MASTER BREAD DOUGH
This is a great master recipe to use because you can turn it into many different options. You can bake it as a bread loaf, rolls, or even breadsticks! You can also add extra flavoring as you desire.-Fleischmann's Yeast

- In a large bowl, combine 2-1/2 cups of flour, sugar, undissolved yeast and salt. Heat water, milk, and butter until very warm (120°-130°). Gradually add mixture to dry ingredients; beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. With spoon, stir in enough remaining flour to make a soft dough. Knead on lightly floured surface until smooth and elastic, about 8-10 minutes. Place kneaded dough in a greased bowl, turning to grease top. Cover; let rise in warm, draft-free place until doubled in size, about 30-60 minutes. (With RapidRise Yeast, cover kneaded dough and let rest on floured surface 10 minutes.) Shape, let rise and bake according to options below:, LOAF: (use half of dough): Roll dough into a 12x7-in. rectangle. Beginning at short end, roll up tightly as for jelly roll. Pinch seam and ends to seal. Place, seam side down, in greased 8x4-in. loaf pan. Cover; let rise in warm, draft-free place until doubled in size, about 1 to 1-1/2 hours. Bake at 400° for 30 minutes or until done. Remove from pan; let cool on wire rack. Yield: 1 loaf., ONION ROLLS: (use half of dough): Divide dough into 10 equal pieces; shape into smooth balls. Place in a greased 8-in. round baking pan. Cover; let rise in warm, draft-free place until doubled in size, about 30-60 minutes. Beat 1 egg with 1 tablespoon water; brush over rolls. Sprinkle with 2 tablespoons dried minced onion. Bake at 375° for 25 minutes or until done, covering with foil during the last 5 minutes of baking to prevent excess browning. Remove from pan; let cool on wire rack. Yield: 10 rolls., SOFT HERB BREADSTICKS: (use half of dough): Divide dough into 12 equal pieces; roll each into a 15-in. rope. Twist each rope several times if desired. Place on two greased baking sheets. Cover; let rise in warm, draft-free place until risen slightly, about 10-20 minutes. Lightly beat 1 egg white; brush over breadsticks. Sprinkle with herbs or herb blends such as oregano, dill weed or Italian herb seasoning. Bake at 400° for 15 minutes or until done. Remove from sheets; let cool on wire rack.

BEST BREAD DOUGH
This bread dough is great for dinner rolls, but it's also fantastic for loaf, kolaches and CINNAMON ROLLS! It can be made by hand, or in a 2lb bread machine. (UPDATED!)

- DOUGH BY HAND: Mix water, yeast and sugar. Set aside.
- Mix ALL of the pudding mix with the milk.
- Add melted butter, egg and salt. Mix well. For really soft rolls, don't use the egg; for cinnamon rolls, the egg is a must -- otherwise they flatten out (but they're still tasty!).
- Add yeast mixture. Mix, then knead in flour until dough is smooth.
- Set in a warm place for 1 hour, then punch it down. Let it rise again for another 45 minutes.
- DOUGH IN 2LB BREAD MACHINE: Put the ingredients in the machine in the order listed above. Use the DOUGH setting.
- DO NOT COOK A LOAF OF THIS IN THE BREAD MACHINE! It is a very airy bread, and it will probably ruin your bread machine! (Lesson learned the hard way -- ).
- TO MAKE DINNER ROLLS: Form the dough into 1.5 to 2 inch balls, and place 1 inch apart on a cookie sheet. Bake in 350 degree oven for 15 to 20 minutes until golden on top.
- TO MAKE KOLACHES: Form the dough into 1.5 to 2 inch balls. Put mini-sausage and cheese on top, then pull the dough around and wrap it up as best you can. Place 1 inch apart on a cookie sheet. Bake as for DINNER ROLLS.
- CINNAMON ROLLS: Roll dough to 0.25 inch thick rectangle on a floured surface. Mix 1/2 cup melted butter, 1/3 cup cinnamon and 1 cup sugar; spread evenly (as best you can) over the surface of the dough.
- Roll up tightly, starting from a long side. Slice at 1 to 2 inch intervals. Place slices on a greased cookie sheet, 2 inches apart. (Pour a little melted butter over each one to make the rolls extra moist!).
- Cover and let rise 30 minutes.
- Bake at 350 degrees for 15 - 20 minutes. Remove them as soon as they turn golden. Frost with cream cheese frosting.

