ROASTED LEG OF LAMB (BONE IN)

Lamb prepared this way needs no extras for flavor. It is delicious. If you wish, however, you may serve it with Greek lemon sauce or mint jelly. After the initial high heat of 450°F, you may reduce the cooking heat to 350°F as in this recipe or to 325°F, adjusting the cooking time accordingly. Lower temperature makes the lamb even more tender; however, some people find it too mushy when cooked at that temperature so prefer 350 degrees. At 350°F is is still tender and very tasty. If you are cooking less than a 5 pound leg of lamb, do the math and adjust the cooking time and it should come out finished at that time. Insert an instant read thermometer to be sure the meat is done and aim for 130-140°F.

Steps:

  • Preheat oven to 450°F.
  • Mix rosemary, salt, and pepper in small dish.
  • Rub half of spice mixture over larger end of leg of lamb.
  • Slice 2 large garlic cloves into about 15 to 20 slivers and mix with remaining spices in bowl.
  • Cut 15 to 20 small slits in leg of lamb and place spiced garlic cloves into the slits.
  • Rub 3 tablespoons olive oil over the surface of the leg of lamb.
  • Place on rack in center of roasting pan and place in preheated oven.
  • Cook for 15 minutes at 450°F and then lower heat to 350°F for rest of cooking time of 1 1/4 hours (or, alternatively, lower heat immediately and cook at 325°F for adjusted cooking time).
  • Remove from oven and test with instant read thermometer inserted into thickest part of leg; consider lamb done at 130-140°F (temperature will rise about 5 degrees out of oven).
  • Cover with aluminum foil and let rest 10-15 minutes.
  • Slice into thin slices and serve.

Steps:

  • Roughly chop the garlic cloves in the food processor. Add the mint and repeat. Add the brown sugar, salt, pepper, mustard, and oil and blend to a paste. Spread the paste evenly on the meat side of the roast. Roll the leg into a roast shape and tie with cotton butcher's twine. Fire 2 quarts (1 chimney's worth) of charcoal (natural chunk is best). When charcoal is lightly covered with gray ash, split the coals into 2 piles and move them to the far sides of the cooker. Close the lid and allow the grate to heat. Then, place the lamb, skin side up, on the middle of the hot grate. Add the rosemary sprigs to the charcoal briquettes and close the lid and grill. After 20 minutes, flip the roast and rotate it 180 degrees. Insert the probe thermometer into the roast and continue to grill until it reaches an internal temperature of 135 degrees, about 25 to 30 minutes. Remove the roast at 135 degrees. Remove the butcher's twine from the roast. Cover with foil and rest it for 15 minutes before serving.

Steps:

  • Marinate the lamb overnight in the fridge.
  • Drain the meat next morning but reserve the marinade.
  • Put the leg on a rack, fat side up.
  • Brush with marinade and broil for 10 minutes on each side or until golden, baste occasionally.
  • Place lamb on middle rack lower temp to 325f and roast until just pink apprx 2 hrs (depending on the size of the roast)- Check internal temp and if done ahead of the time remove from oven and cover with foil.
  • Remember that the lamb will continue to cook even out of the oven.
  • For the last 40 minutes roast some potatoes around the roast.

  • Preheat the oven to 450°F. If the butcher has not already removed the fell (parchmentlike membrane) from the lamb leg, trim it away along with all excess fat. Using the tip of a sharp knife, make 15 or so small incisions in the leg, spacing them evenly.
  • Place the garlic, lavender, and thyme in a small food processor and pulse until you have a thick paste. Poke a bit of the paste into each of the incisions in the lamb. Place the salt, peppercorns, dried rosemary, and herbes de Provence in a spice grinder and pulse until you have a coarse mix. Rub the mix all over the lamb, covering it evenly. Place the lamb on a rack in a roasting pan.
  • Roast the lamb for 15 minutes. Lower the heat to 350°F and continue to roast for about 1 hour, or until a thermometer inserted into the thickest part away from the bone registers 130°F for rare, 140° to 145°F for medium-rare, or 160°F for well-done. Cooking times will vary depending on the shape of the lamb and the consistent heat of your oven. Remove the lamb from the oven and let it rest for 15 minutes before carving.
  • Carve the lamb parallel to the bone in long, thin slices and arrange the slices on a platter. Transfer the warm sauce to a sauceboat and serve immediately.
