BEER-MARINATED FLANK STEAK
I made this for a friend's birthday dinner and it was so good my husband asked me to make again over the weekend. Easy, flavorful marinade for flank steak. I adapted this from Bon Appetit.

Steps:
- Whisk first 7 ingredients in medium bowl, then whisk in beer. Pour marinade into large resealable plastic bag. Add steaks, seal bag, and chill 1 day, turning bag occasionally.
- Grill over medium-high heat for 5 minutes per side for medium rare. Alternatively, place steaks in hot grill pan or skillet and cook until well browned and thermometer inserted into center registers 125°F to 130°F for medium-rare, about 5 minutes per side.
- Transfer steaks to carving board and let rest 5 minutes.
- Slice steaks thinly across grain. Arrange on platter; spoon any accumulated juices over and serve.
BEER-MARINATED GRILLED SKIRT STEAK

- In a wide, shallow glass baking dish, scatter half of the orange slices, half of the onion slices and half of the garlic pieces on the bottom of the dish. Sprinkle the steak all over with salt and pepper and put in the dish on top of the orange and onion slices. Scatter the remaining orange, onion and garlic over the steak and pour in the beer and soy sauce. Cover with plastic wrap and marinate for 1 hour at room temperature or up to overnight in the refrigerator.
- Prepare a barbeque on medium-high heat or preheat a broiler. Remove the meat from the marinade and discard the marinade. Grill the steak to desired doneness, about 4 minutes per side for medium-rare. Serve as desired.

- Using a sharp knife, lightly score flank steaks about 1/8 inch deep on both sides in a crisscross pattern at 1/2 inch intervals. Place steaks in a 13x9x2 inch glass baking dish. Sprinkle steaks on both sides with oregano and cumin and a generous amount of coarse salt and freshly ground pepper. Drizzle olive oil over both sides of steaks, rubbing oil and spices into meat. Add green onions, beer and Worcestershire sauce, turning steaks several times to coat both sides. Cover and chill at least 3 hours, turning occasionally (can be done 1 day ahead -- keep chilled.).
- Prepare barbecue (medium high heat). Brush grill rack lightly with oil. Grill steaks to desired doneness. Transfer steaks to cutting board; let rest 5 minutes. Thinly slice steaks across steaks. Transfer to a platter and serve with Aji Sauce and Colombian Guacamole.
- To make the Aji Sauce:.
- Combine jalapenos, green onions, sweet onion, and cilantro in processor; puree until paste forms, scraping down sides of bowls with rubber spatula several times. Add 2 tablespoons vinegar and process until mixture is blended but some texture remains. Transfer to a small bowl. Stir in 3/4 teaspoon coarse salt, 1/4 teaspoon pepper and more vinegar to taste if desired. (Can be made one day ahead. Cover and refrigerate).
- To make the Colombian Guacamole:.
- Combine avocado, cilantro, green onion, and serrano chilies in processor. Puree until smooth. Add 1/4 cup water and 2 1/2 tablespoons lime juice and process to blend. Add more water to avocado mixture by tablespoonfuls if needed and blend until a thick sauce forms. Transfer to a small bowl; season to taste with coarse salt and pepper and more lime juice if desired. (Can be made up to 2 hours ahead. Cover and Chill.).

- Place the steaks in a large, shallow container with a lid. Season each side of the steaks with the salt and lemon pepper. Gently pour the beer over the steaks (making sure the seasoning doesn't wash off). Cover, and refrigerate for 1 to 2 hours.
- Preheat grill for high heat.
- Lightly oil grill grate. Place steaks on grill, and discard beer marinade. Cook for 5 minutes per side, or to desired doneness.

BEERBECUE BEEF FLANK STEAK
There are very few things in life as beautiful as a glistening, smoky flank steak on a grill, being painted with beerbecue sauce. Any beer will do, but try to use something on the more aggressive side if you can. The subtle bitterness from the beer in the background really makes this sauce pop.

- Pour ketchup, molasses, and white vinegar in a bowl; add white sugar, 2 teaspoons black pepper, 1 teaspoon salt, cayenne pepper, cumin, allspice, and cinnamon. Whisk until sauce is smooth. Pour in beer.
- Place flank steak into a non-reactive container; pour sauce over meat. Poke at least 100 holes per side in the flank steak using 2 forks.
- Cover container with plastic wrap and marinate beef 8 to 12 hours (up to overnight).
- Remove flank steak from marinade and pat the meat dry with paper towels. Pour leftover marinade into a saucepan, place over medium heat, and bring to a boil. Reduce heat to low and simmer for 5 minutes to make a basting sauce.
- Preheat an outdoor grill for high heat and lightly oil the grate. Season flank steak with salt and black pepper.
- Grill flank steak for 2 1/2 minutes; turn meat around on grate to a 45-degree angle to make diamond grill marks; grill for 2 1/2 more minutes. Repeat on second side, turning meat 45 degrees after 2 1/2 minutes and grilling 2 1/2 more minutes.
- Flip steak to original side and paint meat with sauce. Continue to grill until sauce has glazed onto the meat, about 30 seconds. Turn meat over and brush other side with sauce. Sauce will burn if cooked too long. Repeat 1 more time, brushing and glazing sauce onto meat for about 30 seconds on each side. An instant-read meat thermometer, inserted into the thickest part of the flank steak, should read 125 degrees F (52 degrees C).
- Transfer steak to a platter and let rest 5 to 10 minutes before slicing lengthwise down the center; cut each half across the grain into slices about 3/8 inch thick. Drizzle slices with more sauce to serve.

BEER MARINATED FLANK STEAK
From the Favorite Brand Names Cookbook. This has lemon juice, garlic, onions, Worcestershire sauce, and some brown sugar. I substituted the brown sugar for Splenda's brown sugar. DH and I really enjoyed this marinade but the kids weren't as into it. I broiled mine and then finished it in a grill pan with the onions caramelizing beside it-YUM!

- Preheat grill for high heat.
- Use a fork to poke holes all over the surface of the steaks, and place steaks in a large baking dish. In a bowl, mix together beer, teriyaki sauce, and brown sugar. Pour sauce over steaks, and let sit about 5 minutes. Sprinkle with 1/2 the seasoned salt, pepper, and garlic powder; set aside for 10 minutes. Turn steaks over, sprinkle with remaining seasoned salt, pepper, and garlic powder, and continue marinating for 10 more minutes.