DUFF'S BEST BREAD ON EARTH BREAD

- Combine the all-purpose flour, bread flour, sugar, yeast and salt in the bowl of a stand mixer fitted with the dough hook attachment. Add the water to the center of the bowl and mix on low speed to combine. Raise the speed to medium and knead until the dough pulls away from the bowl in a smooth, clean mass, about 10 minutes.
- Lightly flour your workspace, turn the dough out of the bowl and lightly knead for about a minute, then shape into a ball. Lightly oil the inside of a large bowl, add the dough and rub oil over the top. Cover the bowl tightly with plastic wrap, then put in a warm spot, such as the top of the fridge, until it's more than doubled in size, about 45 minutes.
- When the dough is almost ready, preheat the oven to 450 degrees F with a rack in the middle position. Stack two matching baking sheets and place in the oven. Or, if you have a baking stone, use that instead.
- Turn the dough out of the bowl, punch it down and flatten it until it's about 2 1/2 inches thick. Shape the dough into a boule (round loaf). Lightly flour the top, cover lightly with plastic wrap and let rise for another 25 minutes.
- Remove the plastic wrap and score the top of the loaf. Open the oven door all the way and use a baking peel or the floured underside of a baking sheet to slide the loaf onto the hot stacked baking sheets or baking stone, working gently but quickly so as not to deflate the dough. Bake for about 10 minutes, then open the oven door and carefully throw a few handfuls of water at the bottom of the oven to create steam. Close the door quickly and continue to bake until well browned, 12 to 15 minutes more.
- Reduce the heat to 325 degrees F and bake until the loaf is deep golden brown and sounds hollow when you tap it, 15 to 20 minutes more. Transfer the loaf to a wire rack and let cool completely, at least 1 hour. That lets the crumb set. Listen to the loaf crackle as it cools-that's a good sound. Serve at room temperature.

- Preheat the oven to 300 degrees F. Grease an 8-inch square baking dish with the butter.
- Toast the bread cubes on a baking sheet until they start to dry and harden, about 20 minutes. Set aside. Raise the oven temperature to 325 degrees F.
- Whisk together the cream, milk, sugar, vanilla, salt, cinnamon, whole eggs and yolks in a large bowl. Add the bread to the bowl and stir until completely coated. Cover and let soak for about 30 minutes, pushing the bread down occasionally so that all the cubes are soaked. Meanwhile, pour hot water over the raisins, if using, and soak for 10 minutes. Once plumped, drain the raisins, add to the bowl of bread and gently toss.
- Pour the bread mixture into the prepared baking dish and bake until the custard is set and the top is golden brown, about 1 hour and 30 minutes. Let cool slightly before serving. Serve warm, at room temperature or cold.
SIMPLE YEAST BREAD / DOUGH

- Combine 1/2 cup warm water with 2 tablespoons of yeast and in a large mixing bowl and set aside for about 5 minutes.
- Combine the 1 1/4 cups warm water with the butter or oil and add to the yeast mixture after it has expanded.
- Combine the salt and flour and add 2 cups of flour to the yeast / water mixture and mix well.
- Continue adding flour until a soft dough forms and begins to pull away from the sides of the bowl. Turn the soft dough out onto a well floured surface and knead in remaining flour, continuing to knead for about 10 minute until the dough is very soft and pliable.
- Place the dough into a well-greased pan, turning once to coat and allow to rise for about 1 1/2 hours. Dough is ready when doubled in size and indentation remains when pressing a finger into the center.
- Press to deflate and shape the dough as you desire. You can use it to make mini pizzas, hot dog wraps, 2 regular sized pizzas, 2 loafs of bread or cinnamon bread.
- After shaping the dough, allow to rise again for 10-15 minutes before baking. Bake in a very hot oven (450-500 F) for 12-15 minutes. Check for desired golden color / doneness. Ovens vary in cooking time, so check the dough at about 10 minute and then adjust the cooking time / temperature according to your oven.

- Add ingredients to machine in the order listed.
- Set to "Dough" mode and let the machine run through its cycle.
- Once completed, place in greased pan to rise about 20-30 min, and split in half.
- If you aren't going to use the dough right away, fear not. Simply divide the dough and place in ziplock bags, then stack flat to be used as needed.
- When the special day arrives, slap it on a cornmeal/floured surface, and roll flat, If you're fortunate enough to have a wife who doesn't mind you twirling it in her kitchen (like me -- as long as I clean up my own messes) -- have fun with it before going for the big-bake!
- Add light layer of sauce and pre-bake your crust at 400 degrees for 5-7 minutes.
- Believe me--you'll want to follow this step (thank me later).
- Remove from oven and add toppings of your choice.
- Bake in oven at 400F degrees until done(approx 20 minutes, depending upon topping thickness).

- To make the poolish, mix 100 g bread flour, 25 g whole wheat flour, ¼ tsp. active dry yeast, and 125 g warm water in a medium bowl. Cover with a kitchen towel and let rest at room temperature 12 hours. (The poolish will double or triple in size, so make sure your bowl is large enough to handle the growth. The poolish should have large and small bubbles all across the surface when it is ready.)
- To make the master dough, transfer 100 g poolish to the bowl of a stand mixer fitted with the dough hook and add 300 g water. Mix on low speed to break up (it won’t be fully combined). Add 20 g sugar, 15 g kosher salt, 15 g extra-virgin olive oil, remaining 500 g bread flour, and remaining ¼ tsp. active dry yeast. Mix on low speed until incorporated, about 1 minute. Increase speed to medium and mix until dough comes together and is smooth, about 2 minutes. Increase speed to high and mix until dough no longer sticks to the sides of the bowl, about 3 minutes. (If you don’t have a stand mixer, you can still make this dough using a little elbow grease. Mix with a sturdy wooden spoon in a large bowl, then knead, starting in bowl and turning out onto a lightly floured surface once dough has come together, until smooth, 6–8 minutes.)
- Coat a clean medium bowl with more extra-virgin olive oil, place dough in bowl, and turn to coat. Cover with a kitchen towel and let sit at room temperature 1 hour (dough will be slightly puffy).
- Cover with plastic wrap or a silicone lid and chill until dough doubles or triples in size (you should see a few wide bubbles on the surface), 8–10 hours.
