- Prepare barbecue (high heat), leaving opposite side unlit if gas grill or without coals if charcoal grill. Mix breadcrumbs and olive oil in small bowl, mashing to coat. Cut top 1/4 from each tomato. Sprinkle tomatoes with salt and pepper. Top each with 1 tablespoon blue cheese. Sprinkle with breadcrumb mixture.
- Arrange tomatoes (topping side up) on unlit side of grill. Cover grill and cook tomatoes until slightly soft and cheese melts, about 13 minutes. Serve immediately.

- Cut off tomato tops to make caps.
- Scoop out pulp from caps and bottoms.
- Beat cream cheese, blue cheese and sour cream in bowl until well blended.
- Add celery onion and nuts; mix well.
- Spoon or pipe into tomato shells, mounding slightly.
- Replace tomato caps; secure with toothpicks.
- Chill in refrigertor.
- Garnish with parsley, if desired.

CHERRY TOMATOES WITH BUTTERMILK BLUE CHEESE DRESSING

- To prepare the dressing, place the blue cheese, buttermilk, and olive oil in a medium bowl and stir together with a fork, mashing a little to break up the cheese. Season with the lemon juice, salt, pepper, and chives. Set aside.
- Wash the tomatoes, and pat dry with a paper towel. Slice each tomato in half lengthwise and season with a pinch of salt. Add the tomatoes to the dressing mixture and toss to combine then garnish with freshly ground pepper, to taste.
BLUE-CHEESE-STUFFED FILLETS

- In a food processor, pulse butter until whipped, and add salt and cheese. Pulse again just until incorporated. Dollop the compound butter towards 1 side of a piece of natural parchment paper or plastic wrap. Roll into a log, twisting opposite ways on both ends to create a tightly wrapped log of butter. Refrigerate for at least 1 hour to set. (Can be stored up to 1 week in the refrigerator and up to 1 month in the freezer.) This could be made into 2 logs, as you will only need half this recipe for the steaks.
- Preheat oven to 400 degrees F.
- Once butter log is set, slice 1/2 the whole log into 1/4-inch disks. Cut a slit in the side of each fillet, and stuff with a butter disk. Tie each fillet with kitchen twine to keep it shape and sprinkle pepper each side.
- Add the olive oil to a large oven-proof skillet over medium-high heat. Once hot, sear each fillet until brown on both sides, about 3 to 5 minutes per side. Move skillet into the preheated oven to cook to desired doneness. Put another disk of the compound butter on top of each fillet just about 3 minutes before removing from oven, to just begin to melt but not melted completely. Remove from the oven and place on serving plates. Eat and enjoy!

- Chop scooped out tomato pulp; set aside.
- In a medium bowl, combine breadcrumbs, butter, basil, salt and pepper.
- Stir in cheese and chopped tomato pulp.
- Fill tomato shells with breadcrumb mixture.
- Wrap each stuffed half in foil.
- Place on grill, stuffed side up.
- Cook 10 to 15 minutes or until cheese melts.

- Cut stems off tomatoes and cut each tomato into 2 think slices (in half).
- Put on broiler rack.
- Combine sugar, basil, salt and pepper and sprinkle little of mixture on each tomato slice.
- Add bread crumbs to melted butter and toss lightly with a fork.
- Add blue cheese and toss again lightly.

BLUE CHEESE STUFFED CHICKEN BREASTS
Yet another recipe from the local paper that I want to try ... some day. I did try this recently and we all really liked it. Next time I think I'll place a small amount of blue cheese on top of the chicken when it comes out of the oven and is served. The cheese/butter mixture melts during cooking and even though the flavor is wonderful, everyone said more cheese on top would be nice. Also, I think the little bit of sauce that there is, would be nice thickened and spooned over the chicken too. Let me know what you think.

- Preheat oven to 425.
- Combine 1 tablespoons butter, thyme, and blue cheese in small bowl until blended. Season with salt & pepper and set aside.
- Cut a horizontal line in the thickest side of each chicken breast to form a pocket, but not cutting all the way through.
- Stuff blue cheese mixture into pocket with small spoon.
