey
2 tablespoons Mirin
4 cloves Garlic, minced
1 1/2 pounds Beef Rib Eye, boneless 1/8" slices
1 teaspoon Sesane seeds
1 piece Scallions,thinly sliced

KOREAN BEEF KABOBS (ASIAN)

I've been making this dish for years and it never fails to draw rave reviews. Using a good cut of meat is key, so it will be very tender. I use beef tenderloin or sirloin (choice at the minimum). The longer you marinate the beef the better the flavor (over night at a minimum). Cooking time does not include time to marinate.

Korean Beef Kabobs (Asian) image

Steps:

  • Cut tenderloin or sirloin beef up into big chunks (2" x 2" cubes). Score 1/4' deep all sides with a sharp knife (several slices per side). Using a two prong fork, pierce the meet repeatedly on all sides (3 or 4 times per side). This will allow the juices to work their way deep into the meat.
  • Chop the scallions (just the white part) and mince the garlic.
  • Add all the ingrediences together and pour over the meat in a non-reactive container. I use a large zip lock bag.
  • Marinate the meet for at least 12 hrs (24 is best).
  • Place the meat on skewers with your choice of veggies in between. I like onions, bell peppers, and mushrooms.
  • Grill over hot coals turning occasionally and brushing often with remaining marinade. Cook to desired doneness.

2 lbs beef, chunks (cut 2-inch thick)

This popular dish can be found on the menu at virtually every Korean restaurant in Manhattan. The beef is topped with various accompaniments such as a few raw garlic slices, kimchi (assorted spicy pickles), and steamed white rice, then wrapped in lettuce and eaten with your hands.

Korean Marinated Beef (Bulgogi) image

Steps:

  • Stir together soy sauce, sugar, sesame oil, white and pale green scallions, garlic, ginger, and 2 tablespoons sesame seeds in a bowl until sugar is dissolved. Add steak and toss to coat, then marinate 15 minutes.
  • Heat vegetable oil in a 12-inch heavy skillet over high heat until just smoking, then add steak in 1 layer and sauté, turning over occasionally, until browned and just cooked through, about 5 minutes total. Transfer to a platter and sprinkle with scallion greens and remaining 1 tablespoon sesame seeds, then serve with accompaniments.
  • *Available at Asian markets and many supermarkets.

1/4 cup soy sauce

1 bunch scallions (white and pale green parts separated from greens), minced (1/2 cup)
1 tablespoon minced garlic

1 tablespoon vegetable oil

FANTASTIC KOREAN-STYLE MARINADE FOR BEEF PORK OR CHICKEN

There should be enough marinade for about 2-1/2 pounds of beef or chicken you may double the marinade ingredients but keep the fresh garlic and green onion at the same amount --- the meat needs to come down to almost room temperature before grilling so plan well ahead, also there is a marinating time of 8-24 hours, you may omit the cayenne completely if desired or adjust to suit heat level.

Fantastic Korean-Style Marinade for Beef Pork or Chicken image

Steps:

  • In a bowl whisk together all marinade ingredients together until the sugar granules are completely dissolved.
  • Pour the marinade over the meat and turn to coat.
  • Cover with plastic wrap and refrigerate for 8-24 hours.
  • Remove the meat and shake off excess marinade.
  • Place the meat in a pan and allow to come down to room temperature (this will take a few hours).
  • Grill as desired.

  • TENDERIZER: in a food processor, combine the ingredients for the tenderizer and pulse until a thick paste forms. Set aside.
  • KOREAN BEEF KABOBS: in a large bowl combine the soy sauce, light brown sugar, and sesame oil and whisk until the sugar dissolves. Add the tenderizer and stir to combine. Add in the scallions along with the diced sirloin steak and stir so the meat is covered with the prepared marinade. Refrigerate for at least 30 minutes and up to 1 1/2 hours.
  • GRILLING: Skewer the bell peppers, onions, pineapple, and cubed sirloin onto the prepared skewers in whichever order you prefer. I used about 3-4 cubes of steak per skewer alternating with the veggies/pineapple. Heat an indoor/outdoor grill for several minutes and grill to desired doneness, or for about 8-10 minutes for medium-well. Sprinkle with sesame seeds and scallions before serving.
