Steps:

  • Combine the paprika, garlic powder, onion powder, thyme, black pepper, cayenne pepper, basil, and oregano in a bowl until evenly mixed. Store in an airtight container in a cool, dry place.

BLACKENED GRILLED FLANK STEAK

I love flank steak because it's usually one of the cheapest cuts of beef, but it doesn't taste cheap! This is a great way to cook it for serving alongside grilled corn or other veggies. Or, you can serve it in tortillas as fajita tacos, which is what we usually do. From Cooking Light.

Blackened Grilled Flank Steak image

Steps:

  • Combine first 7 ingredients; rub spice mixture over both sides of steak. Cover and refrigerate 3 hours.
  • Prepare grill.
  • Place steak on grill rack coated with cooking spray; grill 5 minutes on each side or until desired degree of doneness.
  • Let stand 10 minutes. Cut steak diagonally across the grain into thin slices.

1/2 teaspoon ground red pepper (leave out if you don't want it as spicy)

BLACKENED TUNA STEAKS

My favorite way to eat tuna, but the spice mix works well with blackened chicken or other types of firm fish.

Steps:

  • Preheat oven to 400 deg.
  • Mix first 7 ingredients in small bowl.
  • Place steaks on baking sheet, brush on both sides with 1 T. oil. Sprinkle top of each with seasoning.
  • Heat heavy large skillet over high heat until very hot. Add remaining 1 T. oil; swirl to coat.
  • Place steaks seasoning side down in skillet. Cook until very brown on bottom (about 1 min) return steaks, browned side up to baking sheet.
  • Place in oven; bake until done (about 8 min).

1 teaspoon salt
1 teaspoon fresh thyme (minced)
1/2 teaspoon dried oregano
1/2 teaspoon cayenne pepper
1/2 teaspoon sweet paprika
1/2 teaspoon ground black pepper
1/2 teaspoon fennel seed (crushed)
4 tuna steaks

BLACKENED STEAK SALAD

This is one of the most requested items on the lunch menu at the Chicago Chop House. Would advise cooking on the grill if you can, as it can be smoky cooking indoors. I sometimes make double the spice, store and use in other recipes, such as chicken, etc...You can use New York Strips, Rib-eyes or whatever steak is on sale at the time. Steps:

  • For spice mixture:.
  • Mix all ingredients in small bowl. (Can be made 1 week ahead. Store airtight at room temperature.)
  • For salad:.
  • Whisk oil, vinegar and mustard in large bowl to blend. Season with salt and pepper. Add greens, bell pepper and onion and toss to coat. Divide salad between plates.
  • For steaks:.
  • Brush the steaks with EVOO infused with chopped garlic all over before dipping in the spice mix. Spread spice mixture on plate. Coat both sides of steaks with spice mixture. Dip both sides of steaks into melted butter. Heat heavy large skillet over high heat until very hot. Add steaks and sliced mushrooms, cook until desired doneness, about 2 minutes per side for medium-rare. (Or grill the steaks instead and sautee the shrooms in a pan.) The shrooms may need more time, use your judgement. Transfer meat to cutting board; let stand 2 minutes. Thinly slice steaks crosswise.Arrange slices atop salads.
  • Sprinkle with cheese. Garnish with tomato and avocado and serve.

  • Set the steak butter-side down into the hot skillet. You may want to cook your steaks one at a time if your cast iron skillet isn't very large. You don't want steaks to touch while they are blackening.
  • Let the steak cook on this side for four minutes. The butter may catch on fire, and that is ok. Don't adjust the cooking temperature.
  • Flip your steaks over. Cook them for three minutes on the second side. You don't need to apply more butter.
  • Set the steak on the cooler side of the grill when you have blackened the surface. Keep them on this side until you have reached your desired doneness.
  • Place the steaks on a plate to rest. Cover the plate with tin foil. Turn off your grill.
