Black Rock Chiller Recipes
BLACK ROCK CHILLER
Sother Teague, a bartender at Amor y Amargo in the East Village, was asked by some journalists journeying to the Burning Man gathering in the Black Rock Desert in Nevada to come up with a cocktail that would travel and didn't need chilling. This was his response. The big, sweet menthol hit of the amaro Branca Menta - while marrying wonderfully with the herbal tequila and bitter Suze - also provides the illusion of coolness in a drink that has none.

- In a rocks glass, combine all ingredients. Stir briefly.
CLASSIC NEGRONI
Nostrana, an Italian restaurant in Portland, Ore., has offered a Negroni of the Month since 2010, all original creations, some of them quite odd (squid ink Negroni, anyone?). But the house Negroni follows classic lines, using equal parts gin, vermouth and Campari.

- Combine all liquid ingredients with ice in a mixing glass and stir until chilled, about 30 seconds. Strain into a rocks glass filled with ice. Squeeze orange twist over drink and slip into glass.
NEGRONI AND THE GOAT
The chef Stephanie Izard created this drink as the June 2014 Negroni of the Month for the restaurant Nostrana, in Portland, Ore. The name is a reference to the Chicago restaurant Girl & the Goat, where Ms. Izard is the executive chef. The substitution of Aperol for Campari makes for a gentler drink, while the addition of Averna, a Sicilian amaro, lends a sturdy bottom note.
