  • In a skillet, cook turkey or beef and onion and drain fat.
  • Stir in taco seasoning, water, tomatoes and corn and bring to a boil.
  • Add rice.
  • Reduce heat, cover and simmer for 5 minutes or until rice is tender and liquid is absorbed.
  • Sprinkle with cheese, cover and let stand until the cheese is melted.

  • Chop the green pepper. Cut the Velveeta into cubes.
  • Brown ground beef in a large skillet; drain well.

  • Reduce heat to medium-low and simmer 15 minutes, until pasta is tender, stirring occasionally.

  • Cook egg noodles according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat 6-8 minutes or until meat is no longer pink, breaking into crumbles; drain. Stir in condensed soup, salsa, water and taco seasoning., Drain noodles; stir into skillet and heat through. Sprinkle with cheese. Remove from heat. Let stand, covered, 1-2 minutes or until cheese is melted. Freeze option: Freeze cooled noodle mixture in freezer containers. To use, partially thaw in refrigerator overnight.   • Preheat oven to 400°. In a 10-in. cast-iron or other ovenproof skillet, cook beef over medium heat until no longer pink, breaking into crumbles, 5-7 minutes; drain. Stir in beans, tomatoes, enchilada sauce and cumin; bring to a boil. Reduce heat; simmer, uncovered, 20 minutes to allow flavors to blend, stirring occasionally. Stir in 2 tablespoons cilantro., In a bowl, combine baking mix, 1/2 cup cheese, bacon and remaining cilantro. Add milk and beaten egg; stir just until a soft dough is formed. Steps:

  • Preheat oven to 375°.
  • Grease a 3-quart casserole.
  • In a large skillet, cook ground beef over med-high heat until browned; drain.
  • Reduce heat to medium; add onion and garlic and cook for about 5 minutes.
  • Add tomatoes, tomato paste, chilies, beans, salt, chili powder, cumin and pepper.
  • Stir to combine and simmer for about 10 minutes.
  • Pour into prepared casserole.
  • Add macaroni and mix well to combine all.
  • Sprinkle with cheese, add jalapeño slices if desired; cover and bake for 30 minutes.
  • Uncover and continue baking for 10 minutes.
