BERRY CORDIAL

This is an easy way to make cordial and it's good for gifts! Other berries such as raspberries, strawberries or blueberries may be used in place of blackberries, and rum or brandy may be used in place of the vodka.

Berry Cordial image

Steps:

  • Pour the sugar into a 1 quart jar. Fill the remaining space with berries, but do not pack down. Fill the jar with vodka so that the berries are completely covered. Seal the jar. Let the jar stand for 2 months, shaking the jar every week. The sugar should dissolve, and the vodka will become colored.
  • Strain the liquid through a metal sieve, and then through a coffee filter to remove the fruit. Pour into pretty bottles. Drink as a cordial, or use it to flavor lemonade or iced tea.

Steps:

  • 1. Combine berries with 2 c. brandy, steep for 1 week. strain through jelly bag. Add remaining brandy and honey, bottle. (The longer you can let this sit, the better. You might want to have several thicknesses of cheesecloth and some disposable coffee filters around to strain this, and wear rubber gloves -- blackberries will stain your hands, but the resulting beverage is a favorite in our home, poured into a brandy snifter for after dinner enjoyment with some Earl Grey tea. It's also the best thing for an upset stomach.)

2 c fresh blackberries
3 c brandy
1 1/2 c honey

BLACKBERRY LIQUEUR

Some homemade fruit liqueurs make you wait for weeks or even months, but not this one. This spiced blackberry liqueur, also called creme de mure, is ready in 20 minutes.

Steps:

  • Combine blackberry juice, sugar, cloves, cinnamon stick, and lemon zest in a large saucepan. Slowly bring to a boil, stirring until sugar dissolves, about 5 minutes. Remove from heat and allow to cool.
  • Strain to remove spices and add rum.
  • Pour liqueur into a sterilized bottle and seal. Store in a cool, dark place.

BLACKBERRY CORDIAL

After trying lemoncello, and learning how simple it is to make, in the middle of berry season here, this was inevitable. Blackberries, vodka and simple syrup combined to produce an absolutely delicious nectar. I used what I had on hand, which was 80 proof vodka, and it does freeze. For this reason I suggest using 100 proof vodka. Other than that nothing could be simpler.

Steps:

  • Fill quart jars with blackberries. Pour vodka in to cover berries. Put on the lids and put jars in a cool, dark place and forget about them for 2 to 4 weeks. Then, pour contents through a strainer and reserve liquid. In a heavy saucepan combine sugar and water and bring to boil, long enough to dissolve sugar. When this syrup cools a bit, add to blackberry liquid and stir. Pour liquid into container of choice and put in freezer. When chilled, it's good as is or, as we tried it, in a juice glass with ginger ale. It's indescribably good.

1/2 gallon fresh clean blackberry
1 (750 ml) bottle 100 proof vodka
2 cups water

THE BRAMBLE

The bramble, invented in 1984 by Dick Bradsell, the patriarch of England's cocktail uptick, at Fred's Club in London's SoHo, is essentially a short gin sour with a drizzle of crème de mûre, a French blackberry liqueur, over the top. Served on crushed ice, it gets a quick garnish of a lemon slice and, to be true to Bradsell's original, two blackberries. In the winter there's nothing to this, and the drink is great as is. But something as elemental as the bramble invites toying, and with summer's berries arriving, you can up the ante in one of many.

Steps:

  • In a cocktail shaker filled with ice, shake together the first three ingredients and strain into a rocks glass filled with crushed ice (see below), mounded high. Drizzle crème de mûre over the top and garnish with a slice of lemon, two blackberries and a short straw.
  • And, to make simple syrup, stir together equal measures of hot water and sugar, cool to room temperature and store in refrigerator until ready to use.

2 ounces gin
1 ounce fresh lemon juice
1/2 ounce simple syrup (see note)
1/2 ounce crème de mûre.
