BRENNAN'S GARLIC BREAD

- 2. Sprinkle on the remaining ingredients.
- 3. Finely chop the garlic cloves, and sprinkle those on top of the bread.

BRENNAN'S BREAD PUDDING WITH WHISKEY SAUCE

- For The Bread Pudding:.
- Preheat oven to 350°F.
- Grease a 2-quart baking dish.
- Scatter the bread in the baking dish.
- Pour the scalded milk over the bread; set aside.
- Mix the eggs with the sugar.
- Stir in the remaining ingredients and pour the egg-and-sugar mixture over the bread-and-milk mixture.
- Although it doesn't state to do this with any bread pudding I usually press the bread down with a spatula to help the milk to be absorbed,cover and refrigerate for 30-60 minutes.
- Set the baking dish inside a slightly larger pan.
- Pour warm water into the larger pan about halfway up the sides of the bread pudding dish to make a "bain marie".
- Bake the bread pudding for about an hour, or until a knife inserted in the middle comes out clean.
- For the Whiskey sauce:.
- In a medium-size saucepan, heat the milk and the sugar until they almost come to a boil.
- Pour a small amount of the milk and sugar mixture into the egg yolks, whisking all the while.
- Gradually pour the egg mixture back into the saucepan, whisking constantly to prevent the eggs from scrambling.
- Blend the cornstarch with 1/4 cup cold water.
- Add to the saucepan.
- Bring the custard to a boil, whisking constantly for several minutes until it thickens.
- Remove from the heat.
- Stir in vanilla extract and whiskey.
- Strain through a fine-mesh sieve.
- Pour over bread pudding as desired.
- *Cook time does not reflect the refrigeration time*.

BRENNAN'S BREAD PUDDING WITH BRANDY SAUCE
When most bread goes stale it gets tossed in the trash or fed to the birds. But for some lucky loaves, going stale is just the beginning of a transformation into bread pudding - the ambrosial dessert that is a mainstay finale at Creole restaurants across New Orleans. This recipe comes from a restaurant in the French Quarter in New Orleans. The thick creamy sauce is what makes it a truly memorable dessert.

- Combine bread, milk and cream. Beat eggs; add sugar and mix well. Stir in bread mixture and add vanilla, cinnamon and nutmeg. Stir in butter and raisins. Pour into buttered 2 quart baking dish, set in a pan of warm water about 1 inch deep.
- Bake in 350 degree oven for 1 hour or until knife inserted in center comes out clean.
- Whiskey Sauce.
- In a saucepan slightly beat egg yolks then add the next three ingredients and blend well. Cook over low heat until mixture comes to a boil. Blend cornstarch in water and stir into hot mixture. Continue cooking until thickened. Remove from heat and stir in brandy. Serve when cooled.

GREEN ONION GARLIC NAAN BREAD
I am going to show you how to make naan Chef John-style-when I want it fast and I don't want to use yeast and wait for a dough to rise but I also want it just as good as if I did. While I originally tried this method to save time, it produces what might be my favorite style of naan. It really is incredible whether you use garlic and green onions, or not. As naan are made, they must be stacked and wrapped in a kitchen towel to keep them soft and supple.

- Place bread flour in a bowl. Add salt and baking powder and give it a good whisk until evenly combined.
- Add in Greek yogurt gently, followed by garlic and green onions. Take a wooden spoon and slowly start mixing everything together. Keep mixing, stirring, and pressing until a shaggy dough forms.
- Transfer dough to a work surface and use your hands to press dough together. Knead for a few minutes until dough becomes elastic and a little bit sticky. Add a bit more flour as necessary but try to keep extra flour at an absolute minimum. Knead until dough is a little bit stretchy, 3 to 5 minutes.
- Wrap in plastic and allow to rest on the counter for 15 to 20 minutes.
- Take a bench scraper and cut into 6 equal pieces. Take 1 portion and roll into a ball. Place onto a generously floured surface. Use a rolling pin to roll out nice and thin, about 1/8 inch or less. It's ok if the naan is not a perfect circle. You will need extra flour for rolling out as the dough is sticky, but try to use as little as possible.
- Heat a cast iron skillet over medium-high heat until hot. Transfer dough circles into the hot dry skillet and cook until little bubbles form on the surface and the underside is lightly browned, about 1 minute. Flip naan over and cook for 1 more minute. Press down slightly with a spatula to increase the heat during cooking. Flip over twice more and cook for an additional 15 seconds per side, but make sure not to overcook to preserve the texture. Naan should still be flexible when you remove it from the skillet onto a plate.
- Cover with a kitchen towel to keep warm and moist while you cook the other naan breads. Stack all 6 naan breads on top of each other and keep covered with a kitchen towel.
- When you are finished cooking all 6 naan breads, unstack breads and brush the first naan bread on both sides with a little bit of melted butter. Stack second piece of naan on top and only brush the top side. Keep stacking and buttering all the naan breads. Fold each naan into a triangle and serve.

- Stir the milk and vinegar together, and allow to stand until curdled, about 10 minutes.
- Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet. In a bowl, mix together the flour, sugar, baking soda, and salt.
- Gradually stir the soured milk into the flour mixture until the dough just comes together, and turn the dough out onto a well-floured surface. Knead a few times, and shape into a round. Place the dough onto the prepared baking sheet. With a sharp knife, cut an X shape into the top of the dough to release steam and help the bread keep its round shape.
- Bake in the preheated oven until golden brown, about 45 minutes.
