BIG PAPA'S HOMEMADE BEEF STEW
This is my absolute favorite beef stew. I spent the better part of two years changing and altering ingredients until it was perfect. Hope you enjoy; everyone I've fed it to does!

Steps:
- Heat vegetable oil in a large skillet over high heat; sear beef until browned on all sides, about 5 minutes. Transfer beef and oil to a large pot.
- Mix water, carrots, onion, celery, Worcestershire sauce, salt, sugar, pepper, paprika, garlic, bay leaves, and allspice with beef; cover pot and simmer over low heat for 1 1/2 hours. Add potatoes to stew, cover pot, and simmer until potatoes are tender, about 40 minutes more.

GRANDMA'S HOMEMADE BEEF STEW
Just like grandma used to make. Very little work goes into this homemade beef stew but it was always made with love. Serve with saltine crackers or yeast rolls.

Steps:
- Place stew meat, water, onion, salt, and pepper in a large stockpot. Cook over medium heat until meat is fork-tender, about 45 minutes. Do not drain.
- Add carrots and potatoes to the stew, stir, and cook over medium heat for 20 minutes. Stir in celery, green beans, corn, peas, crushed tomatoes, and tomato sauce. Reduce heat to medium-low and let cook for about 1 hour.

BRUNSWICK STEW

- Bring water and chicken to a boil in a Dutch oven. Reduce heat, and simmer for 40 minutes or until tender. Remove chicken, and set aside. Reserve 3 cups broth in Dutch oven. Pour canned lima beans and liquid through a wire-mesh strainer into Dutch oven. Reserve beans. Add tomatoes to Dutch oven. Bring to a boil over medium-high heat. Cook, stirring often, for 40 minutes or until liquid is reduced by 1/3.
- Skin, bone, and shred chicken. Mash reserved beans with a potato masher. Add chicken, mashed and frozen beans, potatoes, and onions to Dutch oven. Cook over low heat, stirring often, for 3 hours and 30 minutes. Stir in corn and remaining ingredients. Cook over low heat, stirring often, for 1 additional hour.

Got the recipe from a cowboy cook book and added to it to make it better.

- In a large Dutch oven cook bacon till crisp. Put flour salt and pepper and dried thyme in a pepper bag. add cubed meat. Shake till meat is covered. Remove cooked bacon from Dutch oven and drain on papper towel Brown beef in bacon grease on all sides.
- Once meat has been browned. Add beer, wine, tomato paste, parsley, onion, bay leaf and what is left in the bag of flour mix.. Bring to a boil. then reduce heat and simmer for 1 1/2 hours, partially covered.
- Remove bay leaf. Then add potatoes, garlic, and carrots. At this point I add 1 teaspoon of hot sauce, you can leave it out. I like my stew with a bite. Partially cover and simmer for one hour more. Serve over cooked egg noodles

- Combine the flour and pepper in a bowl, add the beef and toss to coat well. Heat 3 teaspoons of the oil in a large pot. Add the beef a few pieces at a time; do not overcrowd. Cook, turning the pieces until beef is browned on all sides, about 5 minutes per batch; add more oil as needed between batches.
- Remove the beef from the pot and add the vinegar and wine. Cook over medium-high heat, scraping the pan with a wooden spoon to loosen any browned bits. Add the beef, beef broth and bay leaves. Bring to a boil, then reduce to a slow simmer.
- Cover and cook, skimming broth from time to time, until the beef is tender, about 1 1/2 hours. Add the onions and carrots and simmer, covered, for 10 minutes. Add the potatoes and simmer until vegetables are tender, about 30 minutes more. Add broth or water if the stew is dry. Season with salt and pepper to taste. Ladle among 4 bowls and serve.

BOB W'S HOME MADE STEW.
Had some pork chop that we had for a dinner on Saturday. The meat was so dry. Did not know just what I would do with it. So I made a stew with it. It turned out so good..

- You will need a 7qt crock pot and a large cast iron skillet.. In a large plastic bag add flour and chunks of pork chop. Coat meat with flour. In non-stick skillet cook bacon till crisp. Remove with slotted spoon, place on paper towel to drain then crumble. reserve bacon drippings. Now brown floured meat in bacon dripping. Remove from skillet with slotted spoon and put in crock pot.
- Add all remaining ingredients to crock pot. excepted peas and corn. You will add these during the last half hour. Put lid on crock pot and cook on low for 6-7 hours. Add frozen peas and corn during the last 1/2 hours.. I served this over cooked rice.. If the stew is very thin Add a slury to the last 1/2 hour of cooking and that should thithkin it up.
