BERRY "PIZZA"

In this dessert, ricotta holds the berries in place while providing a wonderfully creamy texture and slightly sweet flavor.

Steps:

  • Preheat oven to 350 degrees. Place tortillas on a baking sheet and top each with a tablespoon of jam, spreading it almost to the edge. Bake until tortilla is crisp, about 10 minutes. Remove and cool to room temperature.
  • Spoon 1/4 cup of ricotta over each tortilla, spreading it almost to the edge. Divide the berries among the tortillas, making alternating rows of raspberries, blackberries, strawberries, and blueberries. Brush tops with remaining jam. Serve immediately, cutting into wedges like a pizza.

  • Preheat broiler. Arrange zucchini in a single layer on a greased baking sheet. Broil 3-4 in. from heat just until crisp-tender, 1-2 minutes per side., Sprinkle zucchini with salt and pepper; top with sauce, cheese and pepperoni. Broil until cheese is melted, about 1 minute. Sprinkle with basil.

Steps:

  • 1. Preheat oven to 350 degrees F. Coat 12-14 inch pizza pan with non-stick cooking spray. Press cookie dough into prepared pan. Bake 12 minutes, cool completely.
  • 2. In mixing bowl, beat together cream cheese, powdered sugar,almond extract, and 1/4 cup apricot preserves until creamy. Spread on cooled cookie crust and Arrange fruit in design on pizza.
  • 3. In microwave-safe dish, heat remaining 1/4 cup apricot preserves and orange juice, just until melted. Spoon glaze over fruit. Refrigerate until serving. Enjoy!

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and extracts. Combine the flour, baking powder and salt; gradually add to creamed mixture. Cover and refrigerate for 1 hour., On a floured surface, roll dough into a 13-in. circle. Transfer to an ungreased 12-in. pizza pan. Build up edges slightly. , Bake at 350° for 18-22 minutes or until lightly browned. Cool completely., In a large bowl, beat cream cheese and confectioners' sugar until smooth. Spread over crust. Arrange sliced strawberries on top., In a large saucepan, combine the sugar, cornstarch and crushed berries until blended. Bring to a boil; cook and stir for 2 minutes or until thickened. Cool slightly. Spoon over strawberries. Refrigerate until serving.

  • Divide pizza dough ball into 6 sections. Stretch dough to form a rough circle or oblong shape and place on a pizza paddle or piece of parchment paper sprinkled with cornmeal. Brush the dough with a little olive oil and some sea salt flakes. Spread 2 tablespoons or so of the ricotta cheese on the crust then layer with half of the mozzarella cheese.
  • Top with half of the strawberries and half of the raspberries and sprinkle with fresh rosemary leaves.
  • Cook for 10-15 minutes or until cheese is melted and crust is golden. Top with arugula leaves then tear the prosciutto into strips and add to the arugula with the Parmesan cheese ribbons. Sprinkle with more fresh rosemary leaves, fresh mint and drizzle of olive oil. Season with flaked sea salt and red pepper flakes if desired. Serve immediately.
