Steps:

  • In a large skillet, heat oil over high heat.
  • Saute the onion until translucent.
  • Add stew meat and cook on high heat until meat is browned on all sides (3-5 minutes). Pour 2 cups water, soy sauce, and worcestershire sauce into the skillet.
  • Stir in garlic powder, salt and pepper.
  • Bring to boil and reduce heat.
  • Cover and simmer for 1 1/2 to 2 hours.
  • Then combine the gravy mix with 1 cup of water, mix thoroughly and stir into the meat. Bring to boil, stirring frequently until it slightly thickens.
  • Serve over egg noodles.

  • In a 3-qt. slow cooker, combine the beef, carrots, celery, onion, soup and wine. Cover and cook on low for 6-7 hours or until meat is tender., Combine cornstarch and water until smooth; gradually stir into cooking juices. Cover and cook on high for 15 minutes or until thickened. Serve with noodles.

Steps:

  • Dice steak and put in crockpot. You can sear it first for texture if you like.
  • Caramelize onion and garlic in butter. Add to crock pot.
  • Cover with beef broth and let cook on high for 2 hours. Add spice mix and carrots, turnips (or any other roots you prefer) and cranberries and turn down to low for 2 more hours.
  • Meanwhile dice and cook the yams. Once soft enough to mash, drain and mash. Let cool and then add the grated cheese, mixing well.
  • Scoop out about a cup of the broth and add the pumpkin to it. Puree in blender or mix with hand mixer. Add it back in to the meat and mix well.
  • Dish meat mix into pie pans and top with yams. Bake at 350 until yams start to brown, about 40 minutes.
  • If you are freezing this, don't bake it. Just cover it and freeze it.

I have used tenderloin in the past, but have found that a good quality top sirloin works very well and is less expensive. Bernaise sauce is a good alternative if you don't like blue cheese.

  • Season sirloin with blackened seasoning to coat on all sides.
  • Heat oil in a cast-iron skillet on an outdoor grill until the oil is smoking. Cook steak bites in hot oil in small batches, reheating oil between batches, until slightly crusty, 1 to 2 minutes per side.
  • Stir cream cheese and evaporated milk together in a saucepan over low heat to melt the cream cheese. Whisk blue cheese crumbles, garlic powder, white pepper, and cayenne pepper into the cream cheese mixture; simmer, stirring frequently, until the blue cheese melts into a smooth sauce, 2 to 3 minutes.   • Set the steak butter-side down into the hot skillet. You may want to cook your steaks one at a time if your cast iron skillet isn't very large. You don't want steaks to touch while they are blackening.
