Steps:
- Heat the oven to 400 degrees F.
- Pulse the garlic in a food processor to mince it. Add the onion and pulse to chop, then add the green pepper and pulse to chop. Add the lamb, tomato paste, tomatoes, parsley, cumin, cayenne, and salt and pepper; process until everything is very well chopped. The consistency should be wet and pasty, like hummus. Spread a thin layer of the meat mixture onto flour tortillas all the way to the edge. Bake directly on the oven rack for 8 to 10 minutes, or until the edges are browned and the meat is cooked through. If the tortilla begins to inflate in the oven, pop it with a fork from the top. To serve, squeeze some lemon over the top, fold the pizza into quarters, and eat out of hand.
CRISPY TORTILLA PIZZA AND SAVINGS SALAD

- For the caramelized onions: Cook the onions in the butter and oil in a skillet over medium-low heat, stirring occasionally, until caramelized, about 20 minutes. Set aside.
- For the pizza: Cook the sausage in a skillet, breaking up with a wooden spoon, until crumbled and cooked through. Set aside.
- Adjust an oven rack in the middle position and preheat the broiler to high. Add the oil to a large nonstick skillet over medium heat, then add a tortilla; this will start crisping the bottom of the tortilla before it goes in the oven. Almost immediately, build the pizza right in the pan, starting with a quarter of the tomatoes followed by the a quarter of the cheese, making sure the cheese goes all the way to the edge and beyond. Then add a quarter of the onions and a quarter of the sausage. Transfer the skillet to the broiler and cook until the cheese is golden brown and melted, 4 to 5 minutes. Repeat with the remaining pizza ingredients to make 3 more pizzas. (You can hold the pizzas in a warm oven while you make the others.)
- For the salad: Place the lettuce in a salad bowl. Top with the tomatoes and bacon and drizzle with dressing.

EASY TORTILLA PIZZA
This is an extremely easy/fast way to prepare a delicious pizza that is light enough to be a snack, serves well as an appetizer, or is so good that is can be devoured alone! I make this often when entertaining guests and it always goes fast. You can make any sort of topping variations. The one below is the classic way I usually prepare it. I cook this also with my family. Each person gets their own tortilla to, as my kids say, decorate.

- Preheat oven to 400 degrees F (200 degrees C).
- Place tortilla on a baking sheet. Brush with olive oil; sprinkle garlic powder, salt, and pepper on top.
- Bake in the preheated oven until golden, 3 to 5 minutes. Remove tortilla from the oven and spread tomato sauce on top. Arrange chicken breast, green bell pepper, and green onions over tomato sauce; cover with mozzarella cheese.

- Preheat oven to 400 degrees. Using a paring knife, trim tortillas to fit a 9-inch springform pan (use the removable bottom of the pan as a guide). Assemble pan with the bottom upside down; lightly oil bottom and sides. Set aside.
- In a large skillet, heat oil over medium. Add onion, cumin, and red-pepper flakes; season with salt and pepper. Cook until onion has softened, 3 to 5 minutes. Stir in tomato paste. Raise heat to medium-high; add beef and garlic. Cook, breaking up meat with a spoon until no longer pink, 4 to 6 minutes. Add corn and spinach; stir until spinach has wilted, about 2 minutes.
- Place one tortilla in the prepared pan. Spreading evenly, top with 1 1/2 packed cups beef mixture, then 1/2 cup cheese. Repeat with two more layers. Top with last tortilla, and sprinkle with remaining 1/2 cup cheese.
- Bake pie until top is lightly browned, 15 to 20 minutes. Run knife around edge of pan; remove sides. Using two wide metal spatulas, lift pie from bottom of pan, and transfer to a cutting board. Cut into wedges. If desired, serve with cilantro and sour cream.
JIMMY'S MEXICAN PIZZA
Jimmy's specially seasoned ground beef, refried beans, salsa and cheese layered in a deep dish style. A tasty and easy Mexican-style pizza with a flour tortilla crust I whipped up because I had the stuff to make it!!

- Preheat the oven to 350 degrees F (175 degrees C). Coat 2 pie plates with non-stick cooking spray.
- Place beef, onion and garlic in a skillet over medium heat. Cook until beef is evenly browned. Drain off grease. Season the meat with chili powder, cumin, paprika, salt and pepper.
- Lay one tortilla in each pie plate, and cover with a layer of refried beans. Spread half of the seasoned ground beef over each one, and then cover with a second tortilla. Bake for 10 minutes in the preheated oven.
- Remove the plates from the oven, and let cool slightly. Spread half of the salsa over each top tortilla. Cover each pizza with half of the Cheddar and Monterey Jack cheeses. Place half of the tomatoes, half of the green onions, and half of the jalapeno slices onto each one.
- Return the pizzas to the oven, and bake for 5 to 10 more minutes, until the cheese is melted. Remove from the oven, and let cool slightly before slicing each one into 4 pieces.

GROUND BEEF PIZZA
This is my kind of favorite pizza. I have not try this one but this is almost the same as the one I did without any recipe. This is from the issue of November 2005, Coup de Pouce. ETA : I made it on July 24, 2011. I used 1 lb of lean ground beef. And also a store-bought dough already made. I made this pizza sauce : recipe#460241 I added chopped red bell pepper. DH said 10 stars and he didn't know it was my recipe.

