BEER BRATS AND KRAUT
Steps:
- Pour beer into a pot and heat over medium heat. Place brats and kraut in beer and simmer for approximately 10 minutes. With tongs, remove brats from beer and place 1 in each bun. Using a slotted spoon, cover brat in sauerkraut. Drizzle mustard on top of kraut.

- Place brats in a Dutch oven with onions and butter, cover the brats with beer. Bring to a boil and reduce to simmer until brats are cooked. Remove brats and set aside beer mixture. Grill brats until golden brown and return to beer mixture until ready to serve. Serve brats on fresh baked brat buns with sauerkraut, onions, green peppers, ketchup, and/or mustard.
HOMEMADE HAMBURGER BUNS
I've gotten a thousand request for these. We're going to make our own, and not only are these going to be the perfect shape, they're going to taste way better than anything that comes out of a plastic bag. The total time takes almost 4 hours, but the actual amount of work involved is maybe 10 minutes.

Steps:
- Line a baking sheet with a silicone mat or parchment paper.
- Place yeast into bowl of a large stand mixer; whisk in 1/2 cup flour and warm water until smooth. Let stand until mixture is foamy, 10 to 15 minutes.
- Whisk 1 egg, melted butter, sugar, and salt thoroughly into yeast mixture. Add remaining flour (about 3 cups).
- Fit a dough hook onto stand mixer and knead the dough on low speed until soft and sticky, 5 to 6 minutes. Scrape sides if needed. Poke and prod the dough with a silicone spatula; if large amounts of dough stick to the spatula, add a little more flour.
- Transfer dough onto a floured work surface; dough will be sticky and elastic but not stick to your fingers. Form the dough lightly into a smooth, round shape, gently tucking loose ends underneath.
- Wipe out stand mixer bowl, drizzle olive oil into the bowl, and turn dough over in the bowl several times to coat surface thinly with oil. Cover bowl with aluminum foil. Let dough rise in a warm place until doubled, about 2 hours.
- Transfer dough to a floured work surface and pat to flatten bubbles and form into a slightly rounded rectangle of dough about 5x10 inches and about 1/2 inch thick. Dust dough lightly with flour if needed. Cut dough into 8 equal pieces. Form each piece into a round shape, gently tucking ends underneath as before.
- Use your hands to gently pat and stretch the dough rounds into flat disc shapes about 1/2 inch thick. Arrange buns about 1/2 inch apart on prepared baking sheet. Dust buns very lightly with flour. Drape a piece of plastic wrap over the baking sheet (do not seal tightly). Let buns rise until doubled, about 1 hour.
- Preheat oven to 375 degrees F (190 degrees C).
- Beat 1 egg with milk in a small bowl, using a fork, until mixture is thoroughly combined. Very gently and lightly brush tops of buns with egg wash without deflating the risen dough. Sprinkle each bun with sesame seeds.
- Bake in the preheated oven until lightly browned on top, 15 to 17 minutes. Buns will stick together slightly where they touch. Let cool completely, tear the buns apart, and slice in half crosswise to serve.

I have been making these for so long, I cannot remember where this recipe came from. They are wonderful with soups and stews. I also like that it's not a bread you have to cut!

- Blend all ingredients with a fork.
- DO NOT beat.
- Heat oven to 400 degrees.
- In 12 muffin cups put a dab of solid shortening.
- Place in oven for shortening to melt.
- When melted, remove muffin pan from oven and swirl the melted shortening in the cups.
- Drop batter by spoonfuls (about half full) into prepared muffin cups.
- Bake 12-15 minutes.

- Combine celery, onion, ketchup, bbq sauce, water, vinegar, worcestershire sauce, brown sugar, chili powder, pepper, and garlic powder and mix well.
- Pour into slow cooker.
- Add roast, cover and cook high for 6 - 7 hours.
- Remove roast and shred meat. Return meat to sauce and serve over buns with a slotted spoon.

- Place the flour into a large mixing bowl. Add the salt on one end and the yeast on the other end of the bowl. Add the butter and about 3/4 of the beer. Use your fingers to turn the mixture and make it come together. Add the rest of the beer little by little until all the flour is incorporated. You might not need all the beer or you might need a little more. You can also add a bit more water if you've drank all the beer. The dough should be wet but not too wet. Brush the mixture from the sides of the bowl and work towards the middle. Continue until you have a coarse dough
- Sprinkle some olive oil on the bench and put the wet dough on it. Knead for about 5 to 10 minutes until it is soft and smooth.
- Put the dough into a bowl brushed with oil and cover with a teatowel. Leave to rise until doubled in size. This can take an hour but you can leave it for 2 or 3 if you want.
