Steps:

  • Pass the beets, carrots, apples and ginger through a juicer. Strain through a fine-mesh sieve. Stir in the lemon juice. Pour into glasses and serve.

1 pound beets, trimmed, cut into 1-inch pieces (about 3 medium)
8 ounces carrots, trimmed, cut into 1-inch pieces (about 2 large)
2 Gala apples, cored, cut into 1-inch pieces
One 2-inch piece ginger, peeled and halved
2 tablespoons lemon juice

CARROT BEET JUICE

One of my favorites. I love it when it's served right away over ice. Just make sure nto to over power the carrot juice with the beet. Try to use cold veggies it is a big difference in taste if you juice room temp veggies.
