BOOTLEGGER BEANS

This delicious side dish is very easy to make. It practically cooks itself! Because these beans are so good, I usually make a double batch. The recipe comes from household advice columnist, Heloise. Her mother also had a newspaper column where this recipe was first published over forty years ago.

Steps:

  • Dice bacon and onion.
  • Fry bacon; when nearly done, add onion to pan and saute until bacon is cooked; pour off most of the fat.
  • Combine all ingredients in a saucepan; cover and simmer, stirring every once in awhile, on low heat for 1 to 2 hours ~ The beans will thicken as they cook.

  • Fry bacon till crisp, then crumble and set aside.
  • Remove all of the bacon grease from the pan except for 1 tablespoon.
  • Sauté chopped onion in the bacon grease till tender.
  • Add 2 cans of Pork & beans, brown sugar, catsup, and crumbled bacon.
  • Stir and cook till heated through.

Steps:

  • Preheat the oven to 350 degrees F.
  • Fry the bacon in a large skillet over medium-high heat until crisp. Remove the bacon from the pan, leaving the drippings, and drain it on paper towels. Crumble and set aside.
  • Add the onion to the pan with the bacon drippings and saute until softened, a couple minutes. Stir in the beans, molasses, brown sugar, mustard and crumbled bacon, and mix well.
  • Pour the beans into a 3-quart casserole and bake, uncovered, for about 45 minutes.

  • Preheat oven to 375 degrees F. Cook bacon in large nonstick skillet until crisp. Remove bacon to paper towel. Remove all but 3 tablespoons bacon fat. Add onion and pepper and cook 5 minutes or until softened.
  • Add beans, BBQ sauce, and half the bacon and bring to a boil.
  • Transfer beans to 1 1/2-quart baking dish. Cover with aluminum foil and bake 20 minutes or until bubbling.
  • Remove foil and top with cheese and reserved bacon. Bake 5 minutes or until cheese is melted.

  • In a large saucepan or Dutch oven, bring beans, salt and 2 qt. water to a boil; boil for 2 minutes. Remove from the heat; let stand for 1 hour. Drain beans and discard liquid. Return beans to pan. Cover with remaining water; bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until beans are tender. Drain, reserving liquid. In a greased 2-1/2 qt. baking dish, combine beans, 1 cup liquid, onion, molasses, bacon, brown sugar, mustard and pepper. Cover and bake at 325° for 3 to 3-1/2 hours or until beans are as thick as desired thickness, stirring occasionally. Add more of the reserved cooking liquid if needed.

Steps:

  • Soak navy beans overnight in a large bowl with enough water by several inches. Drain and place beans into a large Dutch oven or heavy pot with 6 cups water, baking soda, and bay leaf. Bring to a boil, reduce heat to medium, and boil for 10 minutes. Drain, saving bean-cooking liquid.
  • Preheat oven to 300 degrees F (150 degrees C).
  • Transfer beans into clean Dutch oven and stir bacon, onion, molasses, brown sugar, dry mustard, salt, and black pepper into beans. Pour enough of the hot reserved bean liquid in to cover beans; stir.
  • Cover Dutch oven and bake in preheated oven for 1 hour. Check liquid level and add more of the reserved bean liquid to bring liquid up to cover beans. Return to oven and continue baking until beans are tender and almost all the liquid has been absorbed, about 1 hour.
  • Raise oven heat to 350; bake beans uncovered in oven until top develops a flavorful crust, 20 to 30 more minutes.

  • Fry bacon.
  • Remove from pan and set aside.
  • When cooled, break up into small pieces.
  • In the bacon grease, cook ground beef and onions until beef is no longer pink.
  • Mix all the ingredients together, stir well.
  • Pour in a 9 x 13 baking dish.
  • Bake at 350 for about 1 hour.
  • (You can use either all baked beans, all butter beans, or a combination).
