BREAKFAST EGG OMELETTE MUFFINS RECIPE - (4.5/5)
Provided by mikeimmell

Steps:
- Preheat your oven to 375°F. Spray a regular 12 cup muffin tin with nonstick spray or use liners. Chop all your fillings and place a bit of each, including the cheese, into the bottom of the cups. Fill them about 2/3 to 3/4 of the way full. Beat eggs with the milk (you can skip the milk if you prefer), and season to your liking. Pour egg mixture into each cup, level with the pan edge. Bake 25 to 30 minutes. Muffins will puff up a little bit and brown around the edges. Cool before removing from muffin tin.

BREAKFAST OMELETTE
"My teenage stepsons are hearty eaters, so I like to make them a big breakfast when they visit," relates LuAnn Edele of Brewster, New York. "With its zesty filling, this Southwestern-style omelet is one of their favorites. I serve it with fresh-baked corn muffins."

Steps:
- Preheat your oven to 350 degrees. Coat a six cup muffin pan with nonstick cooking spray.
- If using vegetables I like to precook them in a skillet as we don't like our vegetables crunchy.
- Whisk together the eggs, half and half and salt in a medium bowl, then evenly distribute the egg mixture among the muffin cups.
- Add about 2 tablespoons of mix ins to each cup and then sprinkle with cheese.
- Bake the omelets until they are puffy and the edges are golden brown, about 20 - 25 minutes. If necessary run a butter knife around the edge of each one of the omelets to loosen them before removing them from the pan.
