TANGY CHERRY CHICKEN

Tangy Cherry Chicken image

Steps:

  • Preheat a large nonstick skillet over medium-high heat with the 3 turns of the pan of extra-virgin olive oil, about 3 tablespoons. Season chicken liberally with half of the thyme, salt and pepper and add to the hot skillet. Cook the chicken for 5 to 6 minutes on each side. Remove the chicken from the pan to a plate and cover with foil to keep warm.
  • In the bottom of a medium sauce pot, heat and toast pine nuts over moderate heat and remove. Add 2 cups stock and 1 tablespoon butter to the pot and bring to a boil.
  • Return the chicken skillet to the burner over medium-high heat, add 1 turn of the pan of extra-virgin olive oil, add the onion, celery, crushed red pepper flakes, nutmeg, salt and pepper, cook for 3 to 4 minutes or until the celery and onions are tender. Add the white wine, and cook until the pan is almost dry, 1 minute. Add the 2 cups boiling chicken stock, and dried cherries and continue to cook for about 5 to 6 minutes or until there is only about 1/2 cup of liquid left in the pan. Turn the heat off the under the pan. Add the remaining 3 tablespoons cold butter in small pieces and whisk until it has completely melted.
  • In a medium saucepan bring the remaining 1 cup chicken stock to a boil, add couscous, allspice, cinnamon and a little salt. Cover pot and remove from heat. Let stand 5 minutes. Drizzle honey over the couscous and add the pine nuts, scallions and parsley. Toss and fluff with a fork to combine.
  • Serve the chicken whole or sliced with cherry sauce poured over it and couscous alongside. Dark seared greens or simple salad complete the meal.

Steps:

  • Combine the cherries, vinegar, mustard, fennel seed, salt and garlic in a blender. Puree until smooth. Place the chicken pieces in a resealable plastic bag and pour the marinade over the chicken. Seal the bag and toss to coat. Marinate in the refrigerator for 2 hours.
  • Remove the chicken from the refrigerator 30 minutes before grilling. Preheat a grill to 450 degrees F or medium-high heat with indirect heat on one side.
  • Remove the chicken pieces from the marinade and place on a baking sheet; reserve the marinade. Drizzle with the olive oil. Place the chicken on the grill over direct heat and cook undisturbed for 4 minutes. Flip the chicken, move to indirect heat and baste with the marinade. Cover the grill and roast until the chicken is cooked through, about 30 minutes. Remove to a platter and sprinkle with the fennel pollen.

  • Heat the oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then coat with flour. Fry in the hot oil until browned, turning as needed. Reduce heat to medium, cover and cook for about 25 minutes or until meat is tender and juices run clear.
  • Remove the chicken from the pan, and pour off all but 1/4 cup of the drippings. Return to medium heat and stir in the cherries, reserving some of the cherry liquid for later. Steps:

  • Marinate chicken in Italian dressing 2-4 hours and drain, reserving the marinade.
  • Place chicken in a shallow baking pan, skin side up and bake for 1 hour and 15 minutes at 350 degrees, basting occasionally early on, until brown.

Blackberry and Bing Cherry Preserves image

Steps:

  • Rinse blackberries and cherries.
  • Press blackberries through a sieve or a food mill to remove the seeds.
  • Stem cherries and remove pits.
  • Coarsely chop cherries in a food processor.
  • Combine blackberries, chopped cherries, pectin, lemon juice and butter in large stockpot.
  • Bring to a boil and cook 1 minute, stirring constantly.
  • Add sugar all at once and return to a boil.
  • Bring to a boil that cannot be stirred down and boil 1 minute.
  • Remove from heat and add almond extract.
  • Let sit for 5 minutes stirring every 30 seconds.
  • Ladle into sterilized jars using the USDA guidelines for water bath canning leaving a 1/4" headspace.
  • Wipe rims and place lids and screw rings on jars.
  • Place jars in water bath canner and make sure you have at least 1-2 inches of water covering the jars.
  • Place lid on pot and bring to a hard rolling boil (do not remove lid).
  • Process in boiling water bath for 10 minutes.
  • Turn off heat, remove lid from pot and let sit for 5 minutes.
  • Remove jars from pot and set aside to seal and cool.

  • Combine the cherries and sugar in a large, heavy, shallow, non-reactive saucepan.
  • Set aside to plump, several hours or as long as overnight.
  • Add the water to the cherries and bring to a boil.
  • Cook for 5 minutes; then add the lemon juice and boil rather fast until the juice has thickened like jelly and a candy thermometer reads 221*F.
  • Remove pan from heat and allow the preserves to sit overnight, covered; refrigerate them, if you'd rather.
  • The next day, reheat the preserves to the boiling point and spoon them into hot, sterilized canning jars and seal.

Steps:

  • Combine water, kosher salt, and sugar in a saucepan over low heat; cook until sugar and salt dissolve, 4 to 5 minutes. Set aside to cool to room temperature.
  • Score the skin side of each piece of chicken 2 to 3 times, about 1/8 inch deep. Place chicken pieces in a large bowl or lidded container.
  • Puree cherry tomatoes, habanero peppers, garlic, and allspice with the salt and sugar mixture in a blender until smooth.
  • Pour tomato brine over chicken pieces, making sure all pieces are covered. Refrigerate 4 to 6 hours.
