Steps:

  • In a small saucepan, combine the sugar and 1/2 cup water over medium heat. Bring to a boil, then reduce the heat and simmer, stirring occasionally, until the sugar has dissolved, about 5 minutes. Remove the pan from the heat and allow the syrup to cool, about 15 minutes.
  • In a blender, puree the syrup, vodka, vermouth, lime juice and pears until smooth. For each drink, pour some of the pear mixture into an ice-filled cocktail shaker and shake well. Pour into a chilled martini glass. Garnish with pear slices and serve.

1 cup sugar
1 cup vodka
1/4 cup dry vermouth
1/4 cup fresh lime juice (from 3 large limes)
Two 8-ounce ripe pears, such as Comice, peeled, stemmed, cored and cut into 1-inch pieces
Ice

Frozen Cactus Pear Margaritas image

Steps:

  • Place tequila, orange liqueur, cactus pear juice, lime juice, and ice in a blender and blend until smooth. Carefully pour a few ounces of cactus pear juice onto a plate and a few ounces of salt onto another plate. Dip the rim of each margarita glass into the juice and then into the salt. Pour margaritas into each glass and garnish with a lime wedge.

Cactus Pear Margaritas image

Steps:

  • Rub lime wedge around the rim of cocktail glasses and dip the rim into a saucer of coarse salt. Place tequila, Cointreau, cactus pear and lime juice and ice cubes in a blender and blend until frothy. Divide among glasses.

Steps:

  • Make the candied bacon: Preheat the oven to 325 degrees F. Toss the bacon in a bowl with the brown sugar and place on a rack set on a rimmed baking sheet so the fat drips down. Bake until it's as crisp as you'd like, about 30 minutes. Let cool.
  • Make the cocktail: Combine the rum, pear nectar, lemon juice, bitters and salt in a cocktail shaker with ice. Shake well and pour into a lowball glass. Garnish with a slice of candied bacon.

Watermelon Martinis image

Steps:

  • Bring the sugar and water to a boil in a small saucepan and cook until the sugar has completely dissolved. Let cool.
  • In a food processor, puree the watermelon flesh. Add a little of the sugar syrup to sweeten, to taste. Pour the pureed watermelon into 2 empty ice cube trays and freeze for at least 4 hours.
  • In a blender combine the frozen watermelon cubes, more simple syrup, to taste, lemon juice and vodka, melon liqueur and blend until smooth. Pour into 8 frozen martini glasses and garnish with a lemon twist.

Steps:

  • Heat oil to 365 degrees F in a heavy medium saucepan. Carefully add the plantains, in batches as necessary, and fry until golden brown, about 3 to 4 minutes. Remove with a slotted spoon to a paper towel-lined plate to drain. Immediately sprinkle with salt and cilantro, if desired.

Steps:

  • Combine the wine, apple cider, apple brandy, pear brandy, Cinnamon Simple Syrup and fruits in a large container with a lid and refrigerate for at least 4 hours and up to 72 hours. Transfer to a pitcher before serving. Serve in red wine goblets over ice, if using.
  • Combine the sugar and 1 cup water in a small saucepan, bring to a boil over high heat and cook until the sugar is completely dissolved, about 3 minutes. Transfer the syrup to a container with a lid, add the cinnamon sticks and let chill in the refrigerator for at least 4 hours and up to 48 hours. The longer it sits, the more intense the flavor. Remove the cinnamon sticks and save to add to the sangria mixture.

1 bottle Cabernet Sauvignon
1 1/2 cups apple cider
1/4 cup plus 2 tablespoons apple brandy
1/4 cup plus 2 tablespoons pear brandy

Pan Roasted Breast of Pheasant with Vanilla and Pears image

Steps:

  • To cure the pheasant: In a large bowl combine the water, 1/4 cup each of sugar and salt, mixing to dissolve. Add the pheasant breasts, cover with plastic wrap and refrigerate overnight.
  • To make sauces: In a large, non-stick skillet, heat 1 tablespoon of the butter over medium to medium-high heat. Add the shallots cooking until tender, about 3 minutes. Add the vanilla bean and seeds, white wine, cider, and cream. Bring to a simmer cooking until the liquids are reduced and thickened to sauce consistency, about 10 minutes. Add the ginger. Season with salt and pepper. Keep warm.
  • In another saucepan, combine the red wine and the honey. Bring to a simmer over high heat cooking until reduced to coat the back of a spoon, about 15 minutes. Reserve.
  • To cook the pheasants: Preheat the oven to 375 degrees F.
  • In a large non-stick ovenproof skillet, add 2 tablespoons butter and melt over high heat. Season the pheasant with salt, pepper, and coriander. Add the pheasant skin side down, cooking until browned and well-seared, about 5 minutes. Turn over and transfer the pan to the lower rack of the oven. Cook until just about medium, about 6 to 8 minutes depending on the size of the pheasant breast. Carefully remove the hot pan from the oven. Allow to rest a couple of minutes before cutting.
  • In another large, non-stick, skillet heat 1 tablespoon of the butter over high heat. Add the Anjou pears cooking until they just begin to soften slightly, about 2 minutes. Add two tablespoons of the sugar cooking while occasionally stirring until browned on the edges, about 4 minutes. Remove the pears and keep warm.
  • To Serve: Position the rice pilaf mixture in a cylinder form in the center of each hot serving plate. Position the pear slices around the rice cylinder. Slice the pheasant on a bias to yield 4 or 6 thin broad slices. Stack the slices on top of the rice cylinder. Spoon the vanilla-ginger and red wine sauce artistically over and around the pheasant and on the plate. Sprinkle the dish with freshly ground black pepper and chives. Garnish with the vanilla bean and sprigs of chive over the pheasant. Serve immediately.

  • Saute pancetta or bacon in skillet over medium heat until crisp.
  • Drain on paper towels.
