Steps:

  • Soak the beans in water overnight. Drain, then transfer to a Dutch oven. Add 10 cups water, 2 sage leaves, the smashed garlic and 1 tablespoon salt. Bring to a boil over high heat, then reduce the heat to medium low; cook until the beans are tender, about 1 hour. Drain, reserving the liquid. Discard the garlic and sage.
  • Meanwhile, preheat a grill to high or preheat the oven to 475 degrees F.
  • Return the beans to the Dutch oven. Add the sliced garlic, olive oil, the remaining 4 sage leaves, the tomato, 1 1/2 cups of the reserved cooking liquid, 1/2 teaspoon salt and 1/4 teaspoon pepper. Place the pot, uncovered, on the grill or in the oven; cook until creamy, 15 to 20 minutes. Add the parsley and more cooking liquid, if necessary. Season with salt and pepper and drizzle with olive oil.

1 pound dried cannellini beans, picked over
6 leaves fresh sage
6 cloves garlic (3 smashed, 3 sliced)
Coarse sea salt
1/2 cup extra-virgin olive oil, plus more for drizzling
1 plum tomato, diced
Freshly ground pepper
1/4 cup roughly chopped fresh parsley

Steps:

  • If using fresh fava beans, cook in a large saucepan of boiling salted water until tender, about 4 minutes. Using a slotted spoon, transfer to a colander set in a bowl of ice water to cool. Drain, remove skins, and place beans in a small bowl. Do not cook frozen beans.
  • Squeeze lemons into a large bowl of cold water. Working with 1 artichoke at a time, remove tough dark outer leaves. Using a serrated knife, cut off 1" from top, then trim stem, leaving at least 1/2" intact. Using a paring knife or vegetable peeler, remove dark outer layer from stem. Cut artichoke in half lengthwise, scoop out choke with a spoon, and discard. Transfer artichoke to lemon water to prevent it from turning brown.
  • Preheat oven to 425°F. Heat 2 tablespoons oil in a large Dutch oven or other heavy pot over medium-high heat. Drain artichokes and pat dry. Add to pan; season with kosher salt and pepper, and cook, tossing occasionally, until brown and crisp in places, 8-10 minutes. Transfer to a baking sheet. Wipe out pot.
  • Heat remaining 2 tablespoons oil in same pot over medium-high heat. Season chicken with kosher salt and pepper. Working in 2 batches, cook chicken, skin side down, until brown and crisp, 6-8 minutes (do not turn). Transfer to baking sheet with artichokes.
  • Reduce heat to medium, add shallots to pot, and cook, stirring often, until golden brown and beginning to soften, 8-10 minutes. Add wine and vinegar and bring to a boil, scraping up any browned bits from bottom of pot; cook until reduced by half, about 5 minutes. Mix in broth, then add artichokes and chicken, skin side up. Transfer to oven and cook, uncovered, until chicken is cooked through, 20-25 minutes. Mix in fava beans.
  • Serve chicken and vegetables topped with chives and parsley and seasoned with sea salt and pepper.

1 cup fresh fava beans (from about 1 pound pods) or frozen fava beans, thawed
Kosher salt
2 lemons, halved
3 pounds baby artichokes (about 16)
4 tablespoons olive oil, divided
Freshly ground black pepper
1 3 1/2-4-pound chicken, cut into 10 pieces
8 shallots, peeled, halved
1 cup dry white wine
3 tablespoons white wine vinegar
1 cup low-sodium chicken broth
2 tablespoons chopped fresh chives
1/4 cup chopped fresh flat-leaf parsley
Flaky sea salt (such as Maldon)

FAVA BEANS IN TAHINI SAUCE

A delicious recipe I learned from an Egyptian friend. If you don't want a strong garlic taste, feel free to cook the garlic with the onion. You can stuff this mixture into a pita, add a dollop of plain yogurt, and enjoy!

  • Fava and Fennel Soup. Fava beans are found in nearly every cuisine, but their culinary roots lie deepest in the Mediterranean. This fava and fennel soup is a traditional dish from Sicily and has been enjoyed for thousands of years.
  • Sautéed Fava Beans. If you take a minimalist approach to cooking, you know that often, fresh is best. This recipe for sautéed fava beans is easy to fall in love with, simply using double-shelled favas, a dab of butter, and optional seasonings like salt and fresh mint.
  • Turkish Fava Bean Purée. If you’re fond of the renowned Turkish delight, think of this fava bean appetizer as the savory version. Its dense texture is well balanced by bright and tangy dill weed but by all means, don’t stop there—parsley, thyme, and rosemary also fair well.
  • Dried Fava Bean Soup. This dried fava bean soup is worthy of second servings. The recipe uses double-shelled dried favas, so you won’t end up with the unwelcome lumps or bitter flavor that their outer shell can contribute.
  • Fava Bean Stew. Hearty and warm, stews are one of the ultimate comfort foods. This fava bean stew is almost equal parts tomato, so it’s a great vegetarian alternative to the classic chili.
  • Moroccan Fava Bean Dip. Street food is deeply integrated into Moroccan culture, especially amongst the bustling backdrops of cities like Marrakech and Fez.
  • Falafel with Fava Beans. Besides its delicious alliteration, falafel with fava beans is a delicious dish. Although the variety of falafel made from pure chickpeas is the most recognized in the west, this two bean falafel is commonly found in the Middle East.

  • Grilled Fava Bean Pods with Chile and Lemon. "Trust me," says chef Nate Appleman about this unorthodox recipe. He quickly grills whole fava beans, tosses them with a crushed red pepper dressing and serves them hot.
  • Fava Bean Pasta e Fagioli. Chef Mike Lata's spring version of pasta e fagioli, the Italian soup, uses fresh fava beans in place of borlotti or cannellini beans, along with meaty bits of bacon and a sprinkling of grated Parmigiano-Reggiano.
  • Spring Peas and Greens with Cacio e Pepe Dressing. Inspired by cacio e pepe (cheese and pepper), the classic Italian pasta sauce, this salad features spring greens and fava beans topped with a delicious buttermilk dressing.
  • Beer-Braised Chicken Stew with Fava Beans and Peas. Paul Kahan is a big fan of chicken thighs because they have so much flavor and are so inexpensive — the best of both worlds.
  • Charred Fava Bean Salad with Lemon and Tarragon. It's nearly impossible to grill tiny favas, but the sweet-starchy beans get a similar smoky flavor when they're charred quickly in a hot skillet.
  • Artichoke Custards with Fava Bean Sauce. In an homage to spring, Rolando Beramendi makes these lush custards with fresh artichokes; the flavor is wonderfully vivid.
  • Spring Vegetable Stew. When fresh fava beans are available, use them in place of the cranberry beans. Get the Recipe.
