GAMMA D'S BOILED SPICE CAKE
My next door neighbors mother gave me this recipe. It was one of her mothers little cakes she often made to go along with tea or coffee. Very easy to make and very, very tasty.

Steps:
- Preheat oven to 350 degrees.
- Place sugar, raisins, water, shortening, cinnamon, and cloves in a saucepan and bring to a boil.
- Boil for 5 minutes and remove from heat.
- Immediately add flour, baking soda, salt and stir in.
- Pour into a 8"x8" pan.
- Bake at 350 degrees for 30 minutes.
- Prep time includes the boiling.

MUM'S SPECIAL SPICE CAKE
Mum made these every year. TRUE! HINT: The longer you leave it, the better it tastes too! She's had MANY requests for this recipe over the years, yes! Want to know why? If you try it, you won't have to guess! UPDATES!!!!! I made 4 of them yesterday and found I lowered to oven temperature to about 165 degrees Celsius; they each took about 55 minutes to cook! The cake is done when a skewer comes out clean, but you don't want to be opening and closing the oven door a lot. ALSO: While Mum's directions indicated GREASE WELL, it does not mean A LOT, just that the surface is covered with lard and then lightly floured. I was also wondering if a sugar icing was not on it but I can't remember and can no longer ask Mum as she has now passed away! :) Hope this helps someone!

- Bring sugar, hot water, salt, cinnamon, allspice, Crisco, and raisins to a boil and SIMMER 5 minutes.
- Meanwhile, COMBINE 2 teaspoons baking soda and 1 tablespoon HOT water.
- ADD baking soda and HOT water combined to boiled mixture. Do not mix in, just pour in and it WILL sizzle/bubble.
- MUST COOL mixture to room temperature.
- When cool, mix in 3 cups flour.
- Bake at 350 degrees Fahrenheit for about 55 minutes to an hour.
- Cake is best left for 3 to 4 days before serving.
- HINT: Looks nice if baked in a fluted Bundt* pan and can be wrapped in aluminum foil.
- ENJOY!
- NOTE: To prevent the cake from sticking, it is IMPORTANT that all the creases of the fluted sides are WELL greased with Crisco and floured before pouring in batter.

- To make Cake: Preheat oven to 350°F Sift together flour, baking powder and baking soda in bowl. Spray 12-cup Bundt pan with cooking spray, and set aside.
- Combine sugar, raisins, cinnamon, nutmeg, cloves, 1/2 teaspoons salt and 1 1/2 cups water in large saucepan. Bring to boil, and cook 5 minutes, or until raisins plump up. Remove from heat, and stir in margarine.
- When margarine has melted, add flour mixture and pecans to saucepan. Blend well, and pour into pan. Bake 35 to 45 minutes, or until toothpick inserted in cake comes out clean. Cool 10 minutes in pan, then invert onto wire rack and cool completely.
- To make Glaze: Whisk lemon juice into confectioners' sugar. Pour over cooled cake. Decorate with whole pecans, if desired.

- In a saucepan, combine raisins and water. Cook until plump. Drain and set aside raisins, reserving 10 tablespoons cooking liquid. , In a bowl, cream shortening and sugar. Combine flour, cinnamon, cloves nutmeg and salt; set aside. Combine milk, soda, eggs and reserved cooking liquid. Add dry ingredients alternately with milk mixture to creamed mixture. - Grease and line a 2lb bread tin.
- In a saucepan add the fruit, sugar, milk and butter. Bring to a gentle boil stirring all the time.
- Allow mix to cool properly (can take upwards of an hour).

- Transfer mix to the tin and place in the centre of a pre-heated oven (Gas 5 / 190 C) for 1hr

- Adjust oven rack to middle position and heat oven to 350 degrees. Grease and lightly flour a metal or disposable foil 9-by-13-inch pan. Whisk dry ingredients and spices in a large bowl. Mix milk, eggs and vanilla extract in a 2-cup measuring cup.
- Beat softened butter into dry ingredients, first on low, then medium, until mixture forms pebble-sized pieces. Add about 1/3 of the milk mixture and beat on low until smooth. Add remaining milk mixture in two stages; beat on medium speed until batter is just smooth. Add the sugar; beat until just incorporated, about 30 seconds. Pour batter into cake pan.
- Bake until a cake tester or toothpick inserted into the cake's center comes out clean, about 40 minutes. Set pan on a wire rack; let cool for 5 minutes. Run a knife around the pan perimeter and turn cake onto rack. Let cool.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Sift together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves and ginger. Set aside.
- In a large bowl, cream together the margarine, shortening and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the buttermilk, mixing just until incorporated. Pour batter into prepared pan.

