TOUCHDOWN BRAT SLIDERS

It's game time when these mini sausage sliders make an appearance. Two things my husband loves-beer and brats-get stepped up a notch with crunchy flavored chips. -Kirsten Shabaz, Lakeville, Minnesota

Steps:

  • In a large cast-iron or other heavy skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain, reserving drippings. Cook bratwurst and onion in drippings over medium heat until meat is no longer pink, breaking into crumbles. Add garlic; cook 1 minute longer. Drain well., Stir in the cream cheese, beer, mustard and pepper. Bring to a boil. Reduce heat; simmer, uncovered, until thickened, 15-20 minutes, stirring occasionally. Stir in bacon. Spoon 1/4 cup onto each roll; sprinkle with chips. Replace tops.

5 thick-sliced bacon strips, chopped
1 pound uncooked bratwurst links, casings removed
1 large onion, finely chopped
2 garlic cloves, minced
1 package (8 ounces) cream cheese, cubed
1 cup dark beer or nonalcoholic beer
1 tablespoon Dijon mustard
1/4 teaspoon pepper
16 dinner rolls, split and toasted
2 cups cheddar and sour cream potato chips, crushed

SKILLET BRATS WITH BEER CARAMELIZED PEPPERS AND ONIONS

This recipe alludes to my time at culinary school. Right around the fall, it was standard to head to the Hudson River with my fellow comrades, drinking beer and cooking the brats on an open fire. By caramelizing the brats in the beer sauce, they just get better and better.

Skillet Brats with Beer Caramelized Peppers and Onions image

Steps:

  • Preheat a large cast-iron skillet over medium heat. Add the oil, then the onions, peppers and garlic. Season with salt. Cook, stirring occasionally, until they just begin to soften and the onions turn translucent, 5 to 10 minutes. Move the onions and peppers to the side of the skillet and add the bratwurst. Score the bratwurst with a knife on both sides. Add to the pan and sear, about 3 minutes per side. Add the beer to the skillet. Bring to a simmer and cook, turning the bratwurst and stirring the vegetables occasionally, until the beer reduces by half and the brats are cooked through to an internal temperature of 160 degrees F, 15 to 20 minutes.
  • Serve with hot pepper mustard and pretzel rolls.
  • Whisk together the vinegar, water, honey, sugar, banana peppers, bell peppers, onions and garlic in a medium saucepan and bring to a boil over medium heat. Once boiling, reduce the heat to low/medium low and simmer until the peppers and onions are soft, about 5 minutes.
  • Transfer to a small food processor or blender and puree until very smooth. Add the mustard and puree until just incorporated. Season with salt. Transfer to a bowl and let cool completely, then refrigerate until well chilled, about 30 minutes.

1/2 cup apple cider vinegar
1/2 cup water
1/4 cup honey
1 1/2 teaspoons sugar
2 banana peppers, stems and seeds removed and chopped
1 yellow bell pepper, seeded and chopped
1 small yellow onion, roughly chopped
2 cloves garlic, chopped
3 tablespoons stone-ground mustard
Kosher salt

Steps:

  • Place the doughnut halves cut-side down in a dry nonstick skillet set over medium heat; toast to golden brown.
  • Place the flat toasted sides of the doughnut on a cutting board. Place the sausage patty on the rounded glazed side and top with the cream cheese. Top with the other half of the doughnut, rounded glazed-side down.

One 2-ounce breakfast sausage patty, such as Delia's chicken breakfast sausage
1 tablespoon sour cherry cream cheese

Steps:

  • Preheat the oven to 200°F. Turn the electric griddle to medium-low and heat the oil. Add the onions and sprinkle with some salt and pepper. Add the bratwurst around the onions and cook until the onions are slightly charred on the bottom, 3 to 4 minutes. Turn the onions (don't worry if the rings come apart), sprinkle with some salt and pepper and cook until the second side is charred and the onions are crisp-tender, 4 minutes. Transfer the onions to a medium bowl and set aside.
  • Keep an eye on the brats while the onions are cooking; turn them frequently until they are deep brown all over and an instant-read thermometer inserted in the center registers 165°F, about 20 minutes total. Transfer the brats to a small rimmed baking sheet and keep warm in the oven. While they are browning, butter the insides of the buns.
  • Put the kale on the griddle and turn once or twice with tongs to coat with the brat drippings. Season lightly with salt and keep turning until the kale is tender, about 2 minutes. Transfer to the bowl with the onions.
  • Wipe the griddle clean with a paper towel. Add the buns butter-side down and cook until golden and toasted, about 2 minutes. To serve, spread mustard on the buns, add the brats and top with the kale and onions.

1 large Spanish onion, cut into ¼-inch rounds (about 12 ounces)

  • 2. Open the bottom vent of a charcoal grill completely. Light a charcoal chimney starter filled with charcoal. When the coals are covered with gray ash, pour them onto the bottom grate of the grill. Adjust the vents as needed to maintain an internal temperature of 350 to 400 F. (If using a gas grill, preheat to medium, 350 to 400 F.)
  • 3. Place the skillet with the bratwurst mixture on unoiled grates in the center of the grill. Grill, covered, until the bratwursts are cooked through, about 30 minutes.
  • 4. Remove the bratwursts from the skillet; set aside. Move the skillet to the perimeter of the grill and cook the onion mixture, uncovered and stirring occasionally, until the mixture thickens, about 20 minutes. Remove from the heat; remove and discard the thyme.