- In a skillet, cook ground beef, onion, garlic, oregano, salt and pepper at medium-high heat, stirring from time to time, 3 to 5 minutes or until beef is no longer pink. Drain any fat. Set aside.
- On a lightly floured surface, lower the dough in a circle of 12 inches of diameter. Put on a greased pizza plate. Spread sauce on the pizza dough. Garnish with beef preparation and sprinkle with cheddar and mozzarella cheeses. Cook on the lowest grill in a preheated oven of 500 F for about 10 minutes or until cheese is bubbling and crust is golden and slighly inflated.
EASY BEEF BURRITOS

- Heat the oil in a large pan - a casserole is ideal. Fry the onions for 8 mins, then add the garlic, spices and oregano and cook for 1 min. Crumble over the mince and sizzle for 5 mins, stirring, until browned. Stir in the sugar and leave for a minute, then splash in the vinegar and pour in the tomatoes.
- Simmer for 5 mins then tip in the beans and the water from the can. Season, stir and simmer everything for 20 mins until the beef is in a thick gravy. The sauce can be prepared up to 2 days ahead, chilled and reheated with a splash of water or frozen for 6 months.
- To make the burritos, heat the tortillas following pack instructions. Pile some rice and beef sauce along each tortilla and scatter over your choice of topping. Fold over the ends and roll up to seal. Secure by wrapping with foil if you want. Eat immediately.

TORTILLA PIZZA
Steps:
- Preheat the oven to 375 degrees F.
- Put the tortillas on 2 baking sheets. Top each tortilla with the sliced tomatoes. Divide the beef and vegetables from the leftover Fajita Skewers over the tortillas. Sprinkle the cheese evenly over the top and bake in the oven until the cheese is melted and golden and the tortillas are crispy, about 10 minutes. Transfer to serving dishes and serve.
- In a large resealable bag, mix together the lime juice, garlic, hot sauce, canola oil and chili powder. Season with salt and pepper to taste. Remove 1 tablespoon of the marinade and set aside.
- Slice the peppers and onions into one inch square pieces. Place in the bag with the marinade. Slice the meat into thin strips against the grain and put into the bag with the marinade and vegetables and mix well to coat everything with the marinade. Place the bag in a large bowl incase it leaks and refrigerate for one and half hours.
- Mix the reserved marinade with the sour cream and refrigerate.
- If using wooden skewers soak in water for 30 minutes before threading on the beef and vegetables.
- Remove the meat and vegetables from the refrigerator and let come to room temperature, about 30 minutes. Thread the beef and vegetables onto the skewers. Each skewer should get 4 pieces each of the pepper and onion and 3 pieces of the beef, alternating as you thread them onto the skewer. Cook the skewers on a grill pan or outdoor grill over medium high heat until meat is medium rare, about 3 to 4 minutes a side. Garnish with the flavored sour cream and cilantro.
BEEF TORTILLA PIZZA
I made this not too long ago and it was nice, although I didn't use the flour torillas, I used a pizza crust, and I also used pizza sauce and added a bit of red pepper flakes. We enjoyed this.

- Brown hamburger, and onion over medium heat for 8-10 minutes.
- Drain.
- Stir oregano in.
- Lightly brush tortillas with oil.
- Bake tortillas on cookie sheet in preheated 400 degree oven for 3 minutes.
- Spoon beef mix evenly on each tortilla, top with tomatoes.
- Sprinkle with basil and cheeses.
- Return to oven and bake 12-14 minutes until browned.

TORTILLA PIZZAS
This is something we threw together when we couldn't be bothered to make fresh pizza bases, and couldn't face frozen ones. We used flour tortillas but you could use corn ones if you prefer. Using two tortillas with some soft cheese in between adds a bit of stability to what otherwise could be an extremely floppy pizza! The cooking time is just a guide as you will be able to see when it's cooked - when the cheese melts!!!

- Preheat the oven to 200 degrees centigrade.
- Evenly spread the soft cheese onto one of the tortillas.
- Optional - add a pinch of fresh or dried mixed herbs over the soft cheese base.
- Place the second tortilla on top and press down lightly.
- Evenly spread the pizza sauce on top of the tortilla.
- Add the cheese and any other toppings you would like.
- Place in the oven (on a pizza tray if you like or directly onto the rack) and cook the pizza until it the cheese melts and the pizza is piping hot.

- In a large non-stick skillet, combine the first 7 ingredients. Cook until sausage is no longer pink, drain. Add in the pizza sauce and heat through. Add in the mozzarella and stir until well mixed.
- Place 1-1 1/2 tablespoons of filling on each tortilla. Fold ends of tortilla over the filling, then roll up.
- These can be individually wrapped in cling wrap for lunch boxes, or frozen for later.

BEEF TORTILLAS
I adapted this out of a children's cookbook and changed it around quite a bit. It says you can use corn tortillas as well and you can also substitute chopped chicken. If you don't get tins on chopped tomatoes where you are then the recipe did call for 4 ripe tomatoes. I also used more than twice the amount of cheese called for and used a dominoes store brought white sauce which was also more than required.

- Pre-heat oven to 180 degrees c
- Heat oil in pan, add minced garlic and onion and fry until onion is clear.
- Add mince and brown. add the tomatoes, chili, cumin and coriander.
- Allow to cook over a low heat for 20-30 minutes (I stuck mine in the oven for half an hour with the lid on).
- Lightly grease a baking dish.
- Divide meat filling between tortillas and roll them up to enclose filling. Place them in the greased dish.
- Pour white sauce over tortillas and sprinkle cheese on top.
- Bake for 20 minutes until cheese melts and tortillas are piping hot.