BOILED RAISIN CAKE (CANADIAN WAR CAKE)
This is called War Cake because it was made in Canada during WW2 and was shipped out to the troops serving overseas. My grandmother used to make this cake and let it sit for at least a week before slicing into it. But, this recipe I found in a local fundraising cookbook, calls for it sitting for only one day before slicing it up. Just as yummy as grandmas.

- Mix raisins, butter, brown sugar, spices, and water in heavy saucepan.
- Place on high heat and bring to a boil.
- Lower heat and simmer for 6 minutes.
- Remove from heat and turn raisin mixture into a large bowl.
- Let stand at room temperature for 30 minutes.
- Meanwhile, combine flour, salt, and baking soda and mix gently.
- Add orange juice, vanilla and dry ingredients to cooled raisin mixture and beat well.
- Turn batter into a well greased 10 ¼" x 3 5/8" x 2 5/8" loaf pan.
- Bake at 350 degrees Fahrenheit for 1 hour.

BEST BOILED FRUITCAKE
This recipe produces a really moist fruit cake it was given to me by my mom, and it's really easy. My mom uses it for Christmas cake by icing it. I use it for birthdays, Christmas, or just for a treat.

- Preheat oven to 325 degrees F (160 degrees C). Line one 8 inch deep sided cake tin with parchment paper.
- Place the fruit cherries, peel, walnuts, sugar, butter or margarine, mixed spice, baking soda and milk in a medium sized saucepan. Bring to a boil and simmer for 5 minutes. Let mixture cool to body temperature.
- Stir in the flour and the eggs. Pour batter into the prepared pan. Wrap outside of pan with brown paper or newspaper.
- Bake at 325 degrees F (160 degrees C) for 40 minutes then reduce temperature to 300 degrees F (150 degrees C) and continue to baking cake for 1-1/2 hours. NAN'S BOILED FRUIT CAKE

- Place all the ingredients for the fruit mix in a large saucepan bring to the boil and allow to cool for about 30 minutes
- Preheat oven to 160C / Gas 3
- Add the cherries and nuts stir through
- then add eggs and mix well, add the flour and fold through the mix.
- Place the mixture in a greased and floured 8' - deep cake tin. Tie some greaseproof paper around the outside of the tin so that the paper comes over the edges of the tin or optionally place over the top about half way through baking. Bake for 2 hours but check after 1.5 hours , check to see if cooked throughly with a skewer. If not bake a little further until the skewer comes out clean from the cake. Allow to cool and either decorate with marzipan and royal icing, or dried apricots and cherries and glaze with melted apricot jam or plain is very nice too.
OLD-FASHIONED SPICE CAKE
This is a wonderful cake recipe that came on the back of, I believe, a Gold Medal flour package. In the 1980's my younger sister won prizes with Girl Scouts in several baking competitions. The caramel frosting is the best touch!

- Cake:.
- Mix 1 1/3 cups of the evaporated milk and the vinegar; reserve. (Reserve remaining evaporated milk for frosting.)
- Heat oven to 350. Grease and flour rectangular pan, 13x9x2 or 2 round pans (8 or 9 x 1 1/2 inches).
- Beat vinegar mixture and remaining ingredients except frosting in large bowl on low speed, scraping bowl constantly, 30 seconds. Beat on high speed, scraping bowl occasionally, 3 minutes.
- Pour into pan(s). Bake until toothpick comes out clean, about 45 minutes for rectangular pan, 40-45 minutes for 8-inch rounds, 35-40 minutes for 9-inch rounds. Cool rounds 10 minutes; remove from pans. Cool completely.
- Frost rectangular cake or fill and frost layers with caramel frosting.
- Frosting:.
- Heat brown sugar, margarine and evaporated milk to boiling in 2-quart saucepan over medium heat, stirring constantly. Boil and stir 2 minutes.
- Remove from heat; cool until slightly thickened, stirring occasionally, about 10 minutes.
- Gradually stir in powdered sugar with spoon.
- If necessary, stir in 2-3 teaspoons water until frosting is smooth and of spreading consistency.
