Blueberry Banana Cobbler image

Steps:

  • Combine almonds, coconut and cinnamon for topping. Set aside.
  • In a medium microwave proof bowl, break or slice banana into 1/2 inch pieces. Add blueberries, raisins, vanilla and cider vinegar and mix well.
  • Add oats and mix well.
  • Microwave for 2 minutes. Mix.
  • Sprinkle with topping mixture and microwave for 1 minute. Serve warm.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Beat butter in a large bowl until nice and creamy. Add sugar and mix until smooth. Add eggs one at a time, mixing until blended. Mix in bananas and vanilla extract.
  • Sift flour, baking soda, and salt together in another bowl. Mix into the banana mixture and fold in blueberries. Pour into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Remove from the oven and let sit in the pan for 10 minutes before turning out onto a plate.

Steps:

  • In a large bowl, whisk eggs with sugar and set aside.
  • In saucepan, heat cream and milk together until bubbles form around the edge, then whisk into egg mixture.
