Steps:
- Beat cream cheese and sour cream until well blended.
- Stir in Monterey Jack cheese, olives, onion, salt, and garlic powder.
- Cover and refrigerate for 2 hours.
- Process beans in a food processor until smooth.
- Spread each tortilla with a thin layer of beans.
- Spread layer of cream cheese mixture over beans.
- Roll up tightly, wrap in plastic wrap and refrigerate until well chilled.
- Cut into 3/4 inch slices (on a bias?).
- Serve with salsa.
BLACK BEAN PINWHEELS
This a great make ahead appetizer. Serve with Guacamole and/or Salsa and sour cream. Makes about 60 pieces, so its a great crowd pleaser.

Steps:
- In a bowl, mash 1/2 cup of the beans.
- Stir in the remaining 1//4 cup of the beans, cream cheese, and jalapenos.
- Spread on tortillas and sprinkle with cheddar cheese, red pepper, and onions.
- Roll up tightly and wrap in plastic wrap.
- Chill for 2 to 8 hours.
- To serve, remove plastic wrap, Slice 1/2 to 3/4 inch thick.
- Place cut side up on serving platter.

VEGGIE PINWHEELS
Steps:
- Slice the avocado lengthwise and remove the pit. Use a spoon to scoop the avocado into a small bowl, and then use a fork to mash the avocado. Rinse the lemon and cut in half, removing the seeds. Squeeze a little lemon juice onto the avocado and stir. Grate the radishes, carrot and turnip, and add to the avocado.
- Rinse the herbs and pluck the leaves. Tear the leaves into smaller pieces, and stir into the mashed avocado.
- Warm 1 tortilla in a microwave 30 seconds, or longer if necessary, and place on a cutting board. Spread one-third of the mashed avocado over the center of the tortilla.
- Layer with one-third of the greens and top with one-third of the cheese. Squeeze some more lemon juice over the filling.
- Season lightly with 1/2 teaspoon of the Hidden Valley Ranch(r) Seasoning Mix. Roll the tortilla tightly into a log shape. Use a sharp knife to slice the wrap into 4 'pinwheels'. Repeat with the remaining tortillas and avocado mixture.
BEAN AND CHEESE PINWHEELS
Whether served with salsa or eaten plain, these tasty treats are enjoyable. Preparation time does not include the 30 minutes or so for the wrapped tortillas to chill.

- In a small bowl, blend together the refried beans & green onion, then spread a layer of this bean mixture on each tortilla.
- In another bowl, combine the cream cheese, Colby Jack cheese, sour cream & onion salt, mixing together as well as possible with a fork. Spread a layer of this cheese mixture over the bean mixture.
- Roll each tortilla up tightly in plastic wrap, & refrigerate at least 30 minutes before cutting the tortillas into 1/2-inch slices.

- For the base spread and tortillas: Mix together the cream cheese and pesto until well combined. Lay out the spinach, whole wheat and jalapeno-Cheddar tortillas and divide the cream cheese mixture among them. Using a spoon or offset spatula, spread the mixture all the way to the edges of each tortilla.
- For the veggie pinwheels: Evenly distribute the spinach over the top of the base spread on the spinach tortillas. Arrange the artichokes, green olives and sun-dried tomatoes over the spinach. Roll up the tortillas tightly and individually wrap in plastic. Set aside.
- For the meaty pinwheels: Shingle the cheese, pepperoni, salami and capicola onto the base spread on the whole wheat tortillas, slightly favoring one side. Roll up the tortillas tightly and individually wrap in plastic. Set aside.
- For the spicy pinwheels: Divide the pepper jack between the jalapeno-Cheddar tortillas topped with the base spread. Divide the arugula, sliced peppers and chopped cherry peppers between the tortillas. Roll up the tortillas tightly and individually wrap in plastic. Refrigerate the rolled tortillas for at least 2 hours and up to 12 hours.
- Unwrap and slice each tortilla into 1-inch segments/pinwheels. Arrange on a platter and serve.
BLACK BEAN PINWHEELS

- Preheat oven to 350 degrees Fahrenheit.
- Spray cookie sheet with cooking spray.
- Mix bisquick and milk in small bowl until a dough ball forms.
- Roll dough out on a floured bowl or floured wax paper to 12 inch square.
- Mix melted butter, mustard, ketchup and onion.
- Spread on dough.
- Crumble meat evenly over dough.
- Roll up like a jelly roll.

- In a saucepan over medium heat, melt 5 1/2 TBS butter, then add 1 cup sugar and water, stirring until sugar dissolves.
- Set aside.
- For dough; combine flour, salt and baking powder.
- Cut in butter until mixture resembles fine crumbs.
- Add milk and stir with a fork until dough leaves sides of bowl.
- Turn out onto a floured board and knead 3 to 4 times.
- Roll out to a 11 by 9 inch rectangle, 1/4 inch thick.
- Spread berries over dough, sprinkle with cinnamon and roll up jelly roll style.
- Cut into 1 1/4 inch thick slices.
- Melt remaining butter and pour into a 10 inch round or oval baking dish.
- Place dough slices in dish and drizzle syrup carefully over them.
- Bake in a 350*F oven for 1 hour.
- Fifteen minutes before removing from oven, sprinkle 2 TBS sugar over top.
- Serve warm or at room temperature.
