This sandwich spread is a recipe from my mother and a favorite in our house.

Bologna Salad Sandwich Spread II image

Steps:

  • Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from water, cool and peel.
  • In a food processor, place eggs, bologna and sweet pickles. Blend to a spreadable consistency.
  • Transfer mixture to a medium bowl. Mix in mayonnaise, increasing the amount as necessary to make the mixture smooth. Cover and chill in the refrigerator until serving.

BOLOGNA SPREAD

Yeah, I know this sounds really gross; that's what everyone says when they first hear the name...but they change their tune after eating it! If you have the grinder attachment for your Kitchen Aid stand mixer (and I do), this is really fast and easy to make. I usually get garlic bologna, just because it adds a little more flavor to the spread. **Please note it will take longer to make if you have a hand-crank style grinder.

  • Cut the bologna and cheese into large chunks.
  • Using a meat grinder, grind the bologna, cheese, and eggs into a large bowl.
  • Add Miracle Whip and pickle relish and stir until mixed well.
  • Serve on crackers or make a sandwich with the spread.

1 lb deli bologna (I usually get garlic bologna)
1 (2 ounce) package cheese, not shredded (you can use whatever you like, I usually get Colby Jack)
6 hardboiled egg, peeled
1 cup Miracle Whip
1/2 cup pickle relish (optional)

  • Run bologna and cheese through food processor or meat grinder.
  • Stir in chopped sweet pickles and miracle whip.
  • Season to taste.
  • Store in covered container in refrigerator for no more than 5 days.
  • Chopped boiled eggs can be added, but shelf life will be decreased.

Grown-up Bologna Sandwiches image

Steps:

  • For the chipotle-mayonnaise spread: Combine the mayonnaise and chipotle pepper in a bowl, and blend until smooth. Refrigerate until ready to use.
  • For the bologna: In a large pan on medium-high heat add the oil. Add the bologna chunks to the hot oil. Saute while tossing to brown all sides, about 8 minutes. Add the onions and season lightly with salt and a few grinds of pepper. Continue to toss while cooking until the onions are tender, about 5 minutes more. Stir in the mustard, and honey to coat, and then add the wine. Simmer while tossing until the wine bubbles and foams and is reduced to only a bit of sauce in the pan.
  • To assemble the sandwiches, slather chipotle mayonnaise on each slice of toasted bread and top equally with the bologna. To serve as a smaller bite, cut the toasted bread into 1/4ths and continue to top as directed.

The Good, The Bad, The Bologna image

Steps:

  • Brush one side of each piece of bread with the butter. Cook on the buttered sides on a griddle on medium-low heat until golden, then rub the golden side of each piece with the garlic.
  • Using the tip of a sharp knife, score the bologna with crosshatches, about an inch apart and 1/4-inch deep, rotating as you score to get all around the outside of the bologna. Slice the bologna into four 1/2-inch-thick slices.
  • Heat a grill pan to medium-high heat and grill each side of the bologna until grill marks form, 4 to 5 minutes per side, basting with a thick layer of BBQ sauce before and after flipping. Bologna is done when there are charred grill marks on each side and the BBQ sauce has caramelized.
  • Place a slice of grilled bologna on the untoasted side of a slice of Texas toast, then top with a few pickle slices, a pile of the Fennel Slaw and some fried onions, then top with a slice of Texas toast, toasted-side up. Repeat to make 3 more sandwiches.
  • In a medium saucepan over medium heat, add the butter until melted, then add the onion, salt, and a few grinds of pepper. Saute until the onions are softened, 4 to 5 minutes. Add the tomatoes, molasses, vinegar, mustard, Worcestershire sauce, garlic, chipotle pepper, adobo sauce and liquid smoke and bring to a boil over medium-high heat. Reduce the heat and simmer, stirring often, until the sauce is thickened, about 45 minutes. Season with salt and freshly ground black pepper. Remove from the heat and let cool slightly, then blend until smooth. Let cool to room temperature.
  • In a medium bowl, whisk to combine the yogurt, olive oil, honey, mustard, orange juice, zest, salt and pepper. Stir in the fennel, carrots and chile and toss to coat. Taste and adjust salt and pepper. Set aside for serving.

2 tablespoons Worcestershire sauce

1 chipotle pepper in adobo plus 1 to 2 tablespoons adobo sauce, depending on spice desired
1 teaspoon liquid smoke
1/3 cup Greek yogurt
2 tablespoons extra-virgin olive oil
1 tablespoon honey
1 tablespoon whole grain mustard
Juice and zest of 1 orange
1/2 teaspoon kosher salt, plus more as needed
Freshly ground black pepper, plus more as needed
1 large fennel bulb, halved, cored and sliced thinly (about 2 cups)
1/2 cup shredded carrots
1 red Fresno chile, seeded and sliced thin

Fried Bologna Sandwich image

Steps:

  • Mix mustard, mayonnaise, and chopped pickles in a small bowl to combine; season with pepper.
  • Arrange half of bologna slices in a neat stack. Starting near the center and working toward the edges of the stack, cut four 1"-long slits, spacing evenly. Repeat with remaining bologna. Heat a dry large skillet, preferably cast iron, over medium-high. Working in batches, arrange bologna slices in a single layer in skillet and cook until browned all over and crisp, about 2 minutes per side. Transfer to a plate as they are done. Save skillet with any fat.
  • Arrange bread in a single layer in reserved skillet and cook over medium high until golden brown, about 2 minutes per side. Transfer to a cutting board.
  • To build sandwiches, spread mustard mixture evenly over each slice of bread. Divide bologna between 2 slices and top with lettuce; drizzle with pickle brine. Close up sandwiches and cut in half.
