BLACKBERRY SLUSHIE

This is a super quick and easy dessert on a hot day or if I don't have much time. I always freeze blackberries when they are in season so I can make this slushie.

Steps:

  • Combine blackberries and orange juice in a blender; blend until smooth.

Gin Slush image

Steps:

  • In a saucepan, combine water and sugar. Bring to a boil and let boil for 15 minutes. Remove from heat and allow to cool.
  • Stir in the orange juice concentrate, lemonade concentrate and gin. Pour into a plastic container and freeze overnight.
  • To serve, scoop 1/2 cup slush into a glass and top with lemon-lime soda.

Steps:

  • Tip the blackberries and sugar into a 1.5-litre sterilised jar. Pour over the gin, seal the jar and swirl around to dissolve the sugar. Store in a cool, dark place and turn the jar once a day for the first week.
  • After two-three weeks, strain the gin through a sieve. Pour the gin into bottles, and label. The gin will keep its colour for a few months and will be drinkable for up to a year. Use the infused blackberries in a cocktail like a bramble, or in a trifle.
