EASY BREAKFAST IN A BISCUIT
This is a favorite recipe to make with my children. It's a quick and easy breakfast-on-the-go idea.

- Preheat the oven to 450 degrees F (230 degrees C).
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crispy, about 10 minutes.
- Meanwhile, beat eggs and milk together in a bowl. Pour into a skillet over medium heat; cook and stir until scrambled and set, about 5 minutes. Season with salt and pepper.
- Drain bacon slices on paper towels. Crumble into small pieces and mix with the scrambled eggs. Add American cheese.
- Flatten 1 biscuit and fill with 2 tablespoons of the egg mixture. Place on an ungreased cookie sheet. Drizzle with 1/2 tablespoon maple syrup. Flatten a second biscuit and place on top. Pinch edges together to hold in filling. Repeat with remaining biscuits, egg mixture, and maple syrup.
- Bake in the preheated oven until golden brown, about 8 minutes.

BREAKFAST BISCUITS

- For the biscuits: Preheat the oven to 450 degrees F.
- Whisk together the flour, powdered milk, baking powder, sugar, cream of tartar, salt and cayenne pepper in a medium bowl. Using a pastry cutter, cut the butter bits and shortening into the dry mixture until blended thoroughly. Mix in the cheese, then fold in the buttermilk until the dough comes together.
- On a lightly floured surface, turn out the dough and press into a circle 1 to 1 1/2 inches thick. Cut out circles with a biscuit cutter or a glass. Place the biscuits in cast-iron skillets, then brush the tops with the melted butter. Bake until golden brown, 10 to 12 minutes, then set aside to cool a little.
- For the sandwiches: Next, add the sausage patties to a skillet over medium heat and fry until cooked through. Set aside and keep warm. In the same skillet, fry the eggs, turning them over to cook the yolks through.
- Now make a sandwich by cutting a biscuit in half. Put a sausage patty on the bottom half. Top with an egg, some hot sauce and a slice of cheese. Cover with the top and eat, or wrap in foil to keep warm.
CHEDDAR BISCUIT BREAKFAST SANDWICHES
Steps:
- For the biscuits: Preheat your oven to 425 degrees F (220 degrees C) and line a baking sheet with parchment paper.
- Stir together the flour, baking powder, garlic powder and salt in a large bowl. Add the butter and snap and rub it in until the butter is pea sized. Stir in the Cheddar and chives, then make a well in the center and add in 1 1/4 cups of the buttermilk. Stir until just combined.
- Using a large tablespoon or a 1/4 cup ice cream scoop, scoop 9 biscuits onto your prepared baking sheet. Place the biscuits in the fridge while you prepare the eggs.
- For the eggs: Place a nonstick skillet over medium heat and add the sausage meat. Cook, breaking it apart with a wooden spoon, until golden brown and cooked through, 8 to 10 minutes. Remove the sausage from the pan and set aside.
- Lightly grease a 9-inch square baking pan with cooking spray. Beat the eggs and milk together in a large bowl. Season with the salt and pepper. Add the Cheddar and dill and pour into the prepared pan. Scatter over the cooked sausage and tomatoes.
- Retrieve the biscuits from the fridge and brush with the remaining 2 tablespoons of buttermilk. Bake the biscuits and the eggs for 15 minutes, then remove the eggs from the oven and set aside to cool slightly. Rotate the biscuits and continue baking until golden brown, 5 to 10 minutes.
- Cut the eggs into 9 equal pieces. If serving right away, split the biscuits in half and sandwich in the eggs. If prepping ahead, transfer the eggs to a resealable container and place in the fridge. Cool the biscuits to room temperature and transfer to a resealable container or zip top bag and place in the fridge. Both can be stored for up to four days. To reheat, simply reheat in the microwave. Biscuits can also be split and lightly toasted in the toaster.

BUTTERY BREAKFAST BISCUITS
I haven't tried these, but they sure do sound good. I think I found the recipe on the internet, but not sure.

