- In a medium bowl, stir together the cream cheese, blue cheese, Cheddar cheese, onion and Worcestershire sauce. Transfer to a separate bowl that has been lined with plastic wrap. Cover and refrigerate overnight.
- The next day, gather the cream cheese mixture into a ball. Spread the walnuts out on a dinner plate. Roll the cheese ball in nuts until coated. Refrigerate or serve immediately.

- Combine cheese, butter, Tabasco and onion in food processor. Process until smooth.
- Form into walnut size balls. Roll in almonds.
- Chill, covered in refrigerator.
- Serve on a cheese board with crackers and rye bread triangles with sliced cherry tomatoes or radishes.

- Preheat oven to 350 degrees F (175 degrees C). Line a jelly roll pan with aluminum foil.
- Mix ground beef, bread crumbs, eggs, blue cheese, onion, pepper, and salt together in a bowl; shape into 22 meatballs and arrange onto prepared pan.
- Bake meatballs until they are very firm, hot, and grey in the center, about 30 minutes. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

- Combine cream cheese, butter, salt, pepper, cayenne, roasted red peppers, corn, and blue cheese in a mixing bowl. Stir together until evenly and thoroughly combined. Cover with plastic wrap and refrigerate until completely chilled, about 1 hour.
- Use a sorbet scoop or spoon to form tablespoon-sized balls of cheese mixture; place on a lined sheet pan. Cover and refrigerate until firm, about 1 hour. A perfect shape doesn't matter at this point since these will be rolled in the coatings to complete the process.
- Transfer chilled cheese balls into the coatings of your choice, such as almonds, chives, and bacon, and roll around to cover. Once coated, roll each briefly in your hands to achieve the final ball shape. Transfer to a plate or pan and keep chilled in the refrigerator until ready to serve.

- 1. Mash the blue cheese with a fork until smooth.
- 2. Add the butter, Tabasco, and onion. Blend well.
- 3. Form into walnut-sized balls.
- 4. Roll the balls in the chopped almonds.
- 5. The cheese mixture will be a bit soft and sticky, but you should be able to perfect the shape of the balls once they have almonds on them.
- 6. Mound the balls in a pretty bowl, cover, and chill.
