BEEF/VENISON JERKY
I finally wrote down the exact amounts I used to get some great tasting jerky! The cayenne pepper is optional as it does spice it up a bit. The kids love it and its better than feeding them twinkees.

Steps:
- Mix all ingredients. Pour over meat and mix well. Put it in the fridge overnight. I use a dehydrator and a jerky gun to dry the stuff as I've found this is the best way to make jerky. Usually takes about 7 hours to dry.

Steps:
- Marinate meat overnight. Cook in food dehydrator or oven on lowest setting. Test jerky for dryness by cooling a piece. When cool it should crack when bent but not break and there should be no moist spots. Store in an air tight container at room temperature for up to two weeks, refrigerate up to three weeks or freeze. Note: The cooking time will vary depending on a few factors including humidity, the thickness of meat slices and temperature setting.

Steps:
- Trim all fat from meat.
- Slice meat with the grain to about 1/4" to 1/2" thick.
- Place meat in the cool marinade and leave overnight, or for no less than 8 hours.
- Remove from brine and allow to air dry without rinsing.
- Smoke in your smoker for 12 to 16 hours or until jerky has dried out to your liking.
- Use your favorite fuel for smoking.
- This can be put into a dehydrator for about 6 hours.

Steps:
- Slice the meat when it is lightly frozen.
- The cuts should be long, thin and with the grain.
- Cut across the grain if you want more tender, but more brittle jerky.
- Trim off all of the fat.
- Marinate strips in a glass container overnight.
- You may substitute 2 cups of red wine for the corn whiskey and water.
- Pat dry and arrange pieces side by side on an oven roasting rack, with- out overlap.
- Cook at minimum heat (150F) for 6 hours.
- Leave oven door ajar to allow moisture to escape.
- Meat should be dark, dry and store jerky in a cool, airtight container.

BEST EVER BEEF JERKY
Western Barbecue Beef Jerky! We've been making this for years! I've tried a million recipes, and this is the best! Every year my husband goes deer hunting and every year we make this beef jerky to take on his trip. It's addictive! Your jaw will be aching!!!!!!! (I always use London Broil)

Steps:
- Combine all ingredients (except the meat) until combined.
- Add meat that has been thinly sliced (the meat is easier to slice when its half frozen) and marinade 24-48 hours, refrigerated.
- Remove from marinade, disguarding excess.
- Place onto food dehydrator trays, you'll know its done when it cracks when bent but does not break.
- I have never "over dehydrated" my jerky, I always feel its better over dried than under dried. Mine usually takes about a day and a half to be fully done. Rotate trays for even dehydration.
VENISON JERKY
I got the recipe from my Dad. We have been making Jerky for several years now. It is a spicy but great recipe. Very inexpensive compared to the store bought stuff.

- Refrigerate for 3 days.
- Mix well once every day.
- Use a Jerky Gun to make strips and cook in a food dehydrator as directed by manufacture.
