JUMPIN' ESPRESSO BEAN CHILI

Jumpin' Espresso Bean Chili image

Steps:

  • In a Dutch oven, saute the onions in oil until tender. Add the brown sugar, chili powder, cumin, coffee granules, cocoa and salt; cook and stir for 1 minute. , Stir in tomatoes and beans. Bring to a boil. Reduce heat; cover and simmer for 30 minutes to allow flavors to blend. Serve with sour cream, onions, cheese and jalapeno slices if desired.

3 medium onions, chopped
2 tablespoons olive oil
2 tablespoons brown sugar
2 tablespoons chili powder
2 tablespoons ground cumin
1 tablespoon instant coffee granules
1 tablespoon baking cocoa
3/4 teaspoon salt
2 cans (14-1/2 ounces each) no-salt-added diced tomatoes
1 can (15 ounces) black beans, rinsed and drained
1 can (15 ounces) kidney beans, rinsed and drained
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
Optional toppings: Sour cream, thinly sliced green onions, shredded cheddar cheese and pickled jalapeno slices

BLACK BEAN CHILI

A chili that is best when prepared with fresh vegetables, but still delicious with canned or frozen. Serve by itself or over rice.

Black Bean Chili image

Steps:

  • Heat oil in a large saucepan over medium-high heat. Saute the onion, red bell peppers, jalapeno, mushrooms, tomatoes and corn for 10 minutes or until the onions are translucent. Season with black pepper, cumin, and chili powder. Stir in the black beans, chicken or vegetable broth, and salt. Bring to a boil.
  • Reduce heat to medium low. Remove 1 1/2 cups of the soup to food processor or blender; puree and stir the bean mixture back into the soup. Serve hot by itself or over rice.

Steps:

  • In a large skillet, cook and crumble turkey with onion over medium-high heat until no longer pink, 5-7 minutes. Transfer to a 4-qt. slow cooker., Stir in all remaining ingredients except toppings. Cook, covered, on low until flavors are blended, 6-8 hours. Top as desired.

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add onions and sauté until tender, about 8 minutes. Mix in espresso powder, 1/4 cup chili powder, cumin, and oregano. Cook several minutes. Add to crockpot. Brown beef in olive oil with garlic. Add to crockpot. Add everything except beans to crockpot and let cook on high for a few hours. Reduce to low and add beans. Season with salt to taste. Serve with Monterey Jack, green onions, sour cream .....
