BOHEMIAN KOLACHES WITH FOUR FILLINGS

Received this in an email - it is a BIG recipe with four wonderful fillings. I suspect each filling as listed would fill the MANY kolaches this recipe will make. The first go round I plan to halve the recipe probably quarter two of the fillings. BTW, Myrtle did not indicate whether the apricots were fresh or dried - I am going with dried when I make it. She didn't give a cook time either - so watch closely after 15 minutes. No yield either so I am guesstimating on 100+. Thanks, Myrtle Killian!

Bohemian Kolaches With Four Fillings image

Steps:

  • Dissolve yeast in water until foamy.
  • Heat milk, pour over butter and sugar. Stir until melted. Add 2 cups flour, then beat until smooth.
  • Add yeast, eggs and salt. Add flour until a soft ball forms. Grease top; let.
  • rise. Punch down and let rise again.
  • Stretch dough on floured board to about 1/2-inch thickness. Cut into rounds using a soup can. Put on greased pans and let rise.
  • When nice and puffy, make indentations in center and fill with favorite filling like prune, apricot, cottage cheese or poppy seed. When risen to a nice puffy look, bake at 375 degrees F until a golden color - cook 15 minutes then check every 3 minutes thereafter.
  • Prune Filling:.
  • Cook prunes until soft. Grind and add sugar, vanilla extract and cinnamon. Stir well.
  • Apricot Filling:.
  • Cook apricots until soft. Grind and add sugar. Sweeter is better. Stir well.
  • Cottage Cheese Filling:.
  • Put cottage cheese in blender. Add egg yolk, lemon juice, nutmeg and 4 tablespoons flour and blend some more. Take out of blender and add raisins. Sprinkle with 1 teaspoon flour and sugar.
  • Poppy Seed Filling:.
  • Mix together. Use enough cream to make it easier to put into kolaches.

  • Dissolved year in water. combine shortening, sugar, salt, and hot milk. cool. mix with the egg and yeast. add flour and mix until smooth. cover and let rise in warm place until dough is bulk, about one hour. roll out on lightly floured board to 1.4 inch thickness. cut into 2 inch rounds and place salt, butter sugar cinnamon, butter raisins and nuts. roll up and cut Put in greased pan and let rise til double. Bake in 375 degree oven for 25-30 minutes

1 pkg dry yeast or
1/4 cup luke warm water 4 cups sifted flour
1/4 cup shortening or butter 1/4 cup melted butter
1 1/2 tsp salt 1/2 sweet or sour cream
3/4 cup scalded milk 3 eggs well beaten
1 egg beaten 1 TBSP sugar
3 cups sifted flour 3/4 tsp salt

Roll dough in balls and fill with
fruit and let raise
Bake in moderate oven 20-25 min.

Steps:

  • For Vegetarian please read step 8 and omit the turkey.
  • Preheated oven @ 350F or can be microwaved.
  • Oven/microwave proof dish.
  • Have the cannelloni cooked and well drained, ready for the filling.
  • *If you are substituting manicotti shells, you will need to double the filling as canelloni tubes are 1/2 the size.
  • Mix together the ingredients for the sauce and allow it to simmer over a very low heat while preparing the filling.
  • In a large mixing bowl, mix the cream cheese to a smooth consistency, then add the ricotta cheese and egg.
  • Add the oregano, chopped onion and cooked ground turkey.
  • ** Finely chopped spinach, partially cooked and very well drained, may be substituted for the turkey.
  • With a spatula, fold in the motzarella and parmesean cheeses.
  • Spoon about 1/2 cup of the sauce into the bottom of your baking dish.
  • To fill the canelloni, use a pastry tube or a plastic bag with one corner cut out. Hold one shell standing open inside the baking dish and pipe in the filling, being careful not to over stuff the shells.
  • Lay the filled shells on the sauce, side by side. Bake at 350F for approximately 20 minutes or til heated through. Watch carefully as over heating may cause the cheese filling to spill out from the cannelloni, still tasting delicious but ruining the appearance.
  • To serve, place 2 cannelloni on a heated plate, spooning a light amount of sauce over top. Be sure to have extra sauce and fresh grated parmesean cheese on your table for those that desire it.

I grew up on these delicious perogies. I make 3 batches of dough for this recipe and freeze some. You can have perogies just boiled, or you can fry them in butter, which makes them tastier. Serve with sour cream or cottage cheese. Hint: To freeze perogies, freeze separately first, then put in freezer bags. Otherwise, they will all stick together.

Steps:

  • To Make Dough: In a medium bowl combine the flour, salt, egg and water. Mix all together to form dough; cover bowl and set aside.
  • To Make Potato Filling: Place potatoes in a large pot. Add water to cover, bring to a boil, and boil for 25 to 35 minutes or until tender. Remove potatoes from water and mash. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and stir into mashed potatoes. Stir in cheese and season with salt and pepper.
  • To Make Sauerkraut Filling: Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and place in a medium bowl. Stir in sauerkraut, then sour cream. Mix well.
  • Roll reserved dough out on a floured surface. Cut circles out of dough, using a small round container. Place a spoonful of potato or sauerkraut filling in the center of each circle and fold over, pinching edges together to seal. Bring a large pot of lightly salted water to a boil; drop perogies in boiling water and cook for 4 to 5 minutes, or until they float.