- In a bowl stir together flour, sugar, baking powder, cream of tartar, and salt.
- Using a pastry blender, cut in margarine till mixture resembles coarse crumbs.
- Make a well in center; add cream all at once.
- Using a fork, stir just till moistened.
- On a lightly floured surface, knead dough for 10 to 12 strokes or till nearly smooth.
- Pat or lightly roll dough to 1/2-inch thickness.
- Cut dough with a 2 1/2" biscuit cutter, dipping the cutter into flour between cuts.
- Place biscuits on an ungreased baking sheet.
- Bake in a 450° oven for 10 to 12 minutes or till golden brown.
- Serve warm.
- Makes 10 to 12.

HEALTHY BREAKFAST BISCUITS
I love biscuits and gravy in the morning, but these biscuits are so much healthier than the typical bisquick! Of course these biscuits can be made with a variety of things, but we've always made them with our Recipe #260063 or with some yummy jam in the morning. - Mix the water, honey or sugar, yeast and 3/4 cup each of the whole wheat and Golden White flours.
- together. Let stand until light, about 15 minutes.
- Add the other 3/4 cup of each type of flour, along with the remaining ingredients and knead lightly.
- Roll or pat out on a lightly oiled counter top to 3/4-inch thickness. Dust top of dough with flour. Cut with biscuit cutter or glass dipped in flour.
- Place cut biscuits on parchment paper lined baking sheets. Let rise on pan 15 - 20 minutes,then bake at 350°F until light brown, about 15 minutes.
BREAKFAST BISCUIT CUPS
Steps:
- In a large skillet, cook sausage over medium heat until no longer pink; drain. Stir in the flour, salt and 1/4 teaspoon pepper until blended; gradually add 3/4 cup milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat and set aside., In another large skillet over medium heat, cook potatoes in butter until tender. Whisk the eggs, garlic salt and remaining milk and pepper; add to skillet. Cook and stir until almost set., Press each biscuit onto the bottom and up the sides of 8 ungreased muffin cups. Spoon the egg mixture, half the cheese, and sausage into cups; sprinkle with remaining cheese., Bake at 375° for 18-22 minutes or until golden brown. Cool 5 minutes before removing from pan. Freeze option: Freeze cooled biscuit cups in a freezer container, separating layers with waxed paper. To use, microwave 1 frozen biscuit cup on high for 50-60 seconds or until heated through.

BREAKFAST IN A BISCUIT
Very easy to make ahead and freeze. Pop one or two in the microwave on busy mornings and you're out the door in seconds!

- Preheat oven to 400 degrees. Whisk eggs and milk together along with a pinch of salt and pepper. Roll out each biscuit until it's slightly bigger than your muffin tin. Spray the muffin tin with cooking spray and push one biscuit into each muffin cup - being sure to push it all the way down and up the sides. Divide the meat and cheese evenly in each of the biscuit cups. Pour egg mixture in, until 2/3 full. Don't overfill. Bake for 10 to 12 minutes or until biscuits are golden and eggs are set.
- I used sliced ham from the deli in these. You could also make these savory by adding taco seasoned meat and salsa to the eggs and cheese.

- Heat butter/olive oil in a small pan and sauté the onions and mushrooms until both are softened. Set aside.
- Preheat oven to 375. In a mixing bowl, add the Chebe mix. With a fork, blend in 1 oz of the cheese, eggs, milk, and oil. Mix for a couple of minutes then use your hands and knead it until the dough is smooth and well blended. Separate the dough into 8 equal pieces (about 2 oz each if you have a scale).
- Roll each with your hands until the dough is smooth. Press the dough into eight*, 8 oz baking cups** (Pyrex-like or ramekins). Be sure the dough is pressed most of the way up the sides of the cup so the egg doesn’t spill over.
- With the tines of a fork poke the base of the dough thoroughly in order to reduce puffing in the oven.
