BHATURA, INDIAN FRIED BREAD

Steps:
- 1. Take a mixing bowl and mix both flours.
- 2. Add yogurt, baking soda, salt, 1 tbsp oil, and sugar.
- 3. Knead the dough using lukewarm water.
- 4. After kneading the dough apply 1 tbsp of oil.
- 5. Cover dough with wet towel and keep in warm place for 2 hours.
- 6. Divide them into 16 balls. Cover it with cloth and let them rest for 20 minutes.
- 7. Use a rolling pin and roll the dough into 5 inch diskettes.
- 8. Heat oil in pan for deep frying. Wait till oil gets hot.
- 9. Deep fry the bhatura and cook on both sides for one minute.
- 10. Remove the bhatura and place it on towel paper. This will help removing excess oil.
- Serve hot with Punjabi Cholle and Yogurt.

- Whisk together the all purpose flour, semolina, salt, black pepper, and baking powder in a mixing bowl.
- Add in the yogurt and olive oil and mix together with your hands until a shaggy dough forms. Slowly add in lukewarm water and knead until the dough is smooth, about 4-7 minutes. Cover and rest the dough for an hour.
- After resting the dough, prep a smooth surface with a tiny bit of olive oil. Transfer the dough to the surface and knead it for another two minutes. Measure out 8 equal sized balls. Roll each piece of dough into circles in between your hands.
- In a deep pan for frying, heat a neutral oil for deep frying. Work with one dough ball at a time. Roll the dough out into an oval as large as possible without tearing it. Carefully transfer the dough to the oil, slipping it in from the edge of the pan. With a slotted spoon, gently hold the dough under the oil until it begins to puff. Fry until golden, about 1 minute total, and flip on the other side. Gently push the bhatura under the oil again for about 10 seconds and then fry until golden brown. Transfer the bhatura to a plate lined with paper towels. Serve immediately.

- Sift the dry ingredients and add oil and yogurt. Knead to a firm dough, adding water as required and cover with a damp cloth. Leave to rest for 1 hour.
- Remove the damp cloth and knead for a couple of minutes again. You'll find that the dough is quite pliable now. Divide into equal pieces and make balls out of the dough.
- Heat oil in a karahi (wok). Slide in a disc gently into the oil and wait a couple of seconds. Then, press on it with the back of a slotted spoon. The disc will puff up and rise to the surface. Turn over and let it fry for a few seconds before removing it from the oil onto some absorbent kitchen paper. Repeat with the rest of the discs.
