Steps:
- Marinate the quail in olive oil, garlic and fresh herbs in the refrigerator overnight.
- Remove from the refrigerator and sprinkle Creole seasoning blend on both sides. Grill on high heat over mesquite wood until done (about 4 to 5 minutes per side).

- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Combine parsley, paprika, garlic powder, salt, and pepper in a bowl. Add olive oil and stir until evenly combined. Brush seasoned oil over both sides of the quail.
- Grill for 8 minutes. Carefully flip with tongs and grill for 8 minutes more.

BARBECUED TEXAS-STYLE QUAIL

- Rub the quails with butter and apply a light coating of the seasoning to the bird. For a real Texas taste, place a jalapeno pepper in the center of the bird. Wrap a strip of bacon around the breast of the bird and secure with a toothpick. Cook over an open fire or hot coals. The more smoke, the better the bird! As the birds cook, they should be basted with butter to keep them from drying out.;
- Mix the above in a small bowl.

- For the brine: Combine the buttermilk, hot sauce, garlic, peppercorns and cayenne pepper in a large bowl. Submerge the quails in the brine and refrigerate for 12 hours.
- Heat the oil to 300 degrees F in a deep pot.
- Combine the flours, salt, black pepper, white pepper and cayenne pepper in a large bowl. Remove the quail from the brine and coat in the flour mixture. Fry the quail, 4 to 5 minutes.

- Preheat oven to 500 degrees. Rub the quail with half the olive oil, then sprinkle all over with salt and pepper. Put them breast side up in a roasting pan just large enough to accommodate them. Combine remaining ingredients and brush about half of this mixture over the birds; put in oven.
- After about 10 minutes of roasting, baste with remaining mixture, then continue to roast until done, about 10 minutes more. Serve birds hot, with pan juices, or warm or at room temperature.

HEAVENLY BAKED QUAIL
Oh my gosh! My brother told me how to make this years ago and asked if I would make it for him. We had cleaned some fresh quail and his wife was out of town. I did and was instantly hooked on this meal. We had this like every night for a week and at least once a week after due to the fact we raised quail on the farm at the time.

- In frying pan heat about 2 inches of oil.
- Cut each quail in half down the back.
- Wrap bacon piece around each half and secure with toothpicks.
- Dredge in flour and fry in the oil until light brown.
- Drain on paper towel,and place in casserole dish,throw in the onion,bell pepper,and seasonings.Mix the soup with the water and pour over the quail.
- Cover and bake at 350°F about one hour or until done.Pierce quail with fork to check if it is tender.If it is,leave cover off for ten minutes then remove from oven.
- Remove the toothpicks.
- Serve over hot rice or mashed potatoes.
- Good with hot buttered biscuits.

- Preheat the oven to 240C degrees /475F degrees .
- Rinse quail, then dry them well with kitchen paper and rub each one inside and out with a little salt.
- Mix the sauce ingredients in a small bowl. Rub each of the quail inside and out with this sauce.
- Put the quails in a small roasting pan and put them into the oven for 5 minutes. Then turn the heat down to 180C degrees /350F degrees and continue to roast the birds for another 20 minutes.
- Turn off the oven and leave them there for another 5 minutes.
- Take them out of the oven and let them rest for another 10 minutes before serving.
- Serve the quails whole or joint into breast and legs.
- Arrange on a warm platter.
